Unfried Chicken

Tomorrow is Independence Day...on 4th of July, and as far as I'm concerned fried, or grilled chicken cannot be left out. In my case, as much as I would love to get the gas grill going of my family's grill...it's 'not happening'...since I'll be elsewhere, enjoying my celebration with friends, while my daughter and family are still vacationing in Italy.
Chicken is a huge favorite of mine, and the entire family's...can't get tired of it since there are so many ways of preparing it. Frying the chicken is not an option these days for health reasons, so unfried, is the best way for 'fried' chicken lovers. Instead of breadcrumbs, or Panko, I used crushed corn flakes to pat on the chicken.  I got the inspiration from Bobby Deen, Paula Deen's son. Check out his recipe for the...

Instead of buttermilk, I used Ranch dressing from a bottle, to dip the chicken into, NO Egg whites needed, and I crushed the cornflakes to a finer grade, using a large zip-lock baggie, and just used the heel of my hand to crush it. Also added 1 cup of flour right in the bag, and added the chicken pieces right into the bag. Make sure you tap the crust so it adheres well.

Most importantly, I replaced the boneless chicken thighs like the recipe mentions, and got with the skin, and bone in. A lot cheaper with bone and skin on. I removed the skin, of course. Baked it for additional 10 minutes in the Le Creuset cast iron glazed skillet. I only baked 4 pieces, and will make an additional for the next day, or freeze it!
We have been getting rain, every day...for the month of June...I mean, heavy, heavy downpour! Also there's a Hurricane watch, which may come our way. Watching through the window on the front of the house...there's a cute papaya tree in the middle which is only less than a year old, and it has lots of papaya's...still green, but I saved a large papaya to ripen. We get sunshine every morning until about 2:00PM, then it gets cloudy and the rain starts for over one hour, sometime longer! Cools things down a little, but everything stays so green!

National Flip-Flop Day!

JUNE 20, 2014 – NATIONAL FLIP FLOP DAY

National Flip Flop Day will be taking place on 20 June 2014 – so it's time to get those toes 
exposed and start enjoying summer! 

The day is organized by Tropical Smoothie Cafe, a franchise in the USA that wants us to ditch our shoes and socks and get our flip flops on!

Now in its eighth year this annual extravaganza marks the start of summer, and customers who appear in one of the 300 stores between 2.00pm and 7.00pm in their flip flops get a free smoothie! 

There is a serious side to the campaign though.   The company makes a donation for every customer that wears flip flops to Camp Sunshine.  This special camp was created in 1984 for children and their families who are dealing with life threatening illnesses like cancer, kidney diseases and lupus.
All sorts of support is available at the camp for both children and parents, and with the help of National Flip Flop Day they can continue doing their good work.

Milkshake, rattle and roll - June 20 is National Vanilla Milkshake Day!
The milkshake as we know it was invented by a Walgreen’s employee in Chicago in 1922. He added two scoops of ice cream to a drink called a malted milk. Needless to say, the concept quickly caught on.
By then, vanilla ice cream had already been around for a while. Thomas Jefferson even penned his own ice cream recipe after bringing back vanilla from France in the 1780s.
Making a milkshake is easy, and usually only requires a few ingredients - so quality is key. Even Thomas Jefferson called for “good cream.” A good quality ice cream means you’ll have a thick, frothy milkshake that’s not watered down or icy. And while using fresh, homemade vanilla bean ice cream isn’t a must, it certainly is life changing.
The original milkshakes were actually milk-based alcoholic beverages. They were considered tonics or treats. Adding a liqueur like Kahlua or Bailey’s is a fun way to make a treat enjoyed by kids, adult-friendly. Just make sure you’re over 21.
Classic Vanilla  Milkshake
Ingredients
U.S. Metric Conversion chart
  • 5 scoop(s) vanilla ice cream
  • 1 cup(s) milk
  • 1 teaspoon(s) vanilla extract

Directions
  1. In blender, combine ice cream, milk, and vanilla, and blend until mixture is smooth and frothy. Pour into 2 tall glasses.

Homemade Garlic Rolls

These amazing homemade garlic rolls, filled with fresh herbs and lots of garlic may not be the appropriate type of rolls for Easter, but I assure you everyone will love it as an appetizer to start a fabulous Easter Sunday early dinner...or lunch

We Wish You a Merry Christmas... a Restaurant Review!

Undoubtedly, you know the song...but seriously, in case I forget to wish all of my dear blogger friends, a peaceful and Blessed Holiday Season! As far as baking, I'm so not ready, as for Christmas shopping...same issues, but I did make an awesome Chocolate Chip Date Nut Spice Loaf...for recipe, click on to Claudia's blog...my Florida friend, @ What's Cookin' Italian Style Cuisine! HAPPY HALLOWEEN!

For the last three years, we have enjoyed a fabulous Halloween celebration, usually the last weekend, before the actual Halloween evening. It is held downtown West Palm Beach at the Flagler Montessori pre-school, that has such wonderful staff, and the little children just love going there. My little 5 yr. old granddaughter just graduated from their pre-kindergarten this summer, and still loves going back there for fun events.

Also, it's so much safer to attend a party such as this, and will cost you less money! So, for tomorrow on Halloween, the kids will be going "trick-or-treating" in the vicinity of their neighborhood escorted by adults, of course, and making sure to have all their candy examined when they bring it home!
This particular cake was a donation from my daughter's dear friend, Ilaria, who just recently started her baking treats, such as this beautiful Italian Ricotta Cake, decorated with cute little fondant ghosts! Her little daughter, Giorgia attends the pre-school, and she named her business after her: GIORGIA'S TREATS. She is a talented true Italian baker, who has been making the United States her permanent home, for the last 10 years, or so!
More treats, from a local bakery!
They have what they call a "cake walk"...which is held outside, but unfortunately we got rained out by this ongoing remnant of Hurricane Rina, which is not unusual to get in the last week of October! All we got from the hurricane is several days of heavy rain and wind, strong, and lots of it! I feel for you folks up north who are having early snow surprising you at this time of the year. No fun, while your lawns are still green, and your lovely trees with the fall color leaves, to all of a sudden go into "winter wonderland" when you are still enjoying the beauty of fall! Mother Nature sure is temperamental at certain times of the year!

Savory Stuffed Cabbage Rolls

On New Year's Day, it's been such a tradition in my mom's and aunt's Hungarian kitchen to have a huge casserole of stuffed cabbage, I have such fond memories from Cleveland, every New Year's Eve was a celebration of family, and friends in our house for the New Year's Eve, in our full "party basement" which most northern houses have...I sure miss that. On New Year's Day, was a huge early dinner celebration at my aunt and uncle's, with our families, siblings, and cousins. Every 1st of the year, my aunt would roast a cute "little" pig...(uggghh) the thought of it now, scares me...I could not be staring the poor innocent piglet in the face...ohh yes, the face, and the poor little mouth with an apple in it!
Anyway, these were traditions of the sixties, and since then, we had our tradition for our children, and times, have changed and we keep moving on with time, moving on to a New Year, and hopefully, a better tomorrow for all!

I have not made Stuffed Cabbage Rolls in several years, simply for the reason that my dear departed aunt
who lived next door to us made it every years, here in S. Florida, as my children were growing up, keeping up with the traditions. It's been over ten years that she's gone, and so have the Hungarian traditions.
But of course, if you live near by here, in S. Florida, and  wish to eat authentic stuffed cabbage rolls, you can visit the Hungarian/American club here, locally, in Lake Worth, where they still keep up with the authentic traditions.

Well, for some reason,  when I saw a  spicy Korean condiment of cabbage called "Kimchi" in my daughter's refrigerator, which I thought was so bizarre, because she is so sensitive to hot spices, and that is one spicy side dish! Of course, I ended up with the Kimchi, but that's another story!

I happened to have ground beef, the 1 1/2 heads of cabbage (really need 2) ...2 lbs of authentic homemade Italian sausage from our favorite Italian market, called Mario's in Delray Beach. I did not use Hungarian sausage because smoked Hungarian, or Polish sausage would be perfect for the cabbage, or use smoked ham hocks, which all have so much sodium nitrate, that again, my daughter cannot have, which unfortunately causes extreme headaches for some people.

Chocolate Chip Granola Banana Bread


What better way to end the Old Year,  than to snuggle up with a comfy little throw blanket, watch re-runs on T.V...
or if you're a thrifter like me, get some VCR movies for 69 cents at Goodwill, or if you're lucky, you can get DVD's for $2.99, and get some real good ones, if they're even available. One great VCR movie I still cherish, and like to watch it on New Year's Eve is "When Sally Met Harry" It's from the 80's and I love the 80's classics. There's a quote in there that makes you think,

"What does this song mean? My whole life, I don't know what this song means. I mean, 'Should old acquaintance be forgot'? Does that mean that we should forget old acquaintances, or does it mean if we happened to forget them, we should remember them, which is not possible because we already forgot?"

I'm certain this has happened to a few of us, over the course of time..."old acquaintance forgotten"...not by choice, it's just how life takes a different turn. Everybody has something in their life that sometimes they just don't wish to share with others, so they fade away from sight, meaning...they would rather not be "acquainted" with you. I think it has a lot to do with the economy changing, location, jobs, family, relationships, so it's easier for them not to share things with you, or not wanting to divulge information, that might change your friendship...instead, ending it is the better option...sigh!

So, make yourself a nice hot cup of your favorite herb tea, and have a nice piece of banana bread...as for me and my family, I like to add chocolate chips, not just in the mix, but sprinkle them on top of the bread.

Just as with my cheesecake which I have memorized the recipe, which is so basic, so as the banana bread. It turns out perfect every time. You can of course, omit the chocolate chips, and add nuts, and raisins, or dried cranberries,but always add dried fruits, and not chopped fresh ones. The mashed ripe, (not overripe) bananas add the moisture, and any other ingredients other than the chocolate chips, nuts raisins or dried fruits will make it too wet, and it will not rise properly. I added half a cup of granola to it, knowing that it's dry and will even give it a better flavor, and make it healthy.  The baking time is done to a science, I promise you this is another "tried and true" over, and over again recipe. Cranberry Sauce, and a Stylish Blogger Award

It  is Hanukkah, and it officially started at sundown on Tuesday, and will last for 8 days. We just left Thanksgiving behind, and here comes all the holidays one, and before you know it, it's the New Year.
Well, for Hanukkah, all we do is just keep frying the nice and aromatic shredded potato latkes=pancakes. The best way to do them is to just pass it through the shute of your food processor with the shredding disk, and you'll have a big bowlful to work with, a super messy kitchen, and the aroma of fried potatoes, and onions...and before you know it, your batch of latkes are gonna be eaten up in less than 10 minutes.

Will post some photos about the latkes, my granddaughter took the photos with her camera, mine just totally went blank...no screen. Will be getting my new camera this weekend. A present to myself!

Spaghetti with Porcini Mushrooms

Now that Halloween is behind us, and taking a breather from contacting all the award participants, I can now start posting some of the dishes that I have made in the past week. You will be seeing a lot more vegetarian dishes, since my son and daughter-in-law have become vegetarians, with their on-again, off-again...OK, lets eat some meat...special occasion excuses, so now it's official once more. As for me, I make vegetarian dishes at least twice or 3 times a week and the rest of the week it's usually chicken, anyway. Once in a while beef, or pork, which is rarely. This porcini mushroom comes from Italy, in a small packet. When my daughter visits once a year, all I ask of her is to bring me Italian spices, and porcini mushrooms. All you do to reconstitute the dried mushrooms, is to put them into a small pot, fill it up with water, let it come to a boil, leave it alone to cool the water...do not use for at least one hour, or just put it into a mason jar with the liquid, which is so important, and use it within a few days, or so...all of it, or some of it. It has a nice woodsy flavor, and it is oh so rich, and oh so very expensive, if you can even buy it! The broccoli florets was an (option) which was steamed and added in there at the end.

...OK enough of that. My recipe to follow, the way I made the porcini with the spaghetti...some of you that do not like the broccoli, just ignore it. 
Spaghetti with Porcini Mushrooms

1 small packet of dried porcini mushrooms (about 1 cup dried)
1 onion chopped
3 Tbsp extra virgin olive oil
3 cloves garlic minced
1 cup tomato sauce
salt and pepper to taste
small amount of dried red pepper flakes
1 jalapeno seeded and sliced thin (optional)
few leaves of fresh basil
1 cup liquid from porcini mushrooms
1 cup porcini mushrooms that have been boiled and soaked in water
1 lb. dry spaghetti (save 1 cup water, from the cooked pasta)

In a medium saucepan, add water about halfway, empty the dried mushrooms and let it come to a boil. Do not boil any longer, just let the mushroom soak in the liquid, let it cool down, and save in a medium mason jar with a lid, with liquid. You should end up with about 2 cups of mushroom. Do not discard the liquid, you will need it in the cooking process.
In the meantime boil the water for the spaghetti, and cook according to directions. In a large skillet, saute onions, jalapeno and garlic till onions are nicely wilted, add the mushrooms, and the liquid from the mushrooms, the salt and pepper, and the basil. Let the liquid cook down for a few minutes, until you see it thickening. Add the tomato sauce, and let it cook until the sauce thickens You can add steamed broccoli florets to fold into the sauce at this time. (optional) Serves 4.
