Spicy Red Bean Stew

Do you sometimes just browse through blogs, from other blogs, by just clicking over to a blog with s "shout-out?"...well, I do that quite a lot lately, and get so distracted with what I was originally set out to do.
I was recently commenting on a blog...trying to comment on a blog, that did not happen, and I got "sidetracked" to another blog, that caught my eye...such as this Spicy Red Bean Stew!

I'm linking the recipe to the blog, where I have spotted this wonderful spicy Israeli Red Bean Stew, that actually reminds me of chili...a vegetarian version...and oh, by the way, I just found this awesome small "bean crocks"...set of 2, at Goodwill for a ridiculous 79 cents each!

The only adaptation I made...was, that I chopped 1/2 of a green pepper, and used 2- 15 oz. cans of Red Gold diced tomatoes. I also thickened the bean stew, as I usually do, with removing 3/4 cup of the liquid from the stew, and adding 3Tbsp. of flour, mixing it smooth, and adding it back into the pot! I must say this is as "good as it gets"...
Do Not use canned beans, as Mimi suggested not to, as well. You don't want to miss out on the special nutrients, that only comes from the dried beans.

Thank you for all your good wishes, about my hands injury...it's been about nearly one month now, and I'm just about all healed now. You all have been so kind and caring, and I do appreciate your thoughtfulness. No fun getting a nasty bite from your own pet (cat)...but you have to be understanding of the situation, and take care of the bite immediately, because infection sets in right away...which in my case it did, but it's all good now, and Prince is still around, 90% blind, from cataract, and almost deaf, but still is eating, and has not other issues other than being very, very frail and thin...still a trooper, still getting around, amazingly knowing where his food is, and his favorite lounging places (sometimes missing the jump to the bed, and sofa)...other than that he is still around, being guided by the younger little Persian kitty, that entertains him and sits by him when I'm not home! That's what I call a real "buddy!"

Two Black Bean Dishes..."kill two birds with one stone"


 
I'm so sorry to disappoint all of you with my simple dishes and not making ooey-gooey cupcakes, cakes, and super rich dishes, so I decided at least the things that I do make are healthy, and delicious...that is if you like black beans!
The one thing, or maybe two things you might have noticed since I started my Weight Watchers diet program, is that I'm concentrating more on making things look attractive, and improve on my photos, as well!
Remember that huge container of black beans? well, I made another big pot of black beans from dried black beans.
This first one is a delicious CUBAN BLACK BEANS, and the second one coming up, is my BLACK BEANS PAPAYA SALSA...I decided to "kill two birds with one stone"...I'm sure you've heard the meaning before!

Realistically speaking...who would want to kill these beautiful Rainbow bee-eaters? The term killing two birds with one stone is "performing two tasks at the same time" has been mentioned that it originated from the Japanese, the Chinese, the Romans, and from a Greek Mythology! Well, they all can call it their own, but this famous Idiom Definition is referred by Hobbes, in 1841, in England. According to Hobbes, it was to "satisfy two arguments with one answer." It is almost impossible to kill two birds with one stone, unless they are sitting close together as these lovely birds!
My second bean dish is BLACK BEAN PAPAYA SALSA...a very nice, refreshing salsa that is perfect as a side dish with BBQ or just have around as a great snack to satisfy the in-between meals hunger!


Love this refreshing salsa, and so easy to make. I will post both recipes for you, and for the next post I will try to keep it on the sweet side by making a yummy dessert of some sorts!

Everything But the "kitchen sink" Soup

Last week, when I mentioned I just didn't feel up to photographing my food...well, actually, in reality...just didn't feel like photographing my step-by-step directions, while making this amazing hearty, and so good for you, all fresh vegetable, and organic beef meatball soup! See, there it is... on the bottom, a little meatball, and on the right, next to the parsley, but it's sort of camouflaged by all the yummy grated Parmesan cheese! Even the Great Northern beans were from a bag of dry beans, and not canned!
The only thing that was canned, was the 28 ounce can of organic diced tomatoes, from Whole Foods. As a matter of fact, every piece of fresh vegetable was from whole Foods. 

I started out sauteing my chopped onions, chopped garlic, sliced celery, sliced carrots, in Canola oil, about 3 Tbsp. added some chopped fresh parsley, salt, and pepper, a couple bay leaves, ... added the canned diced tomatoes, and a 32 ounce container of organic beef broth, a dash of Worcestershire sauce, and bring it to a boil. Depending on how much vegetables you are using, if you use a lot, then you have to add more broth!
Now, where were we?...let's continue!

After the soup comes to a boil, turned the heat down to medium, and added, 1 large diced golden sweet potato, 2 peeled and diced golden beets, 1/2 lb. fresh, cut green beans. I made about 1 dozen small meatballs the day before, which was precooked, added that, and I cooked up a pot of dry Great Northern beans as well. Added that, as well. Pasta which was the tiny shell pasta was cooked up separately to add to the soup.

You don't need any thickening agents, such as flour, or cornstarch, the soup thickens on its own, just from the well cooked dry beans, and especially when you add the pasta to it, will thicken.

At the end, sprinkle some Parmesan cheese right into the soup, and ladle a nice portion out, drizzling extra virgin olive oil on it, for color, texture and flavor, and some more extra cheese.

I promise you, it will chase away any holiday "blues"...makes you feel full and satisfied, all you need is some crunchy bread to go with it, a glass or two of full bodied red wine....and have a nice dessert ...always room for dessert, just with a bowl of soup. If you would like to make this vegetarian, or vegan, just omit the cheese, and the meatballs, and use vegetable broth, instead of beef broth. You can add your choice of vegetables fresh or frozen, and you can actually use any kind of canned beans; they are just as good, and add that at the end of cooking time!
