Mango Mousse



I received so many ideas, suggestions,and recipes, for mangoes...plus researched some new ones online. I thank each and every one of you, and appreciate all of them so much . With all the mangoes still on the tree, there will be plenty of time this month to try out new recipes.

One recipe recipe and single perfect photo that I wanted to try out was my dear friend Ping's, @ping's pickings  in Malaysia... that called for agar powder, a replacement for gelatin, (which is animal based powder)...compared to agar that is pure vegetarian-vegan. I also had a small portion of agar powder, sent to me, as a gift...among a lot of other useful baking gifts, from my other dear friend, Amelia, @Amelia's De-ssert...also, from Malaysia. I'm so fortunate to have such amazing friends from all over the globe.

 Well, since I apparently have used up the agar powder from before, I did discover another powder, which will surprise my American friends. It is the ever so commonly used; PECTIN...which is also a vegetarian-vegan based thickening agent, mostly used for jams, and jellies. Let me tell you, it worked perfect. I did my homework, once again researching the Internet for replacing agar powder, and came up with pectin. It is really very nice, a light white powder; very affordable, and you only need to use a teaspoonful to slightly thicken your pudding, or mousse. Also, I created my own mango mousse, using the simple method, without the use of eggs, and just simple basic ingredients...it worked, and turned out amazing.

 Now, I have 2 amazing simple recipes for you, one is mine, and the second one is Ping's, which she featured in her June 25, 2012 post. Please visit her beautiful blog, and you will find other wonderful recipes from her, which are all her creative ideas (no source mentioned)...so I do believe they are all her secret recipes...sharing with you!

Mango Mousse

4 cups of  mango pulp
from 4 medium peeled, and diced mangoes
juice of 1 lemon
1 1/2 teaspoon pectin powder
2 Tbsp. cane sugar
1 pint heavy cream

In a blender, add the peeled, and cut up pieces of mangoes, along with the juice of 1 lemon, puree the  mangoes with the 2 Tbsp. sugar, and the  1 1/2 teaspoon pectin. In a medium saucepan, pour the mango pulp mixture and heat on medium-high, stirring, but not frequently; let it come to a slow bubble, take off the heat, to slightly cool. In the meantime whip up the heavy cream, and halfway through, add 1 or 2 Tbsp powdered sugar. Whip to a consistency, by testing with you finger to make sure that it has a "peak"...do NOT whip any further than that point, or it will become whipped butter!

Pour the cooled mango pulp into a large bow, and carefully fold the whipped cream incorporating it. Pour into dessert bowls, and place in fridge to cool, and set...about 2hrs, or overnight if you can wait that long. I will be very light, fluffy, not too "jelled"...but just the right consistency to enjoy as a beautiful and perfect summer dessert. Decorate according the way you like to, with pieces of mango, or whipped cream on top.

 
MANGO COCONUT CREAM AGAR

INGREDIENTS

200 ml milk
200 ml coconut milk
4 tbs sugar
1/2 tsp agar powder
1 medium-sized ripe mango (about 250 g uncut weight)

METHOD

Remove peel and seed of mango. Puree 3/4 of the flesh in a food processor with a little milk until smooth. (I had about 1/2 cup pureed flesh). Cut remaining flesh into slivers or cubes ... your preference. Set that aside.

Place milk, coconut milk, sugar and agar powder into a pot.
Stir over medium heat until sugar and agar have dissolved.
Stir in pureed mango and turn the heat off. Mix well.
Pour into moulds or cups.
Refrigerate until firm, about 1 - 2 hours, depending on how big your moulds are.
Serve with mango slivers or cubes.

Paula Deen's Banana Nut Bread...and Awards

If you're feeling sluggish in the mid-afternoon, here's a very nice "pick me up" ...a slice of Banana Nut Bread, and a cold glass of organic low-fat milk. Of course, you can substitute it for a nice steaming cup of tea, or coffee...the choice is yours!
You"re probably wondering why I chose Paula Deen...the "queen of fatty foods" ...
Is it because it's FAT TUESDAY?...would that be appropriate for someone who is still on the Weight Watchers program?...or just recently finding out that she has type 2 diabetes, that she had for three years already, and we just found out!

It's really true, that we don't have to cook like that, with all the butter and fat, she is not encouraging us to cook that way, but it certainly is very tempting to try those recipes. I have found an easier method...just cut down on the fat, and make it a lighter version!
I found a super great thrift find, recently, at Goodwill. Paula Deen's first cookbook, before she became a famous food network star. It was copyrighted in 1997. The price, as you can see it was $1.29 soft cover book, filled with her early famous recipes. She owned a small restaurant at the time, in Savannah Georgia, with her two sons working there. Very cozy, simple, and down-home good Southern foods. I was really impressed with the Banana Bread recipe, and would like to share it with you. As far as for points value...it has to be at least 3 points pr slice...compared to 2 points with the WW Banana Bread, which I will also make soon. I lightened it up a bit, but I must admit, this was an incredible Banana Bread, enjoyed by all!

Banana Nut Bread
The Lady and Sons, by Paula Deen

1/2 cup Crisco shortening
(I used 1/3 cup vegetable oil)
1 cup sugar (I used 3/4 cup)
2 cups all-purpose flour
1 teaspoon salt (I used 1/2 teaspoon)
2 teaspoons baking powder
1/2 teaspoon baking soda
2 eggs beaten
3 ripe bananas mashed
1/3 cup buttermilk
1/2 cup chopped walnuts or pecans

Preheat oven to 350 degrees F. Cream shortening and sugar. (whisk oil, and sugar, if you're using oil.) Stir together flour, salt, baking powder, and baking soda and add to creamed mixture.






Add remaining ingredients; mix well.







Pour into a well greased pan. Bake for 40 to 45 minutes.
( I baked mine for 30 minutes on 350 degrees, and lowered the temperature to 325, for an additional 25 minutes.)












Alexia Foods Cooking Demo, and Gala Dinner

When you are attending a Gala Dinner, just make sure it's actually a GALA! According to the Webster Dictionary, it is referred to, as: Festive Occasion, Celebration, Special Entertainment, and Showy...and that it was! Anything less than that would not have been the proper name for this festive occasion, hosted by Alexia Foods!
Yes, all these flavors of Alexia's fries, were served for the appetizer course, open bar, and afterwards, the Cooking Demo, by Chef Tyler Florence, and the Gala Dinner. Doesn't this sound exciting, already?...you bet it was!

Getting the stage ready for Chef Tyler Florence to demonstrate a simple, and delicious Pork Chops dish, made gourmet!...(sorry, no photo of the dish)
Watching the cooking demonstration, so amazing, Chef Tyler Florence making this simple dish with such style, grace, and so comfortable, with such ease, was so nice to watch. The did show the the dish on the large screen, but my photo turned out blurry, so I had to delete it!
The table setting was so elegant, the appetizers were divine, and starting with the first course: Bibb Lettuce Salad, with Honey Roasted Pears, Glazed Pecan, and Bleu Cheese Vinaigrette
For the Entree: Brandt Beef Farms Filet Mignon, and Meyer Lemon Roasted Prawns...Heirloom Carrots, Celery Root Puree, and Peppercorn Demi Glaze. For an entree: as amazing as this, I tend to forget that I shouldn't consume eating a lot of beef. (well, maybe once a month)...I just exceeded my limit...guilty, but a happy feeling!
For dessert: Scharffen Berger Chocolate Mousse, Sourdough Bread Pudding, and Cowgirl Creamy Cheesecake...yumm!

This is the sunrise scene, at approx. 6:30am, Sunday, Nov. 5th...our final day for meeting up at the Farewell Brunch. I hope you don't think I'm a lunatic for taking all these photos (don't answer that.LOL) I'm an early riser, actually it was one hour ahead...changing the clocks back, 1 hr.

I Left My Heart, in San Francisco!


You all remember the song..."I left my heart in San Francisco?"...or I left my heart at the 3rd Annual Blogger Festival, in SAN FRANCISCO//NOV 4-6, 2011... hosted by Foodbuzz!

For the last 3 months, I've been planning to join this exciting event, since I missed the 1st and the 2nd event for the last 2 years. It was a sudden decision for me, but once I decided to attend, there was no "backing out." Besides, my food blogger friend Joanna, of ChicGorgeous told me that she is planning to attend, all the way from Malaysia, and asked if I would like to be "roomies" with her to split the cost. After all, the Grand Hyatt Hotel, at a great discount, and split by two people is more affordable, and very luxurious!
The fifth building from the left, on the 17th floor, is where we stayed, overlooking the most beautiful view of the city, and a portion of the Bay, Very elegant, and I must say a perfect room assigned to us with a fabulous view!
Such an amazing place to hold the 3rd Annual Blogger Festival.
So, this is the spectacular view from the Grand Hyatt Hotel, from the 17th floor. You can see a glimpse of the Bay, behind the skyscraper buildings. As for the weather...around 61 degrees F in the daytime, and about 47-51 at night, wind blowing every day. A little "nippy" for this Florida girl! Good thing I packed a warm light jacket, sweater, and the best...my trusty little windbreaker light coat, that really protects you from wind, and rain, which we also experienced, and sunshine, as well!
Another view from our room, through the full length window... one of my favorite stores, Macy's, staring right at me! So far, I'm just showing you the immediate view, as we settled in our hotel...wait till you see all the foods, provided by the Foodbuzz team, Alexia, and Godiva Coffee!

Our first stop was at the Terra Gallery, for the Welcome Reception, to meet up with all the attending foodies, and start out the feast with appetizers, and an open bar. I just stayed with my Chardonnay wine. Such a great turnout for this event!
Endless appetizers, fresh veggie crudities, and dips. This is where people were mingling around! You might recognize a few people in some of these photos!

This has been part of Day 1...haven't even shown you the dessert station from the Foodbuzz Awards Dinner yet. I will be posting it tomorrow! It's getting very late, I'm still tired from the trip, and the 3hr time difference, which really isn't too much!
All in all, I can't seem to stop talking about my trip, and the Foodbuzz people for making this event so successful, and thanking all the sponsors as well, for their generosity to participate in the 3rd Annual Blogger Festival. Also, I am so sorry for not being able to comment to my food blogger friends, since I was so busy enjoying the festivities and meet up with my food blogger friends, and getting to know new bloggers, as well!
I am so glad to be back in my little S. Florida city...no sky scraper building here...among other strange but interesting things I noticed in San Francisco, which is not food related!
Will catch up with more, in at least 3 parts...Nite, nite!

More Awards, and Norton Museum's 70th Birthday


I am so thrilled with all the awards given to me, and so honored, humbled, and overjoyed. This award was from Mina @Angellove's Cooking  and from Citra, @ Indonesian in Turkey. Mina is food blogging, from Bulgaria, and Citra, is blogging from Turkey, although she is originally from Indonesia. Both ladies are so, over the top amazing with their cooking, and baking talents that I just feel right now to be insignificant, and that I still have so much to learn. That is why we all gather together as a food blogging community, and have the support for each other, and give praise, where it belongs. Thank you my two lovely friends. for honoring me, with your lovely award!
This lovely award is given to me by my Hungarian blogger friend, Erzsebet, from Citromhab. You must visit her food blog. She is the most talented young bake that I have known, other than my own maternal grandmother, from Hungary. She makes the most amazing breads, and rolls, that you will only find, in the finest bakeries, here in the U.S. or in her native Hungary, and it will cost you a lot to buy something even similar to hers...but she puts her love, and her heart and soul into her baking, cooking, and the most amazing chocolate bon bons, or as we call them truffles. So mouthwatering is her latest one, that you would think it's almost impossible to make at home...but she did! Such talent can only make me feel humbled, and honored!

Angel Food Cake and an Award for Angels

While I realize this is not Spring or Summer...but after all, this is South Florida, and we cannot deny how blessed we are, not to be trying to dig ourselves out of the snow, being stuck in our homes, or even worse, stranded on the highway because of the impossible driving conditions. I feel for all of you, who are in this situation. Almost hate to say..."been there, done that"...when our last snow storm in the seventies while still a very young couple, me still in my early twenties... with a tiny toddler, less than 2yrs old... visiting my aunt and uncle for the Christmas holidays, glorious Florida sunshine, and 75 degrees in December...pure heaven! Returning back to Cleveland to the snowstorms...at that point, we decided...
Florida, "here we come!"...and made the big move!...so, the rest is history!...over 35 years in the tropical climate, and would not change 1 minute of it, except for a "White Christmas."
