Sun Dried Tomatoes in Herbed Olive Oil

It's been nearly a year and a half since I made this wonderful Sun Dried Tomatoes in Herbed Olive Oil, and since I wanted to pin this to Pinterest to my "pickles and jam" board, which needed more home canned goods, I thought it would be a good idea to post it again.

I have to admit, I did make a very nice dinner a week ago, which consisted of a light salad from my dear friend Angie, @ Angie's Recipes

I actually made this salad, along with bake haddock with a gratin topping, and shared it with a friend of mine. She wanted us to celebrate Prince's life...which I thought was a little odd...but, why not? I took photos of the salad, which was really very nice, but I'm my worst "self critic" and deleted the photos! The only thing that was different; is the sweet potatoes were served on the side, and the baby spinach I purchased also was mixed with baby arugula, which was just perfect. Thank you Angie, for your amazing recipe, as for all the others, especially the most beautiful breads that Angie bakes.

Yesterday, my daughter Lora and I went to Costco to get a few items...you cannot go to Costco, for less than $100. even if you shoot for $50. minimum which some people can...but it's almost impossible! She stocked up on cookies, juices, and popcorn for the kids' parties at the end of the year parties, and I requested a box of their superb croissants which is so, so, good! You can have them for breakfast, fill them with whatever you like. For lunch, I sliced some cold rotisserie chicken breast which I purchased at my local Publix supermarket, and topped it with coleslaw that I fixed from a already shredded cabbage in a bag, and mixed my honey mustard dressing!....so, so, yummy...(not photo of that, either)

I will be sharing some of my "thrift finds" with you, from yesterday! Since Goodwill is so close to my daughter's neighborhood in West Palm Beach, every time I go to Lora's house I have to stop at Goodwill to see what they have. Apparently, Mikasa, and Studio Nova are connected, which I did not know until now. What really is nice, that companies like that, and others donate discontinued items to Goodwill which happens to be BRAND NEW...and it was my lucky day!

I found this Tupperware set...don't even know if its a set, but these smaller pieces were inside of this "classic" Tupperware from the 70's, or 80's...brand new, as you can see. They don't make this high quality any longer.
Love the beautiful brick color, and the sturdy material. You just cannot find this any more...brand new...brand new!
I kid you not..this was the actual price of this most amazing Tupperware, that for some reason was brand new!
I love this crystal vase, bowl, or container...another brand new product!
Just look...from Pier 1 Imports...check out the price! I will be using this for my sea glass, collected from my beach, or place a nice large candle, or even for a vase...so many uses!

A crystal bud vase...there was no price on this vase...I asked how much, and I was told that it has to be $2.99...only, because its crystal, and because it has some beautiful design...which does not show up on the photo!
My most favorite...of favorites...Baby's Breath! Cost?....$3.99, and it will last you for a week, changing the water for a nice fresh one, each day, adding a little bit of whit vinegar each time to the water, along with ice cubes!

Feta Cheese LOVE...and taking a short break!

Tomato, feta cheese, fresh mint, and red onion salad with lemon, and white wine vinaigrette

Since I have a blog about "food" which naturally is a food blog, also I do have it listed as "thrift"...previously "finds" as well. I still find fabulous thrift finds...just when I happen to walk into Goodwill and something will just "pop" out to greet me, but my main focus still is FOOD and being THRIFTY!

As you have seen my Spanakopita in my previous post, I used the same feta cheese in two of these dishes, as well!
At Costco, or another food club, you can purchase the same amazing Greek feta cheese...not the pre-crumbled kind, but in one solid block, which stays moist, and you can dice it, or crumble it yourself. For a 2.65lb. of Greek Feta Cheese, I paid a little over $10. ...prepared 3 different kinds of dishes with it, and I still have enough to use for a beautiful Greek salad. So actually, you have enough for 4 different kinds of things to use it in...which is about $2.50 pr each dish, that serves up to 6 to 8 servings. What a fabulous DEAL!

So now, I would like to let you in on a "little secret" that I wasn't going to mention...but then again, I'm back in the same situation as in my last mention on my blog, about the "posting".
Although, I do have a GUEST POST ready for my dear friend, Ping @ Ping'sPickings, which I successfully have made just about a day or two before I had this accident on both hands that will be preventing me from blogging....(sure, sure, excuses, excuses! LOL)


Some of you, who doesn't know about my beautiful kitty named Prince, is nearly 20 years old now...we're just calculating the age from the time my daughter Lora found him at her doorstep crying, about 17, or 18 yrs ago at her apartment door (close to her college she was attending) He was left behind by the previous owner still with the tag on his neck...owner moved, and I think Prince just did not want to leave his premises. Apparently he was well known in the area by the people, and the neighborhood cats that were all his buddies, hanging around the plush Key West style area at the N. area of the Palm Beaches.

The photo on the right...Prince from 1998, when I adopted him from Lora, since she was living in Italy at the time. He is a pure breed Main Coon...tall, about 11 lbs, with gorgeous shimmering soft white-and-black hair, and bushy long tails. The most handsome male cat you've ever seen. So sweet, and gentle, as well.

Well, I announced a few month ago that I may have to have Prince put down because he is wasting away...he is now, about 4 lbs...has thyroid problems, has glaucoma, almost deaf, but still as sweet as he always has been...still remembering the 7:00 wake up call for me, to jump on my bed to remind me...still jumping up on the sofa by the living room window...I don't know how he recognizes my footsteps but he knows I'm coming upstairs...still eating...and a LOT! every 2, 3 hrs wanting to eat again, so now I just give him the same leftovers in a clean dish, and he finishes it!

I cannot make this awful decision to put him down YET, when he is still alert, sweet, and caring...but two days ago, something terribly went wrong. Since he does not groom himself, I clean his hair with "handy wipes" wet disposable towels, and brush his hair but not as often because he get snarls, and his skin is sensitive.

I will not prolong...although, I'm still hesitating to tell you that my sweet Prince bit both of my hands which at the time I didn't make much of it, just cleaned it up, and put a band aid on it. That was TWO days ago.

I do understand no-one likes to have their hair pulled, "you'd be mad too," is what my attending nurse said! Poor Prince freaked out...while in my lap, he snapped at my left hand, leaving two puncture marks over, and under my left thumb (can't bend my thumb;ouch)....I did get the snag out of his hair, and when I put him down, he freaked out even more, and bit my upper right hand, quite deep, and tore the skin to almost two inches...looks like a #7  nasty infected scar now!...the worst part is, that both my hands been inflamed, and swollen...getting better now with strong antibiotic, and antibiotic heavy cream!
Wouldn't you know, when it happened, all I said..."Prince, that wasn't nice"...last year at this time, almost to the exact day is when I sprained my ankle, and now this!
Instead of worrying about my hand at the time, I asked Dr. Eric to look at Prince...and again, he suggested to put him down...I'm in such a dilemma...Prince is his sweet self again...as he has always been, calm, and nice...fighting to stay alive!

So, I will be resting, taking my antibiotic (which makes me drowsy)...will try to comment on your blogs, but will not be posting for now...no cooking, or baking, but will be enjoying all your mouthwatering and delicious foods, and amazing desserts you post!

My daughter Lora @ CakeDuchess offered to  do a Guest Post for me this weekend, and I may be "knocking" on your food blog door to ask if you could do a guest post for me!

Easy Frittata with Vegetables and Bacon...also an Award!

I'm not trying to cover up, or making excuses for not posting a fabulous dessert...my favorite quote..."it is what it is"..."what you see is what you get"...well, it holds true. I'm quite a frugal person, but that does not mean I'm "cheap" I like to get good quality produce, small amount of meats, seafood, and the freshest and best eggs possible.
 I have been buying the 18 carton Egg-Land's Best at Costco's and I always have more than enough. I don't bake enough, and I don't eat enough eggs, so when I have a lot left over, I end up making a frittata on top of the stove, and finish it off in the oven, to melt and brown the top with the cheese on it, but this time I didn't have any cheese...but did still have the organic bacon, so I cooked that separately, to sprinkle on the top. Leftover eggs are always nice hard boiled too, to make egg salad with it.
You probably also didn't know...which some of the 7 things about me, is that I love iced tea better than hot tea. The only time I drink hot tea, when the temperature drops below 65 degrees F. outside! Strange, but true! Also, I love Lipton fresh brewed tea. I literally make a pitcher of fresh tea for iced tea, which both my son and I love. He comes over to my place, at lunch time (works from home)...runs on the beach, and when he returns. he practically drinks the entire pitcher of ice tea with fresh lemon slices, and sweetened with "blue agave" syrup. So that's my little secret with the iced tea!
What you see on the forefront on the left, is little chunks of cooked potato, and little diced pieces of zucchini,
chopped onions, peppers, and diced fresh tomatoes, and beautiful sliced tomatoes  from that glorious bag of fresh tomatoes that I buy for $1.00 when they have it at my favorite local produce market!

Farm Fresh Eggs...or Egg-Land's Best!

If in doubt...as to make a perfect omelet...simple or filled with your favorite vegetable, ham, or bacon, mine is just a simple sliced sweet onion omelet, for 2 servings, with 4 eggs. Farm fresh eggs?...Well, daughter Lora, her friend, Lauren and her 3 girls, and my grandchildren Gabby and Luca went on a real egg farm...or correctly, chicken farm, to get fresh eggs! To be perfectly honest, Egg-Land's Best is fresh farm eggs. There is no doubt in my mind that they are the best, as far as I'm concerned, and that goes for my family. I want nothing, but the best for them!

I sauteed thick sliced sweet onion, which I love so much, in 2 Tbsp olive oil, and just added salt and pepper right into the skillet, over the onions for more intense flavor.








Scramble the 4 eggs lightly, and just pour over the sauteed...actually caramelized onions. Do not stir, just lift the pan from side to side, and jiggle the eggs, so they spread evenly. With a spatula, you can lift the bottom around the edge a little, after a few minutes.





At this point, you can flip it over to the other side, and just fold over, as it's shown in the top photo!

I'm also a fan of Egg-Land's Best on Foodbuzz, and have been cooking and baking with it for a few years now. Every time my daughter and I go to Costco, we buy the 18 carton of these beautiful eggs. I prefer the Extra Large eggs, although there's not too much between the two sizes.
These are the farm fresh eggs that my daughter purchased, all different colors...price? Triple the cost for the dozen farm fresh eggs, compared to a dozen Egg-Land's Best! Mind you...I did not eat even one egg...just wanted them to enjoy it, but come to think of it, I did take one or two from Lora, and it's still in the carton.

I would like to thank all of you for your kind and caring comments and mostly for your advice for helping ease the pain.
This happened to me last Tuesday, and it has gotten worst after a few days. Not fun, having a pinched nerve, anywhere on your body. I am so glad to have read about some of your similar problems, and thanking you for sharing your experiences with me. Finally, after my most amazing chiropractor, Dr Keith, who is also a Physical Therapist as well, and travels around the globe treating sport stars! Also, I had a massage on the shoulder which did help, but the most therapy that helped was stripping the knot with a gadget (that was so very painful but really helped)...he even suggested that I get it x-rayed and see and orthopedic doctor, but by Saturday, I was starting to be able to actually lift my arm slowly! Now, it is so much better, and I'm getting the use of my right arm back!
Still have not cooked or baked anything, accept my simple easy omelet, and I thought I would share the photos of the egg farm with you. It was so much fun for the kids, and a nice little morning outing on Saturday!

Blueberry Scones...Part 1, and Awards!


All right class...I hope you've done your homework, because I'm going to quiz you on it! I made these amazing and yummy scones, based on a recipe by my dear friend Emma, from Australia,@ Sunflower Days.

On her recent previous post, she made these incredible rustic raspberry scones, that caught my eye, and I simply fell in love with it. I mention to her on my comment, that I would like to make the scones, but I don't have raspberries, so she encouraged me to make it, even though I have blueberries...and mind you I had tons, and tons of it. If you shop it Costco, you know exactly the sizes their product come in. Well, the blueberries came in a huge plastic container that was 908 grams=32 ounces...how do I know how many ounces? ...it was written on the package, but I did my homework, knowing I have to do some converting the Metric measurement on

I did the multiplication, just to prove a point, 908g. x .0353, and it's exactly 32 ozs.

ounces to grams: multiply ounce figure by 28.3 to get number of grams
grams to ounces: multiply gram figure by .0353 to get number of ounces

In one day, I made three different recipes with my beloved blueberries, which is in the same group of my favorites of the berries, as strawberry, on top of the list, and blueberries close second, and of course raspberries, which are equally as good, but they are ever so expensive, just as the blackberries. I love them all, but I will stay with my first two choices to combine them in a wonderful dessert. Notice how flaky they are? I followed Emma's recipe to a "T" and wouldn't you know?...I actually added one egg, to 1 cup of the buttermilk, to have enough to brush this beautiful egg wash glaze on it!
Have you ever seen such perfect, gorgeous, huge, and juicy blueberries?...Costco has them, and then some!!!
Getting off the subject, now...the time has come once again, as in every year at this time; some of us get to go on vacations, while some of us stay here, now for the third year...boo, hoo...almost crying...well not exactly! I am so fortunate to be living in one of the most beautiful, tropical, and most desirable place in the world!!! We have sunshine every single day, have the most beautiful beaches, in-ground swimming pools, just about every one has a pool, all the best local eateries, that won't put a "hole" in your pocket...very affordable, the local fun outdoor restaurants that are right on the water, live outdoor theaters, most of them free, we have City Place, right here in West Palm Beach, where you can spend an hour, or spend the entire day...an outdoor mall, but of course better than
a mall, so leisurely, so magical, I've already posted several photos of it in my previous posts!

Blueberry Marshmallow No-Bake Torte...Memorial Day Weekend

Memorial Day is just around the corner, and with all the BBQ's planned hopefully all of you will have a beautiful and sunny day as we always have, here in South Florida. With all the preparations going on for this event, why would you want to spend hours in the kitchen baking pies, and cakes, when you can just whip up an "easy-breezy" spring/summer dessert, that will chill in 2 hours, and ready to enjoy!
Now, unless it's your mother's treasured recipes that were marked down in a handwritten book as in Claudia's @What's Cookin' Italian Style Cuisine from her dear departed mom's... you have got to mention that it's your own creation, or adapted from some source. As for your own creation, that really means you have memorized a recipe and are putting together by your own creativity and jotting the the instructions, and the step-by-step method, just as I have done in my last post about the Roasted peppers, which is a tried and true method from all the other failed ones I have used.
As in my case, I must confess, I steal ideas from glancing at pictures of recipes...being in the culinary profession for so many years have thought me just that...especially with request from my Private Chef experience when I literally had to plan, shop, prep, and throw together a quick gourmet meal from soup to dessert, and presented beautifully to serve for 2-4 persons (hopefully the same main course)...so, when I see a pretty photo of a dessert, I may not follow which is in most cases, the same exact recipe and will also re-name it, and will add to the ingredients, as well. Also, I do feel that most recipes require to be adapted with different spices, or ingredients to make it your way, and you should mention that when you are posting a recipe, that is copied. Adapted-literally means that you have modified, changed, and altered it for new use.
Before I take you to the step-by-step method, and recipe, I must remember to mention, that my granddaughter Gabby, age 9...decorated the entire Torte top, with the fresh blueberries, and the freshly picked mints from their next door neighbor Dr. Eric's yard....notice the bougainvillea in the background at my daughter's house, and the cute decoration by Gabby...also the sweet mint flower, and a tiny sprig of rosemary which also had purple little flowers. Gingered Soba Noodles with Spicy Tofu...and friends!

In my previous post, I posted my Soba Noodle Salad photo and mentioned to you that I would post the recipe later.

Well, there's more to it than that. On the day I made my Noodle Salad...actually the reason it would be called a salad is because you can it it at room temperature as well. I made a lot of these noodles. Six ounces will serve 4, but if you double the amount it will serve at least up to 8-10 servings of portion with added broccoli, and the tofu, which I also doubled. Two 8ounces of water-packed extra firm tofu.
The recipe for my Soba Noodle Salad, or the proper name for this is Gingered Soba Noodles, because you just make the dressing for the noodles, or salad, and make double or triple amount and see how far it takes you to use it for something else, as a marinade for roasted chicken...or chickens...as in 3....and why?...because when you want to show your appreciation to a friend, not just what they have done for you, but because you appreciate and love them.

This is the least you can do to make them a home cooked meal knowing they too have a busy schedule and it will last a family of 4 for 2 meals at least, and lunch as well.
A triple portion of the Gingered Soba Dressing goes a long way...I used one portion for the noodles, and two extra portions, including for a third chicken which we kept for us. Leftover roasted chicken goes a long way for sandwiches, and delicious chicken salads, or for chicken soup.

Our dear friend, and neighbors to my daughter and hubby...Eric and Marisa, and their two beautiful children and their family are extended adopted family...by choice. Eric is our veterinarian as well and takes such good care of our pets as well. He also takes good care of my beautiful kitty, Prince and doing beyond what is his duty, by personally checking his progress, since he is old and his health is failing.

When you want to buy the best organic whole chicken, you can find it at Costco, or Sam's or BJ's food club whichever you are a member of. We have a membership at Costco and they have such a huge selection of the best of everything.

I'm going to show you a step-by-step direction and recipe for both the Soba noodles, and the roasted chicken...so hang on!

Grilled Asparagus...and People Watching!

Asparagus is such a nice vegetable to serve so many different ways but most important that you do not over cook it, otherwise it loses it's beautiful appearance and you will also lose their benefits of their important vitamins and protein. It is an excellent source of potassium and vitamin A & C. Rich in niacin, and low in sodium.

If you don't want to turn on your outdoor grill for the asparagus, you can easily grill it in a cast iron skillet ...but will turn on the grill for the (ribs) skillet has been pre-greased, and preheated. All you really need to do is just wash and cut of the thick ends, season them with a little extra virgin olive oil, some sea salt and freshly ground black pepper, and heat on both sides for just a few minutes...

Another post of the pork spare ribs...you ask? I made this Sunday at my son's house. Spent the entire day with them, and ended up cooking, which of course is "second nature" to me. They had this huge slabs of ribs from Costco. and just as I was leaving to go home brought out the ribs and asked if I can stay for dinner as well. How can you turn down spare ribs?...My son back again, from his vegetarian ways...just can't resist certain meats!
As in my previous post of the ribs, I baked them off first for at least a good 45 minutes in a 400 degree F. oven.
Cut the ribs in 4 pieces of portions, as you see on the photo, place them in an aluminum lined rimmed large baking pan.

Drizzle some vegetable oil on them, salt, pepper, garlic powder, to taste, and also some type of vinegar. (I prefer white) but they only had balsamic, which was a new try...also they were out of Lea and Perrins Worcestershire sauce..."no Worcestershire sauce" I asked?...that is when a good bottle of Balsamic will do the trick.
When it is ready to throw on the grill, take them out of the oven, and brush on both sides of the ribs, your favorite barbecue sauce. and literally just grill for no longer than 25 minutes. When it's ready, cut into individual pieces just as it is on the photo above...right on a large cutting board, and serve it on the board, as it is. So good, melt in your mouth amazing ribs, and so tasty, cutting and serving on a large wooden board.

Savory Stuffed Baked Trout

Another Sunday, the first Sunday of March, and I should have been making something for Cookbook Sundays with Brenda, @Brenda's Canadian Kitchen, or make the yummy Brown Butter Brownies from Bon Appetit magazine, which I also have, and mentioned to Lizzy, @That skinny chick can bake!!!, who actually made these brownies, adapted it from Bon Appetit...but no! I have to be different...and "talk is cheap." The truth of the matter, I don't follow too many recipes, unless there is something special I want to make, then, I have to make a list of the ingredients that I don't have, and run to the store to get it, and by that time, I lose interest and just make do with what I have on hand. On the other hand, what better opportunity, when a dear friend invites me over to dinner, and lets me "run the show"...LOL. She knows that she can trust me with what I'm going to prepare, and in most cases it's seafood. She bought these beautiful trouts, from BJ's which is yet, another food club, just like Costco's, but I still prefer Costco's and know exactly what products they carry, even the seafood. The first thing that came to my mind, is that these little "guys" need to be stuffed, so my friend just brought out all the ingredients to choose from that she had in her fridge, and pantry, and dinner was done in 30 minutes...yeayyy!
Normally, I don't see trout at Costco's but then again, I have not looked for it because most of the time I buy shrimp, or salmon, so I don't look for any other type of fish, unless I stop at our local fish market where it's more expensive, but so well worth it. So without any further conversation, I will share my easy recipe with you.

Savory Stuffed Baked Trout
my own recipe

2 pieces about 1 lb. each of whole trout,
(cleaned, and gutted)
2 cups of herb croutons
3 cloves of garlic chopped
fresh herbs of your choice,
(I used fresh rosemary, and parsley)
sea salt, and freshly ground black pepper
liberal amount of extra virgin olive oil
juice of 1 lemon
1/2 cup vegetable broth
a good handful of fresh baby spinach

Liberally drizzle olive oil over, and inside the fish, sprinkle with the fresh lemon juice, salt and pepper, and let it marinade for just a few minutes, while you are sauteing the garlic, the croutons, in a large skillet. Add the broth, the herbs, and the spinach, and cook for about another 5 minutes. Pack the cavities of the 2 trouts and gently pat it in making sure that you don't get the croutons all mushed up. In a preheat 400 degree oven, place the trouts on a aluminum lined baking sheet, and bake for no longer than 25 minutes. Serve with a side of couscous, rice, potatoes, or any side dish of your choice, with a few pieces of fresh spinach. Drizzle extra olive oil on the top, and serve.
Caution: Do not flip the fish on the other side, or stuffing will fall out. Serves 2. The skin will come right off, when you peel it, and so will the meat off the bone, in one try. Oh, so flaky, and delicious! Really enjoyable!

HAPPY VALENTINE'S DAY...and a Giveaway!

If someone asks you...What does Valentine's mean to you?...how would you answer that?...As for me, I would say that to me it means a day to show your loved ones how much you care, and how much you love them. Not just gifts and cards, but in words and expressions! I'll be honest with you this cake I made with a cake mix...yes, boxed cake mix, and not my own...but, I doctored it up so well, that I was so inspired to be creative with the frosting, which really is from "scratch"...and being more creative by adding something pink or red, which happened to be a can of lite cherry pie filling that I had in my cupboard from this summer, that I did not get to use for my cheesecake. So, I decided to share my little heart shaped cake, which was baked in my heart shaped spring form pan, which was a thrift find...brand new Wilton's, for $1.99 retailing at least $16.99. I have gotten so much use out of this, that it's for sure, a keeper.
How can you not love this yummy cake filled, and frosted with real chocolaty goodness, and the oh, so yummy cherry filling, which is drained from the liquid, and save the cherry liquid to spread on top of the chocolate frosting.
Last minute dinner at my son's house...not knowing if I should go, my kitty Prince being so sick for the last couple days...not eating, just moping around, not letting me sleep at night...he was pacing up and down, I thought for sure this is it, since he is so old, but still so full of life and energy. How can you not feel sad when your pet gets ill?! I took this special little cake to my son's house, we shared it after a fabulous meal, and then off to my daughter's to share the other half of the cake...while they were in the middle of their fabulous home made sushi dinner, that Fabrizio made...even the little 4 year old grandson, the little guy, loves sushi...so much for that, I went there to pick up my beautiful roses that they gave to me.
2 dozen beautiful roses, that I received from my family...they told me they bought it at Costco, since they were shopping there on Sunday. Isn't it so thoughtful? A favorite kitty mug, and a bouquet of roses, and "I Love You, MOM" ...HAPPY VALENTINE'S...how much more would a Nonna, and a Mom want from her children, and Grandchildren. This is what Valentine's is about. Not the "Bling" or $$$...but a thoughtful simple gift, and to let your loved one know how much you care about them!

Cook Book Sundays-Crab Cakes


We're having such lovely weather here in S. Florida, I really feel bad for everyone else in the Mid West, and in other areas who are still dealing with all the snow, icy roads, and the horrible cold. Sunday is Super Bowl Sunday, and I thought these crab cakes would be ideal for 4, or if you'd like to double or triple the recipe, you can serve it up to at least 12, and if you wish to make it mini crab cakes, you can feed a crowd up to 2 dozen excited, and hungry friends, who will thank you, and love you for it.

Although, crab meat is a little expensive, buying a large container of it at Costco will make plenty to pass around, as a gourmet appetizer. I don't know about you, but I love to eat it just simple, with maybe little baked sweet potato wedges, and a beautiful mixed spring salad, with home made authentic Classic French Dressing, from Lora...( and remember, you can substitute the vinegar to your choice) ....drizzled over the crab cakes, and the salad...and still have room for chicken wings, pizza, party meat balls, you name it. Games on! ...Hope your favorite team wins. Mine is the Packers!...Go Packers!!!
