My 'Award' Winning Pizza for #Twelve Loaves September

Does it seem like I'm the only 'oddball?'...seriously! I do everything differently than the other fellow food bloggers. I'm so 'lame' when it comes to joining a group, or even linking up something. Not consistent, and certainly always falling behind schedule. I did try to link up last week with my Cheddar Cheese bread for Lora's #Twelve Loaves September, which required a cheesy bread, but did not know that pizza applies...and I did make my own dough this time with the most amazing yeast from RED STAR, called PLATINUM!

Zucchini in Tomato Sauce...and Restaurant Review

I hope you have an extra few minutes to hang out on my blog...just wanted to share the latest...I mean the really most recent, meaning, from yesterday's event! What a wonderful day I've had yesterday, that was totally unplanned.
I'm so happy that my family is back now, from Italy, and I'm back in my own little place, with my sweet little Persian kitty, Mush, who I rarely mention. I've had her since she was a kitten, 13 years ago...and she is still the size of a kitten, has not grown much, but so cute and sweet. She was my beloved Prince kitties constant companion...and now, my little 'shadow'...always been sweet and aloof, but now that Prince is gone, she constantly wants to be around me!



I'm not starting out with the restaurant review...although that came earlier, at lunch time, but for dinner, I made this batch of zucchini for a light dinner, just enjoying it with crusty slices of bread. Still have plenty left over, which could be added over pasta of your choice! So easy to make, and so delicious.

Zucchini is in season now, and so abundant in our supermarkets, and especially in the fresh produce market. I also picked up a small batch of thyme, a bunch of Italian parsley, and decided to make a different herb version for my zucchini and tomato sauce.



Zucchini in Tomato Sauce

4 small zucchini sliced,(but not too thin)
1 medium onion chopped
2 cloves garlic minced
salt and pepper to taste
a handful of Italian parsley chopped
few sprigs of thyme snipped, or
(you can use basil, rosemary, or your
favorite herbs)
1 cup fresh, or canned tomato sauce
(I used Flora tomato sauce)
3 Tbsp. extra virgin olive oil
1 cup white wine, or vegetable broth

In a large cast iron, or non-stick skillet, saute onion and garlic first, for about 5 minutes, add the sliced zucchini, and saute over medium high heat to get a little color on them. Add the wine, or broth, let it cook down a little...another 5 minutes longer.

Add the tomato sauce, and let it cook for another 10 to 15 minutes. The entire cooking time should not take more than 25 minutes. Serve over pasta, or just simply enjoy with crusty bread of your choice...and there's your 30 minute meal. You can also grate Parmesan cheese on top if you prefer!

Simple, and easy...guaranteed that you will love it, if you like zucchini, this is a great way for kids to enjoy their veggies...smothered in tomato sauce!

Ahh, here we are Lemongrass, Asian Restaurant...haven't been here in 2yrs...food is so good, and a pleasant friendly atmosphere!
There's 2 identical section like this...2 bars, so if you have too much Saki to drink...you may think you're seeing double!...no Saki for me, it's only a little over 12: noon! (Lora in the blue shirt, walking in)
I ordered the Lemongrass soup, with mussels, squid, scallops and fish...a light lemony hot 'paprika' broth...did not know that they use Hungarian paprika in Asian cuisine...I loved it, it really 'hit the spot'. Fabrizio ordered the same thing.


We all shared these 2 rolls...the front one was called ...Volcano Rolls...some really yummy sauce, not spicy...covering the rolls...even the little guy enjoyed it, wanting to learn how to eat with chopsticks!

Since no-one would pose for me...all you can see them is walking, and me taking photos of other restaurant buildings...such as this lovely building on the corner, next to the railroad track...for years, this building was a breakfast eatery...then, abandoned for a few years, and in the last ten years, it's been a chic eatery, and always packed on the weekend, and during season. (didn't check the name of the place, but dined there 2yrs ago)

As we were strolling down the avenue...I spotted these gorgeous expensive dogs...their masters walking them...
I don't know the breed of these beautiful dogs...just took the picture, and thanked the owner (no time to ask for permission)...but they said "you're welcome"...isn't it nice how people can be so friendly, and courteous?
Just look at the strong legs on those doggies...wonder if they are poodles...just have them groomed differently!
On this corner, is a very nice seafood restaurant...outdoor eating has a fresh mist blowing...you can even see the mist, above the entrance where it says...Lobster Roll!
 Heading on to this 'parkway' ...there is a brand new amazing restaurant...gigantic outdoor eating, and indoor, as well!...check this out!
This is all part of one restaurant...I have not seen this until now, since they've only opened a few months ago! Totally, amazing!
This was my very favorite...beautiful, and just check out the upstairs...two stories. Love the architecture of the modern building!
A whimsical gift shop, with art, as well...wonder if these cute sculptures are for sale?...love the turtles! So, that was a very nice day, well spent, and totally NOT planned. This is how my family plans events like this...sometimes at the 'spur of the moment'. Have a wonderful day, and hope you're not suffering the heat! We are having 10 degrees cooler temps. now...only about 88 degrees the highest...just lots of rain every day...and mostly grey skies!

Chick- Peas in Chunky Tomato Sauce...and Red Gold Giveaway

I'm truly happy to announce to you, that I have the most amazing 100 % all natural tomatoes to have had the privilege of trying, almost exactly one year ago, when I won the beautiful giveaway pack, from my friend Wendy, @ Weekend Gourmet.

Served over Israeli Couscous, an you've got yourself a satisfying Vegan/Vegetarian dish, or a side dish with any type of meat, if you prefer it that way! The best part...I get to share these "six pack" of tomatoes with the winner of this giveaway!

Red Gold Spicy Tomato Sauce...and a Winner!

Today is the first official day of spring! Although, here in South Florida, we've been experiencing our spring since about January, and we'll be going into full blown summer, by May...go figure! This it the tropical climate that we are accustomed to. Such a wonderful weekend we had, how about that bright and beautiful full moon that only comes around every 18 to 20 years? (witnessed it and took photos)...Sunday was such a relaxing day, did not have barely anything in my fridge to cook for lunch, for my family in my little beach condo, but I always have canned tomatoes on hand, and pasta...the little ones love the mezze penne, and the spaghetti. I also found some Italian sausage in the freezer which I defrosted, so lunch did not take long. A little bit too spicy, but my little grandson eats everything, and did not mind the spicy sauce. Hope you all had a wonderful weekend and got to witness the gorgeous moon that was 14% larger, and 30% brighter than your average full moon...that's what I call "romance in the air...or is it "Love is in the Air?"...remember that song from the eighties?

Pizza...Awards...and PGA Mall

Last Friday...as almost every Friday, Lora made this amazing pizza dough that has become a staple meal, with a side salad, or a vegetable dish. In this case she had the green beans, and leftover pancetta, to add to the pizza topping...and oh, yes caramelized onion, and homemade sauce that she always has on hand for a quick pasta dish. I keep bugging her to post the pizza photos, but she not only does not take photos of it, I always end up taking the photos. Her pizza dough is the easiest and best, made with all, or half whole wheat flour, and half bread flour. Here's Lora's homemade pizza recipe, @cake duchess
Just look at this yummy goodness...Sweet caramelized onions, crispy pancetta homemade tomato sauce, and ooey-gooey mozzarella cheese topping the thin, crispy, crunchy fresh, hot, homemade pizza dough. Trust me on this one...no comparison to take-out!...now, for the lovely blue dish of  Lora's. Long story behind this set of 12 English china set, that was a gift to daughter's hubby, from a lovely English young lady that was a mutual friend to both Lora, and Fabrizio, that he brought into the marriage 10 years ago. They still manage to have most of the set, even if a plate or two breaks, lucky me...I find the same dishes at my thrift finds, but not cheap. Each plate costs $2.99. My daughter finally told me after I replaced 4 plates..."please mom, don't get any more, I'm trying to get rid of these, so I can get a new set"...

Sicilian Puttanesca Sauce...and a Winner!

It's been a trying 3 days for me...trying to scan photos on my scanner, which is a Canon, flatbed, from ten years ago. I do have another newer model, from HP, but that is at least six years old, as well. That particular one, the scanner does not work. I'm trying to be this "self help" computer tech, and it' taking a toll on my patience already, figuring things out. Well, everything is working on the old scanner...lucky for me, I saved the soft-ware to upload the program, now, just a matter of time, how to upload the scanned Sicilian precious photos that I wanted to share with you. I will probably have to resort to my daughter's scanner later, to upload them. I made this pasta the other night at my daughter's house, and it was a huge success, even with the little ones. I have never seen a 4 year old child eat anchovies, black olives, capers, at all, and here I have my little "snow white skinned" blue eyed  Mediterranean grandson, who eats just about everything you put on his plate, especially foods, such as this, and wants a second helping. Something about Puttanesca, which derives from the word "putana=whore," really does have a history behind this famous sauce, does not mean actually, that putanas, where actually cooking it.

Baked Eggplant with Roasted Potatoes #3



Just when you thought I had enough potatoes...here comes more!...OK, enough of the potato "show"...or not! This dish is so classic, so easy, and the potatoes have of course, my Indian inspired spices, along with my Hungarian paprika. Simple spicy Italian dressing, right from the bottle is what I used for marinating the eggplant slices for about an hour, and just patting a thick layer of Panko crumbs on it, and bake it very nicely along with the vegetables for almost an hour, until it gets nicely brown and crispy...oh my, what a treat...tastes so rich, it's so yummy, and satisfying, if you have any leftover, the next day you can just make a sandwich with the eggplant, and eat it cold. It's that good!

Baked Eggplant with Roasted Potatoes

1 large eggplant
2-4 large baking potatoes
2 whole garlic
1 onion
1/2 cup spicy Italian dressing
or (oil, and vinegar+spices)
3Tbsp vegetable oil
cooking spray
1/2 cup plain water
a mixture of Indian inspired spices+
Hungarian hot, or sweet Paprika


Preheat oven to 375 degrees. Slice eggplant into 1/2 inch slices.( you need it a little thick, so it can have a good bite and flavor to it.). Soak the eggplant slices in salty water for about 20 minutes. Cut potatoes into quarter wedges, and set aside in a bowl of water. Cut the onion into quarters, cut the tops of the garlic off.
In order to get the spices coating the potatoes, just put the potatoes in a large Ziploc baggie, and put the spices directly in there, give it a good shake, and it's done. Do the same thing with the eggplant and the dressing.

 Put the eggplant with the dressing in a large Ziploc baggie, let it marinade for at least 30 minutes than just dip them in Panko, or course breadcrumbs on a platter, adding more marinade as needed, because, you have to pat them on with your hands, to make sure it's adhered. Layer everything, in a single layer on an aluminum lined large baking pan, pour the oil right under the vegetables, along, with starting out with 1/4 cup of water, adding the rest after about 30 minutes. (For the garlic, drizzle extra right on top)
Spray all the veggies, and eggplant with Pam, or other cooking spray, to prevent dryness, and to assure nice even baking. Bake for about 45 minutes, adding the 1/4 cup of the reserved water, to assure even baking.
That's really how you make crispy oven baked vegetables, especially eggplant. Serves 4.

Truly, the best imported Hungarian Paprika, you can find. I have ordered from them for the last 10 years, they ship promptly, and surprisingly the shipping charge is very minimal. Always satisfied, with the best products, and beautifully packaged, and generous amount for a very fair price...can't get these products in a store, elsewhere, because everything is either made on their premises, or imported.
Just when you thought I had enough potatoes...here comes more! This one is Italian spices inspired. Same roasting method! OK...so maybe I'm Irish, and don't even know it. Actually, not!
Just a blend of "Heinz 57, as they say"...a nice mixture of Mediterranean, and Eastern European!...yes, that's my heritage,my dear friends.

Curried Potatoes with Vegetables

I just want to tell you that we love potatoes...I love potatoes. It's one of my food passions. Doesn't matter what kind, what shape. I love them all. Roasted, boiled, mashed, baked, fried. Yukon gold, is one of my favorites, but Idaho, sweet potatoes, and lately fingerling, or purple.

Mixed with various vegetables, really, what can be better than potatoes smothered with onions, peppers, carrots, zucchini, with a mixture of lovely Indian spices...
inspired by my friend Sabby at Food Fun Freak- check out her recipes of the wonderful different type of mouthwatering potatoes, and other delicious vegetables. I love curry, and this is a special red curry powder blended with ginger, cumin, hot Hungarian paprika, cardamom, and a small amount of organic tomato sauce blended in. If you like spicy, and you like potatoes, this is the one you would fall in love with!
Not adapted from any recipe, it's just something I concocted, remembering the Indian spices that Sabby and my other foodies friends use in their inspired dishes.

Curried Potatoes with Vegetables

2 large potatoes
2 stalks carrots
1 large onion
3 cloves garlic
2 medium zucchinis
1 cup tomato sauce
1/2 cup water
1 bell pepper
1 teaspoon red curry powder
1 teaspoon ground ginger
1 teaspoon hot Hungarian paprika
1 teaspoon cardamom
1 teaspoon cumin
dash of red pepper flakes
3 Tbsp extra virgin olive oil

Peel and dice potatoes, (leaving them in a bowl of water, so they don't turn color)...peel, and slice carrots, diagonally, cut zucchinis and dice them, cut onion in half and chop, finely mince garlic, slice, and then dice peppers. In a large heavy skillet, (I used a large cast iron skillet)... first, start off by sauteing the onions for a few minutes in the olive oil, add minced garlic, the pepper flakes and saute until onion is clarified, and wilted.

Add the potatoes, (easier, if potatoes are pre-cooked halfway)...add the bell pepper, and zucchini, now add all the spices, including salt and pepper. Stir around real well until all the vegetables are combined...add the 1/2 cup of water, and cook for a few minutes on med. high temperature, add the tomato sauce, and cook until all the vegetables, are tender, about 30 minutes. The sauce should be nicely combined with the vegetables, not too liquidy, just about enough to coat the vegetables. You can adjust the seasoning, but it should be just the right spices...any hotter would be your choice. You can serve this just with a nice crusty bread, or even some pasta, which would be a full and hearty meal. Serves 4.

Home made Pizza

I should really be calling this a Sunday Pizza because that's the only day I get to make this for a quick bite for the family, and it's a great little satisfying lunch with just salad on the side...perfectly even cut little squares on the one side, as you can see, it's just plain, with organic tomato sauce topping, and  (not so organic) shredded mozzarella cheese. On the smaller side, is topped with sauteed, sliced onions, pitted kalamata olives, and pepperoni (my favorite...sorry, not so light and healthy, but oh, so good! The crust is the best part made with the most awesome flour, even better than bread flour for the pizza, called, Eagle Mills, all Natural all Purpose, unbleached flour...a wholesome blend of white, and ultra grain flour. Pizza was devoured, within a few minutes.
Home made Pizza  Dough
1pkg active dry yeast
1/2 teaspoon sugar
1 cup of warm water
3 cups of unsifted Eagle Mills all Purpose unbleached flouror 1 1/2 cup whole wheat flour,  and 1 1/2 cup all purpose flour
2 teaspoons salt

In a small bowl, dissolve the yeast in the 1 cup of warm water, with sugar. Let stand 5 minutes until foamy. In a large bowl, combine flour and salt. Add yeast mixture with fork, stir until dough forms. Turn dough out onto a lightly floured surface. Knead dough for 10 minutes, or until smooth and elastic. Grease a large bowl all around the surface, with the olive oil. Place the dough into the bowl, and turn to coat. Cover with a plastic wrap, or a towel, and place in a draft free place for about 1 to 2 hours, until doubled in bulk. Punch dough down, and place the dough on to the floured surface, cover it by placing the bowl over it, and let it rise again, for an additional 1 hr. Now, you can roll the dough out with a rolling pin,  and place it on a 12 in round pizza pan, or you can make a rectangular form, and place it on a 9x13 flat baking sheet. Preheat oven to 500 degrees and pre-bake for 10 minutes, so when you put the topping on it it won't come out soggy, underneath the topping. Top with basic sauce, and cheese, or with your favorite toppings, and bake for an additional 12-15 minutes until dough get nice and crunchy, and cheese is melted, and bubbly. Serves 6

Basic Pizza Sauce 
1 can of 28 oz. organic tomato sauce
or tomato sauce of your choice
3 Tbsp. olive oil
salt and pepper to taste
dry herbs of your choice, or leave plain
( I just used 3 large whole fresh basil leaves in the sauce)
Fresh basil leaves for decoration (optional)
In a large saucepan, heat ingredients till simmering, Cook stirring occasionally, 15 minutes, or until thickened. Cool before spreading on pizza dough.
