Romaine and Potato Salad with Artichoke, Tomato, and Parsley Dressing

Just back in September, around Labor day, I was so inspired to make this healthy, and beautiful salad, not realizing that I might want to use it as an inspirational post for my food blog, so I just snapped a photo of it and that was 'that'...in retrospect, now I'm sorry that I didn't take more time getting better 'shots' of this delicious and unusual salad! As the saying goes..."it is what it is, and move on", so I'm moving on, not just with my photos, but with my blog, and mostly with my life!

Nowdays we are all so concerned about eating healthy, and 'clean'...so what really is, clean eating? In my opinion, free of chemicals, antibiotics, mostly vegetarian? I'm not too sure, but I do know it is wise to be eating fresh, raw, green vegetables, fruits, all free of pesticides, and buying organic as often, as you can. It does take a little more time and effort to create healthy, meals, but so well worth it!

This particular photo...I just decided to 'pop' it into my posts to show that even when we were asked to join a simple extended family Labor Day get together, this was my contribution! A healthy and refreshing fresh vegetable tray with simple plain Light Greek Yogurt, and sprinkled with Pink-Peppercorn Lemon-Thyme spice mix, that can be used on meats, and vegetables as well. I just love it and use it in dips as well!





Romaine and Potato Salad with Artichoke, Tomato, and Parsley Dressing

  1. 1 1/2 pound fingerling potatoes, halved
  2. 1 beefsteak tomatoes chopped
  3. 1 15.5-ounce can artichoke hearts, drained and quartered
  4. 1/3 cup chopped roasted almonds
  5. 1/4 cup chopped fresh flat-leaf parsley
  6.  1/3 cup extra virgin olive oil
  7.  2 tablespoons red wine vinegar
  8.  kosher salt and black pepper
  9. 4 romaine hearts, halved or quartered if large

DIRECTIONS

  1. Steam the potatoes in ½ inch water until tender, 12 to 15 minutes. Drain and let cool.
  2. Meanwhile, combine the tomato, artichoke hearts, almonds, parsley, oil, vinegar, and ½ teaspoon each salt and pepper in a medium bowl.
  3. Serve the dressing spooned over the lettuce and potatoes.

Fennel, Orange, and Onion Salad

With Thanksgiving around the corner, you'll want to eat lighter the few days before, to save some calories for the big Feast! One of my all-time favorite fall, and winter salad is the fennel and orange, paired with red onions, capers, on a bed of your favorite salad, or salad leaves; such as Romaine, or for that matter a simple Iceburg which I had leftover from using shredded lettuce to accompany last weeks tacos (sorry, no photo)
Fennel is so refreshing, so crispy and if you like licorice, you will love the flavor of this delightful fennel bulb, trimmed, and sliced into 1/2 inch pieces...and don't throw out the fronds; they make an excellent decoration...kind of reminds you of dill fronds, but not as strong...they are perfectly eatable, as well!
Back in 2000, when I first started my WeightWatchers diet (lost 37 lbs.) is, when I discovered this wonderful salad...with -0- points if you don't use a dressing with extra virgin olive oil...actually even with just 1 teaspoon of the oil, and a white wine vinegar dressing, I still think it's -0- points a serving...so go ahead, and enjoy this beautiful salad...and by the way, if you're wondering how to cut beautiful segments of oranges; watch this video that will show you how easy to segment an orange.

Fennel, Orange, and Onion Salad
recipe ; by Elisabeth... Weight Watchers inspired

1 small fennel bulb, trimmed, and cut into 1/2 inch pieces
1 naval orange, peeled, and sliced into segments
1 red onion, halved, and sliced thin
1 Tbsp small capers, drained and rinsed
sea salt, and freshly ground pepper to taste
1 teaspoon extra virgin olive oil
2 teaspoon white wine, or rice vinegar
small amount of leftover orange juice from the segments
Your favorite salad leaves, or bed of salad
Chopped fennel fronds

In a medium bowl, mix together the fennel, the red onion, the capers, and carefully mix in the cleaned orange segments. Toss with the oil, and vinegar. and serve on a bed of lettuce leaves, or your favorite salad mix...salt and pepper to taste, and top with fennel fronds. Serves 2-4... very tasty, mild, and refreshing.

Easy Chicken Salad Sandwich...and more

I have so much stuff to share with you...but first things, first. Yesterday, as I was commenting back on some of the comments (yes, I know I owe a lot more)...I came across a comment from Cathleen @ A Taste of...Madness
and as soon as I saw her yummy, and simple chicken salad sandwich, I immediately decided to use of the large roasted leftover chicken breast, from the whole roasted chicken, I made the other day.
For the recipe, just click on the link, but I also combined half of the portion for the mayo, with my homemade tartar sauce, or you can use a bottled purchase tartar sauce if you would like!
Roasted chicken is so versatile, but most of the time I purchase it ready made, fresh  rotisserie style, from my local supermarket. Just can't resist the aroma and the freshness of a roasted chicken.

The leftovers can be utilized so many different ways...if you haven't devoured all of it in one sitting, with family or company. In my case, I always have some leftovers which happen to be one of the large breast which I use for chicken sandwiches, but have not made chicken salad in a long time!


How could you not enjoy this delicious sandwich on your favorite sandwich bread or bun (I chose 100% whole wheat)

On the bottom slice of the bread, pile on the yummy chicken salad, and on the other
slice a generous chunk of your favorite lettuce, a slice of perfectly ripe tomato, and a thin slice of red onion (optional)...cut it half diagonally, and enjoy your sandwich with homemade ice tea...can't get better than that!


A 'sitting duck'...this isn't...but more like a 'squatting chicken'...which it is; 'hunch back', and all!...yikes! This image of a well roasted chicken, right out of the oven is NOT very attractive, but the chicken is perfectly roasted...except for the two bottom legs...which are squatted, and did not get golden brown, but it did get tender.

So why am I showing you this funny looking squatting chicken?...well, because of the cast iron roasting pan, and how clever and useful it is.


So, this is the famous cast iron skillet by Chef Emeril...I did not find this as a 'thrift find'...as a matter of fact, I ordered it online from HSN Home shopping...the cost was not cheap...close to $40. I must admit it really is an unusual, and different kind of roasting pan, but I am not crazy about it, and therefore,

I will want to get rid of it....probably donating it to Goodwill, or offering someone in the U.S. who will not mind paying for the shipping charge...that's all; just let me know if you're interested!








This was the original plan...roasted chicken, and baked sweet potatoes!

I'm gonna share my homemade tartar sauce recipe with you, to add to the chicken salad recipe!




So, I made my own delicious tartar sauce...which was not difficult, at all!



My homemade tartar sauce, which I featured in my previous post.










Here are the ingredients that I used...

















OK...so here you have all the ingredients to process for the tartar sauce...sweet pickle slices, caper berries, and and scallions.Give it a whirl or two, and you can add this to your favorite mayonnaise.











So, that's all to making a simple homemade tartar sauce...here's my personal recipe concoction!

Tartar Sauce

! 1/2 cups really good mayonnaise
2 Tbsp. sweet diced pickles for the relish
1 Tbsp. caper berries
2 Tbsp. lemon juice
1 Tbsp. chopped onion
1 teaspoon brown mustard
about 1/2 teaspoon of pickle juice

Mix all ingredients together, and use it for side dish, or for sandwich spreads, and dips!

White Beans and Tuna Salad

I hope you are all enjoying your summer months...hopefully not suffering the horrible heat wave. For us, in South Florida, we've gone through some scorching temperatures, and when the humidity level hits the 100%...don't even try to stay dry, and comfortable in your best attire...because the minute you step outside from your air conditioned comfortable homes, you will be drenched with 'sweat'...within minutes. The best thing do do is just dress comfortably in your shorts and T-shirts...although, that may not apply if you're going someplace that requires appropriate dress code!
A couple weeks ago, I happen to notice a favorite easy and light salad on a food blogger friend's blog... that I have not made for a while....and immediately wanted to make it, so the perfect opportunity was, while my family vacationed in Italy, to have a light and easy lunch, just for myself...I did even find a can of the lovely Italian tuna in olive oil, and the cannelini beans.The vegetables, I purchased at our favorite local produce market!
Isn't it nice to just grab a recipe from a fellow food blogger, who happens to inspire you with their creation?...actually, this simple salad does not really need a recipe, but if you would like to follow the recipe, I have a great suggestion for you!

On the left side of this page, is the photo of the refreshing and light salad, that my new food blogger friend, Anna shared on her blog...@ Una Semplice Passione...meaning: A Simple Passion!...doesn't the title sound romantic?
I was so happy to find this lost and forgotten simple, yet so healthy and delicious salad.

The only difference was, in addition to Anna's recipe, was that I just had to have my favorite Balsamic Vinaigrette...this time with fresh snipped dill added to the balsamic vinegar, and extra virgin olive oil! Enjoy it with a couple pieces of nice crusty bread, and you got yourself a fabulous light lunch!

FEAST your eyes...people! Who says, you can't eat healthy foods?...Just look at this other creation of mine, that I made from all the veggies and fresh fruits in season: Preparation may take a little time, but it's so well worth it
I call this creation of mine:...PAPAYA, KIWI SALSA....just happen to make it up. Nothing exotic, no spicy additions, but you can add your favorite hot chilli or jalapeno peppers to it.

All it is: Diced papaya...cucumbers, peeled, pulp scooped out cut in half, and slice into moon shape...red onion diced, kiwi peeled, cut in half and diced, and a good squeeze of fresh lime over it, sea salt, freshly ground pepper...and the most important herb...chopped cilantro! If you don't like cilantro, you can use chopped parsley, or basil; your preference. You can use dill, too, of course. You do not need olive oil, or any other oils...leave it natural, and let it marinade for about 20 minutes before serving

Sun Dried Tomatoes in Herbed Olive Oil

It's been nearly a year and a half since I made this wonderful Sun Dried Tomatoes in Herbed Olive Oil, and since I wanted to pin this to Pinterest to my "pickles and jam" board, which needed more home canned goods, I thought it would be a good idea to post it again.

I have to admit, I did make a very nice dinner a week ago, which consisted of a light salad from my dear friend Angie, @ Angie's Recipes

I actually made this salad, along with bake haddock with a gratin topping, and shared it with a friend of mine. She wanted us to celebrate Prince's life...which I thought was a little odd...but, why not? I took photos of the salad, which was really very nice, but I'm my worst "self critic" and deleted the photos! The only thing that was different; is the sweet potatoes were served on the side, and the baby spinach I purchased also was mixed with baby arugula, which was just perfect. Thank you Angie, for your amazing recipe, as for all the others, especially the most beautiful breads that Angie bakes.

Yesterday, my daughter Lora and I went to Costco to get a few items...you cannot go to Costco, for less than $100. even if you shoot for $50. minimum which some people can...but it's almost impossible! She stocked up on cookies, juices, and popcorn for the kids' parties at the end of the year parties, and I requested a box of their superb croissants which is so, so, good! You can have them for breakfast, fill them with whatever you like. For lunch, I sliced some cold rotisserie chicken breast which I purchased at my local Publix supermarket, and topped it with coleslaw that I fixed from a already shredded cabbage in a bag, and mixed my honey mustard dressing!....so, so, yummy...(not photo of that, either)

I will be sharing some of my "thrift finds" with you, from yesterday! Since Goodwill is so close to my daughter's neighborhood in West Palm Beach, every time I go to Lora's house I have to stop at Goodwill to see what they have. Apparently, Mikasa, and Studio Nova are connected, which I did not know until now. What really is nice, that companies like that, and others donate discontinued items to Goodwill which happens to be BRAND NEW...and it was my lucky day!

I found this Tupperware set...don't even know if its a set, but these smaller pieces were inside of this "classic" Tupperware from the 70's, or 80's...brand new, as you can see. They don't make this high quality any longer.
Love the beautiful brick color, and the sturdy material. You just cannot find this any more...brand new...brand new!
I kid you not..this was the actual price of this most amazing Tupperware, that for some reason was brand new!
I love this crystal vase, bowl, or container...another brand new product!
Just look...from Pier 1 Imports...check out the price! I will be using this for my sea glass, collected from my beach, or place a nice large candle, or even for a vase...so many uses!
A beautiful stainless steel mixing bowl...just the right size, I need! Love this little bowl!

A crystal bud vase...there was no price on this vase...I asked how much, and I was told that it has to be $2.99...only, because its crystal, and because it has some beautiful design...which does not show up on the photo!
My most favorite...of favorites...Baby's Breath! Cost?....$3.99, and it will last you for a week, changing the water for a nice fresh one, each day, adding a little bit of whit vinegar each time to the water, along with ice cubes!

Spicy Thai Squid (Calamari) Salad

When it comes to being sick, I'm the worst person that I know, and even; the worst "patient" that I know! My family can't stand to be around me, I'm so grouchy, irritable, and miserable! Yes, it's all true!...sad to say, but it is!
Last Sunday, the day of my previous post with my simple but yummy almond cookies, I had the craving for something spicy, light, and healthy. I could have easily ordered a take-out fresh squid salad and perhaps some Pad Thai pasta from our local Thai restaurant that has been around for years, but oh no! I had a better idea...I will make my own Squid Salad!
When you are sick with a horrible flu that came back again...to smack you over the head with even a harder blow, and give you a humongous headache, and have every bone in your body aching, even the hair strands on the top of your head aching, the last thing you want to do is to defrost a 2 pound bag of frozen baby squid, clean them and cut them...cook them, and make yourself the most delicious squid salad you ever had in your life...well, THAT'S ALL WORTH IT!
Our local seafood markets are usually closed on Sunday, but knowing that our beloved favorite Publix supermarket carries everything, and has the best seafood department as well, I decided to shop for my squid salad ingredients...everything fresh! Unfortunately they only sell squid frozen in a 2 pound package, which was fine with me. Paying $14.99 for 2 lbs of Calamari, even if frozen, is still better than ordering a squid (calamari) salad which is barely enough for 2 and paying $13.99 for it and get aggravated because they put the dressing on it in advance and the salad gets wilted by swimming in the dressing...I do love the

Thai spicy dressing...although, not overpowering my salad! I already had some fresh veggies from Whole Foods, and the organic fresh ginger, so I was all set for my project...sick-and-all, just eagerly wanting to eat fresh spicy squid salad! All I needed, was a little creativity, which I still had the "spark"...and a beautiful salad was created...I felt a whole lot better after that, and since then!

Spicy Thai Squid (Calamari) Salad
my own creation

1 lb. cleaned squid
1 bunch of loosely packed fresh mint
1 bunch of loosely packed fresh cilantro
1 bunch scallion, cleaned, and sliced diagonal into
about 2 inch pieces
2 medium carrots cleaned, and shredded
about 5 thin slices of peeled, fresh sliced  ginger
1 lime cut into quarters
1 bag of ready cut, pre-washed mixed salad

For the Dressing:

1/4 cup Asian Fish Sauce
1/4 cup Thai Style Chili Sauce
juice of 1 lime
2 teaspoons rice vinegar
1 teaspoon crushed red pepper

If you can't find 1 lb. squid, you will have to get the 2 lb. frozen package, and cut open, empty, and will have to defrost the entire thing in cold running water (don't worry, you will be using up the entire thing)










A bit of a job, but so well worth it. After squid has defrosted, clean the entire inside body, by pulling out the little plastic part that is inside, and dispose of it. Also, save the tentacles, try not to rip them...leaving it intact.
Slice the squid across, into little rings,drop them all in a medium pot of boiling water, bring to boil...do not boil for more than about 1 or 2 minutes, or it will get rubbery!

Strain in a colander with cold water, and clean the little white particles from them. Set aside, and continue with the salad.


Very important: you have to set up your "mi sen plaz"...all your ingredients in a row, just like this. Your grated carrots, your chopped cilantro, the sliced scallions, I added with some fresh chopped mint, your dressing, combining them with the fresh ginger slices, and of course your cut limes.







This is the Thai Style Chili Sauce I used, along with the Thai Seasoned Fish Sauce.












At this point, you can just enjoy your salad without the lettuce, just with the mentioned ingredients.

You can individually set up your own salad by using the ingredients, including the dressing, and stretch it even further with the healthy delicious salad.










By adding the lettuce a little more dressing to toss, you have a full meal...so satisfying, healthy and delicious.

BTW- I spent about $36.00 which seemed expensive, but not, when this generously served 4. The leftovers were separately saved for appetizer to share with family, the next day! I still have plenty of vegetables leftover, and the sauces as well!
Incidentally, I have lost an additional pound...so now, I'm down 15 lbs. total since I started back in the first week of January of this year!
