Cavolfiore con Uovo-{Cauliflower in Egg Batter}

Hi Friends,
I've been wanting to do a blog post and go around commenting for the past two weeks now. I'm feeling much better now, no sciatica pain...battled a bad flu since that time as well. Your thoughtful comments have meant so much to me to know I have you as my friends...and not just 'readers' as quite a few bloggers refer to other bloggers, and I have actually discovered the reason 'why'!

 While I was checking sources for recipes on Pinterest, I have bookmarked several sights with the most amazing photos and recipes but unfortunately these bloggers have only a few commenters for their lovely posts...and it really is sad. Maybe they're not reaching out for more viewers or have their blog in the research engines or RSS feeds. Don't know and...just wondering!

Until now, I just haven't had the strength emotionally and spiritually; even though I made two amazing appetizer dishes in the one month anniversary of Rosario's passing.These two appetizers were his all time favorites which he made throughout the years and even for this last Christmas...which we are all still wondering how in the world he made it when he was so gravely ill.

I have missed you all, SO very much! Thank you for all your loving and caring condolences, your thoughts and prayers which helped tremendously. As far as my blog, all I have been doing all these weeks lately, is pinning on Pinterest for hours at a time (guilty!) Just can't resist finding beautiful fashions, colors, and of course FOODS! Especially now, with Valentine's day in a couple days.

Today is President Abraham Lincoln's Birthday...what a GREAT man HE was!  Tomorrow is Ash Wednesday, and Thursday is VALENTINE'S DAY! Oh, and I did forget...which you all know by now, Pope Benedict resigned?!

Our world sure is changing...hopefully for the better, although not so sure about our crazy weather in the north east with the famous NEMO snow blizzard. Hope that some of you that are living in the north east have been safe and been able to climb out of all the snow piles.

I am so happy to be back after near month break and promise to stay in touch and visit...visit...visit all you sweet, dear friends! Thank you for all you caring support from me and my children, Lora and Joe! xoxo

Cauliflower is one of my all-time favorite vegetables...even more than, broccoli. Love the mild flavor all it's own. Love the crunchy flavor raw, roasted, steamed, in soups especially. Also is so good 'pickled' and dipped in egg batter and fried in fresh canola oil...just can't resist eating only one. This recipe which is totally 'handed down' for years, and will stay a 'staple' holiday, or special occasion appetizer in our family.

Cavolfiore con Uovo
Cauliflower with Egg Batter
recipe; handed down from the Pregadio family, 
(with slight adaptation)

1 large cauliflower
2 cups flour
1 cup canola oil (for frying, or more if needed)
3 eggs well beaten
salt and pepper to taste
paprika, to sprinkle on (optional)
Cut cauliflower in half, and then in large chunks.
Boil until al dente...do not overcook.

When cooked strain in colander, rinse with cold water in kitchen sink.











Cut in portion size pieces...as shown in photo.












In a large bowl, add the flower and the seasoning and add the cauliflower pieces. Incorporate the pieces real well so that they are all coated well.











With a tong, dip no more than three pieces at at time in the eggs. (if you need more eggs beat a couple more, just do not add water to the egg batter)











In a large cast iron, or heavy skillet, fry until golden...just do not crowd the pieces, or they will not fry properly.











Fry in hot oil until they're golden brown...










Drain on double folded paper towel, and assemble them unto a pretty serving platter.

You can serve them with your favorite dipping sauce, which I did not include in this recipe; there are so many amazing ones out there.







This is the most favorite appetizer of all...next to the Eggplant appetizer (sneak preview) for next post! The Eggplant appetizer is a roasted eggplant cut up in chunks and scooped pieces with fresh garlic, crushed red pepperrs, extra virgin olive oil, lemon juice, and capers. A re-created recipe by me from the original Caponata...minus the tomatoes, olives, and the celery.

As for my Pinterest mania...this is where the FUN comes in! You collect your favorite things on your pin board, and if you're lucky enough to find the source where it came from, you will also get the recipe. For Valentine's I have a special board called 'my funny Valentine' which really is a name of a song I love so much.

Have you ever seen such a gorgeous festive cake for Valentine?. Well, this tops them all!

Scrambled Eggs in Pita Pocket

Looks like my 'Silent Sunday' could extend into 'Silent Wednesday'...but that's not what's going to happen, because I have a lot to say, and I can't keep silent!
On my post from recent previous; I mentioned about 'throwing in the towel'..just not ready to do that! There's so  much to enjoy with blogging...especially with 'likewise foodie friends'...I enjoy so much from visiting all the blogs, and staying in touch with 'friends'...and I don't mean 'readers'...as some bloggers refer to other bloggers! ...to me, that is a little 'letdown'. As far as I'm concerned, I, and YOU, have lots, and lots of the so called 'readers' that do not comment, they just READ, and continue on to other blogs to read more!
 
I was cleaning out my fridge the other day, and found leftover fresh spinach, bell peppers, and always have fresh ripe tomatoes on hand, since we have tomatoes all year round in S. Florida. I have not taken any photos of my foods lately, since my Red Clam Sauce, so at the last minute, I took some pictures of my simple Scrambled Eggs. I always have wonderful pita breads in my freezer (not homemade)...but one of these days!

I had to fast since last night because I had to have my 'blood tests' for my routine checkup this morning, and I stopped at the nearest breakfast place in my 'old' neighborhood...and what a 'letdown'...just for a simple egg sandwich...sigh!...I prefer my own scrambled egg sandwich, and I'm sticking to my promise next time...'MAKE YOUR OWN!'

Scrambled Eggs in Pita Pocket
my own concoction; by, Elisabeth

2 large eggs (scrambled in a small bowl)
1 medium onion chopped (I used red onion)
1 bell pepper diced, or pepper of your choice
(I used yellow bell pepper)
A handful of fresh baby spinach
1 cup (8 oz) grated cheddar cheese or cheese of your choice
2 Tbsp. extra virgin olive oil

In a non-stick skillet, saute the onion, pepper, and spinach, till onion is wilted...add the eggs, that was pre-scrambled.

Just let the eggs settle carefully, add the salt and pepper.









Carefully separate the eggs in the middle, add the grated cheese, and just let it cook for a few minutes...do not stir, or disturb the egg mixture any longer...done!...ready to serve!...that simple:)
















Spicy Red Bean Stew

Do you sometimes just browse through blogs, from other blogs, by just clicking over to a blog with s "shout-out?"...well, I do that quite a lot lately, and get so distracted with what I was originally set out to do.
I was recently commenting on a blog...trying to comment on a blog, that did not happen, and I got "sidetracked" to another blog, that caught my eye...such as this Spicy Red Bean Stew!

I'm linking the recipe to the blog, where I have spotted this wonderful spicy Israeli Red Bean Stew, that actually reminds me of chili...a vegetarian version...and oh, by the way, I just found this awesome small "bean crocks"...set of 2, at Goodwill for a ridiculous 79 cents each!

The only adaptation I made...was, that I chopped 1/2 of a green pepper, and used 2- 15 oz. cans of Red Gold diced tomatoes. I also thickened the bean stew, as I usually do, with removing 3/4 cup of the liquid from the stew, and adding 3Tbsp. of flour, mixing it smooth, and adding it back into the pot! I must say this is as "good as it gets"...
Do Not use canned beans, as Mimi suggested not to, as well. You don't want to miss out on the special nutrients, that only comes from the dried beans.

Thank you for all your good wishes, about my hands injury...it's been about nearly one month now, and I'm just about all healed now. You all have been so kind and caring, and I do appreciate your thoughtfulness. No fun getting a nasty bite from your own pet (cat)...but you have to be understanding of the situation, and take care of the bite immediately, because infection sets in right away...which in my case it did, but it's all good now, and Prince is still around, 90% blind, from cataract, and almost deaf, but still is eating, and has not other issues other than being very, very frail and thin...still a trooper, still getting around, amazingly knowing where his food is, and his favorite lounging places (sometimes missing the jump to the bed, and sofa)...other than that he is still around, being guided by the younger little Persian kitty, that entertains him and sits by him when I'm not home! That's what I call a real "buddy!"

Farewell Brunch...3rd Day!

I'm already nostalgic about posting the last day of the Blogger Festival, but then after everyone else has left, I stayed on, an additional 3 days to stay at another, more economical hotel with Joanna, since she stayed till the end of the week, it made more sense to try to economize.
"Local Farms" Stone Fruit Medley, and Artisan Cheeses...the most amazing cheeses you can imagine! There were of course hot chafing dishes of Fluffy Scrambled eggs, Crispy Bacon. Challah French Toast with 100% Vermont Maple Syrup, Homemade Fennel, and Cranberry Sausage...did not have most of these...therefore, no photos taken. The crowd waiting in line, was "overwhelming!"
No brunch is complete, without the Deviled Eggs Casserole...Yumm!

I'm not a "breakfast fan"...but brunch is more my style, which in this case worked, because by 10:00am, I'm ready for something good to eat, so I opted for some of these goodies, a nice cup of Godiva Coffee!


A word of advice: If you're planning a trip for next year,
do plan ahead...save your money, it's not so costly as you think it would be, because if you are a Fooddbuzz Publisher, your entry would be only $30.00...compared to $300.++. You get a huge discount for the Grand Hyatt Hotel, and even though the other 2 hotels they recommend are less expensive, but you have to take into consideration, that you have to walk 2 blocks to get back and forth to the Grand Hyatt Hotel, to meet up to take the shuttle bus to other places where the event is being held.

Also, you have to plan with other bloggers to get together, DO NOT ATTEMPT TO JOIN THIS EVENT BY YOURSELF! Do plan ahead, because you would not want to pay nearly $200. per night for the hotel room, get a buddy or bring a family member, or a friend with you. Also, you do have to take a taxi from one event to the other, and it could cost you up to $10. each way, so share the taxi with some friends! Do not venture out too far by yourself...the city is full of "crazy" people that actually approach you, if you make eye contact with them! Also, another advise!

I don't know how to tell you, other than being truthful about other food bloggers...there's a lot of bloggers that think they are "all that"...and trust me, they are NOT! You,...Me, being as friendly and sociable, as I am, had the worst time trying to make friends with others, than my little group of very, very, nice friends. We all just came together, each of us making friends, and brought them to join our table. I noticed the "young food bloggers" (20 something) are not as gracious, and/or friendly...some were totally "unapproachable"...when I actually checked their blog, I nearly fainted that here, I thought my blog was just so, so, and to think I am approaching "royalty" when I tried to make friends with them!...OK, enough said!

Just be who you are...and yes, you will be "snubbed" by some bloggers, but you are there, because you are invited, just as they are, and wouldn't it be nicer, if all of the bloggers could extend their welcome towards each other, instead of just checking out your badge...hanging in your neck on a rope, like a "puppy"...grin, and smile at one another, and say "Hi! it's nice to meet you"...and not just turn their back on you and walk away, because they never heard of your blog...Well, it goes both way, of never hearing of the other person's blog, as well!
I could go on, and on about other incidents, but I just know I had an amazing time, and on most part, almost all the bloggers I met were very nice! More photos, to continue, of the last day of the 3rd Annual Blogger Festival!

Hope to see you next year...do contact one-another, to plan meeting up, ahead. I planned at least 3 months ahead, and as a "thrifter" my plane ticket with Delta, with one stop, cost $348. less $200. with my Amex award points!
A total cost of $148. round trip...I kid you not!...perseverance, pays, by scouting for cheap prices at least 2 months prior!

This trip was from West Palm Beach to Atlanta Georgia...stop over, no waiting, just 45 min. layover, to San Francisco! I even had my seats assigned and just had to pick up my boarding pass, at the airport!...Now isn't that amazing? Why do you think my blog is called, food and thrift (finds)!

1.THE MOST BEAUTIFUL POST
 I don't do much baking for the simple reason that my daughter does most of the baking in the family, and I have been slacking off in the last few years with my cake baking. I like to come up with easy-breezy stuff, as this No Bake Raspberry Cheesecake that I literally took the recipe from the back  of the box of the graham crackers, and adapted it my way! This was back in April of this year, and I received 50 comments on it! For a simple cake, I thought this was really pretty and light for Spring! (photo was taken with my old camera, and this was the best I could do)

3. THE MOST CONTROVERSIAL POST
# 3-My Homemade Garlic Rolls has to be the most controversial post. I have never made garlic rolls like these. They are like the cinnamon rolls, only with a different twist, filled with herbs and garlic. I was so excited when I first saw this on another blogger's blog. Instead of commenting on the blog that was linked to (which I did later) ...as usual, me...like a little "kid" all happy and excited, commenting, and complimenting how much I love the rolls..."thank you for sharing"...so on, and so forth, just drooling all over their post. Not a word back on their blog, not a "peep" to mine; Do you know how bad, that feels?...the rejection?...the vulnerability, to put yourself out there to a stranger's blog and open up with your feelings, and the "let down" is so sad...but your learn from it! I simply went to the "source" where it was linked from, and not only got a gracious comment, but a "gift" of the yeast she used to send to me from Singapore! So,  as you see...when "one door closes, another door opens up for you!"....a happy ending!

4. THE MOST HELPFUL POST

The most helpful post by far, has to be my Chocolate Chip Biscotti that I baked for the online bake sale for the American Cancer Society, hosted by Becky, @Baking and Cooking, A Tale of Two Loves. I have never done an online baking before...did not know the firs rule about it, but there I was participating in the baking to have my biscotti bid on, bake it, and ship it out for the blogger that won the bid. It was quite challenging, for a great cause! I also bid on 2 amazing desserts and had it shipped to me. Totally fun, and a great way to support cancer research for our loved ones, friends, and all the people who are battling this disease, and for the ones that have been cured!
Such a great and rewarding feeling. I cannot go into it any further, because there would be tears of sadness, but mostly tears of joy for the cure!


5. POST THAT WAS SURPRISINGLY SUCCESSFUL
My "Perfect Brownie Pan" Brownie (One Bowl Brownies,) made in the famous brownie pan with the individual dividers. By mistake, I poured the brownie filling into the pan while the dividers were in, instead, before, and it created little collars around the sides when it was done...not intending to make this design.

6. POST THAT DID NOT GET ATTENTION IT DESERVED
I was so proud of my Mushrooms in Adobo Sauce, a true authentic appetizer tapas from Spain, with caramelized onions and homemade adobo...not the powdered seasoning that you buy commercially, but your own.
It really was professionally done, and plated. Could be, that not that many people like mushrooms.

7. POST YOU ARE MOST PROUD OF
The post that I'm most proud of is the simple, yet amazing Carrot Pineapple Cake with Cream Cheese frosting, that I made for my son Joe's birthday, this March. He just published his first novel, and also launched his surfboard art career. We celebrated at a Vegan restaurant since both son wife were both vegetarian at the time (now, my son is not, after one year)
It didn't take long to make this delicious cake, but you must make it the day, or several hours before (I made it the day before) to assure it's flavors combining with all the goodness added. All ingredients are so fresh, and the frosting totally amazing!

Pizza...Awards...and PGA Mall

Last Friday...as almost every Friday, Lora made this amazing pizza dough that has become a staple meal, with a side salad, or a vegetable dish. In this case she had the green beans, and leftover pancetta, to add to the pizza topping...and oh, yes caramelized onion, and homemade sauce that she always has on hand for a quick pasta dish. I keep bugging her to post the pizza photos, but she not only does not take photos of it, I always end up taking the photos. Her pizza dough is the easiest and best, made with all, or half whole wheat flour, and half bread flour. Here's Lora's homemade pizza recipe, @cake duchess
Just look at this yummy goodness...Sweet caramelized onions, crispy pancetta homemade tomato sauce, and ooey-gooey mozzarella cheese topping the thin, crispy, crunchy fresh, hot, homemade pizza dough. Trust me on this one...no comparison to take-out!...now, for the lovely blue dish of  Lora's. Long story behind this set of 12 English china set, that was a gift to daughter's hubby, from a lovely English young lady that was a mutual friend to both Lora, and Fabrizio, that he brought into the marriage 10 years ago. They still manage to have most of the set, even if a plate or two breaks, lucky me...I find the same dishes at my thrift finds, but not cheap. Each plate costs $2.99. My daughter finally told me after I replaced 4 plates..."please mom, don't get any more, I'm trying to get rid of these, so I can get a new set"...

A Lovely Blog Award


I am so honored to have The Lovely Blog Award bestowed upon me, not once, but twice. The first one was one week ago, from Emma, at  Sunflower Days, and the second, today, from Lora,
at cake duchess. I am so excited every day to think of new things to blog about, and also checking to see what my foodie friends are blogging about
.
If it wasn't for the Foodbuzz Community, I would not have some many wonderful, and talented people from all over the world.There are so many beautiful blogs out there, and I have been fortunate to have made friends with a lot of them.
I have been so inspired by all the different cultures, and their dishes that every day is such a joy for me to be able to get into contact with all my friends.

So this is a "shout out" now to the 30 bloggers.
