#Palm Beach Love

I must admit, this is not a 'wordless Wednesday'...or a 'silent Sunday'...I tried to upload my latest photos of my amazing Avocado Bruschetta; but my upload is just not happening...something went wrong, so I'm sharing this beautiful photos of my evening walks on our beautiful location...on the island of Palm Beach...where I reside!

A quiet evening, just a few cars passing through!

I've been walking all week this week for 2 miles...and I must admit it really is quite enjoyable with the weather we've been having here...totally spring temperatures, sunshine just about every day; and instead of walking on the beach, I decided to walk on the road that is called South Ocean Boulevard...the most famous road in Palm Beach!
This is the famous Palm Beach golf course...you can see the reflection of the sunset...beautiful crisp fresh air, with the most perfect tropical breeze!
How can you not enjoy the marvel of 'mother nature' when its right in front of you?...this is the golf  course, just when the sun was setting, and I could not resist taking the photos. We all need to 'count our blessings'...there is beauty all around us; we just have to capture the moment!

A one hour walk in nature, refreshes the soul, and spirit; it gives you a new 'outlook on life'...knowing that it is helpful for your health, and makes you feel all new and refreshed. It sure is the most inexpensive exercise  in your life, to make a difference!
There is so much beauty all around us...we just miss it when we are  so occupied in our lives, and miss all the God-given nature that should put joy in our lives...we miss out so much in life that does not cost anything; just giving thanks to our Creator!
Every evening, the sky is different...giving off the most beautiful radiant, magical lights that you can imagine! This is jus 1 mile perimeter of my early evening walk; just about at sunset!
So, the evening ends...my walk is ended for this day...a new day begins, and I'm feeling blessed to have all my friends to share moments like this; wish you were here to take this lovely walk with me! Hugs,

WORDLESS WEDNESDAY...

While the rest of our country...even in the deep South was in a 'frozen frenzy' yesterday, here in S. Florida we had the most beautiful sunny and pleasant day of 79 degrees F. Not so, today (dreary, raining, and damp-cold-windy-chilly-nasty day)

Lemon Bread

Christmas is only 10 days away, and the year has gone by so fast that before you realize...2014 is just around the corner. I wish I had something more exciting to post, other than my average baking stuff. This super lemony and not too sweet bread was so easy to make and not planning to bother to post it...only when half of a loaf was gone, that I decided to take a photo of it and said..."why not?"...so here it is, and the recipe is right inside the container of the glazed chopped lemon peel that is only available at this time of the year, along with the glazed candied cherries and pineapples that brings back such great memories from years of past Christmas!
As you can see, this is a Florida local product and it's quite fresh and extremely potent in lemon flavor.
This past Saturday morning; since the sun decided to come out for a change after every day of cloudy and rainy weather, it was so nice to browse around and check out the little Green Market...much smaller than the one we have in West Palm Beach...but this was a really nice way to spend an hour by myself!
 
 
As I was passing through, I noticed this Rasta man weaving what it seemed like palm tree leaves at the flower stand.
 
There were all kind of local vendors selling different things...including homemade breads, rolls, and pastries; jams, jellies, handmade jewelry, candles, soaps, clothes...you name it!
 
What you see in the background are some colorful Tye-dye materials...notice the Intracoastal water on the right side...gentle breeze, and perfect mild and pleasantly warm temperature in the middle of December.
This is the bridge from Lake Worth that takes you across to the island of Palm Beach...otherwise known as S. Ocean Blvd.
The building in the background is a small hotel that used the be the Howard Johnson, years ago..same building, just remodeled.
Of all things...I was able to find some amazing and lovely peppers, hot, and sweet. I promised my granddaughter Gabby that I would make some pepper jelly for her. She loves the pepper jelly that my daughter buys for her at the WPB Green Market and that one is soo good, not too hot, and not too sweet. Hope I can make one just as good. Did google a few, and found some other good recipes on Pinterest. I love this basket, which I got from Goodwill for $1.99  last year!

Paprikás Krumpli {Paprika Potatoes}

As the saying goes..."the eyes are windows to the soul"...well, let me tell you; I've been doing a lot of 'soul searching' in the last few days, after the holidays! A lot has happened since. I finally decided to get an eye exam, knowing that I need a new prescription for my eyes, and new glasses (I wear contact lenses, as well) Have had problems with both lately, my right eye not feeling just comfortable, blurriness, and sharp pain at times.

Just from my eye exam visit this Monday, (which took 2hrs) I was directed to visit a Retinal Eye Care place the next day for my right eye. Well, that was this morning...after 3hrs of thorough test, eye drops, yellow dye that they inject into your arm to see more...I found out that I damaged, badly scratched retina...swelling, as well. I will be needing an eye surgery, which will take place next Monday and hopefully I will regain my eye sight normally. Over the last few days, I have lost 75% of my vision in the right eye.

The eye specialist asked me if I had a trauma...perhaps hitting my eye; and I suddenly realized and remember my car accident and how I got smacked in the eye from the air bag...my eyeglasses knocked off and the right side digging into my eye...two years, and I have done nothing...even at that time I didn't bother to get my injured eye checked...so now, thinking I need new glasses, this is the result.

Please, do not neglect your eyes, and do go for regular eye exams yearly, if your wear glasses especially!  I waited 2 years with an injured eye that did heal from the physical bruises, but internal eye 'trauma' such as mine, the doctor told me, could have caused blindness...and neglect sure has not helped...so please say a 'little pray' for me for a successful outcome of the Retinal Surgery to correct this problem to regain my sight back...thank you, and I don't mean to 'dump' on you with my problem; but I just wanted to share this with you!
 Nothing like making a simple comforting dish from your childhood, and serving it on a beautiful cobalt blue plate, and a special tea towel from your Hungarian grandmother that she 'needle pointed' herself...some 40+yrs ago. I am truly blessed to have this, and proudly showing it off!
Paprikás Krumpli {Paprika Potatoes}
Recipe by; Elisabeth

4 medium potatoes; of your choice
1 med. onion, chopped
3 cloves garlic, sliced
half link of smoked sausage, sliced...I used Polish Kielbasa
1 Tbsp. extra virgin olive oil
1 Tbsp. Hungarian sweet, or hot paprika
salt and pepper to taste

Cut potatoes in half, with skin on, and boil in salted water, just until it is still partially cooked. You can take the casing off from the smoked kielbasa, and slice thin.

 Saute onion, and garlic in the olive oil. till translucent, and golden. Add the paprika.












Saute onion, and garlic, and the paprika...add some chicken or vegetable broth, to keep from burning on the bottom of the pan.












 I used Progresso chicken broth, but you can use a vegetable broth as well. I used probably about 1 cup, of the 32 ozs, of the broth, and added the potatoes.











Add enough of the broth so that you can simmer the potatoes...at this time, you can add the sausage, or just stay with the potatoes, and let it get thick, and saucey.










At this time, you can add the sliced Kielbasa, and just cook for a few minutes to incorporate.












Add more broth as needed, but do not add more oil. You can always drizzle some extra oil at the end, to make it look glistening, and tasty, as well. Total cooking time is about probably 30 minutes...not counting the pre-cooking for the potatoes!








So, there you have it...the best tasting comfort potato dish, you would enjoy, as a brunch, lunch, side dish, or even for dinner with nice crusty bread, and a side salad!
