#Palm Beach Love

I must admit, this is not a 'wordless Wednesday'...or a 'silent Sunday'...I tried to upload my latest photos of my amazing Avocado Bruschetta; but my upload is just not happening...something went wrong, so I'm sharing this beautiful photos of my evening walks on our beautiful location...on the island of Palm Beach...where I reside!

A quiet evening, just a few cars passing through!

I've been walking all week this week for 2 miles...and I must admit it really is quite enjoyable with the weather we've been having here...totally spring temperatures, sunshine just about every day; and instead of walking on the beach, I decided to walk on the road that is called South Ocean Boulevard...the most famous road in Palm Beach!
This is the famous Palm Beach golf course...you can see the reflection of the sunset...beautiful crisp fresh air, with the most perfect tropical breeze!
How can you not enjoy the marvel of 'mother nature' when its right in front of you?...this is the golf  course, just when the sun was setting, and I could not resist taking the photos. We all need to 'count our blessings'...there is beauty all around us; we just have to capture the moment!

A one hour walk in nature, refreshes the soul, and spirit; it gives you a new 'outlook on life'...knowing that it is helpful for your health, and makes you feel all new and refreshed. It sure is the most inexpensive exercise  in your life, to make a difference!
There is so much beauty all around us...we just miss it when we are  so occupied in our lives, and miss all the God-given nature that should put joy in our lives...we miss out so much in life that does not cost anything; just giving thanks to our Creator!
Every evening, the sky is different...giving off the most beautiful radiant, magical lights that you can imagine! This is jus 1 mile perimeter of my early evening walk; just about at sunset!
So, the evening ends...my walk is ended for this day...a new day begins, and I'm feeling blessed to have all my friends to share moments like this; wish you were here to take this lovely walk with me! Hugs,

Peach Galette

When you attempt to make a 'free form' galette, it is so much easier to make a galette, and tastier than the store bought frozen pie crust...I really, highly recommend home made. Just follow the recipe for a double crust pie crust for your galette...here, @ The Clever Carrot...such an adorable name for a food blog; but I will not be commenting  (learned my lesson from previous times, when I promoted a blog)

As for the filling, I got the inspiration from here...@ Kitchen Sisters; but do not follow the instructions for 8 individual galettes, although the dough recipe is beautiful, and correct, but there is no way possible to make more than two galettes (they possibly meant 8 servings) The double crust recipe yields 1 large galette, or two smaller ones.

A perfect summer dessert recipe, and for the fall season as well, as long as you can get fresh peaches. We have an abundance of beautiful peaches, right from Georgia; the state that is famous for the best...ever peaches, just like our Florida is famous for the best...ever, oranges.

As you can see, when I make some kind of dessert, it doesn't last long in my little beach apartment, and so far this week, my children, and grandchildren have been here almost every day enjoying the beach. School is starting soon, and they got the best week to enjoy the last week of sunshine, which we didn't have a lot of in the last month! As soon as the galette got cool enough to cut slices, Gabby just grabbed a fork and ate half of the yummy galette, all by herself. It was just too 'awesome' to let this moment pass, so I grabbed my camera...she just cautioned me not to take a picture of her eating, right there, while it was still on top of the stove cooling!




I used 2 ripe, but firm peaches to fill my galettes and let me tell you...the crust was so full, I barely was able to fold the dough over...but the dough is so perfect each and every time, and I mix it in my large food processor, just using 'pulse' and not mixing rapidly. The dough will actually form into a ball, and then you're ready to wrap it in plastic and press down to shape it into a disk...don't forget to refrigerate for at least one hour.


This is what a chilled disk of dough looks like, all nicely wrapped in plastic wrap, and ready to roll out.









Just lift the plastic wrap off and place it over the top of the dough to roll out, right on the parchment lined baking pan. (make sure the dough is still cold, right after you took it out of the fridge)...this will ensure that you will get a great flaky crust.

A gorgeous Sunday on the beach...school will be starting, and I'm sure all kids got to take advantage of the last, or almost last Sunday, before school, doing some fun stuff!

Ziti with fresh Tomatoes, and Zucchini

I still have some photos of my $ 1.00 thrift find bag of mixed vegetable, that I did't get to post about in the last few months. Now, that I'm back and forth to my place from my son's house, I rarely get a chance to do much other than taking care of the pets, (mine, and his)...not much chance for cooking or baking.
Good thing I went to check on my place because I came home to a surprise...a flood of water gushing from my A/C unit ceiling all soaked. Good thing I wasn't sleeping there because I turned the A/C and called the service first thing in the morning.
Really there's no set recipe for this wonderful sauteed mixed zucchini, squash, onions, and blanched chopped fresh tomatoes, served over a pasta of your choice, I used ziti pasta.This is one of my favorite vegetarian pasta dish!
I could easily have at least 3 or 4 vegetarian meals a week...eating something so healthy and delicious like these veggies! When we were kids, growing up in Cleveland in the late fifties and mid sixties, I remember my mom only made a meat dish about once or twice a week on the weekend...everything was prepared in season, and canned for the winter. Homemade breads, rolls, danishes were not an option, it was made regularly, just as homemade noodles. As a nation, we have consumed way too much meats over the decades...time to slow it down a bit and eat what mother nature produces for us!
Last night I did  not feel like doing much, just cleaned out my son's refrigerator, and defrosted one of my pizza crust that I make ahead of time to freeze, thaw out and bake...I  topped it off with caramelized onions, fresh tomato sauce fresh basil leaves and crispy fried and crumbled pancetta...thick sliced chopped bacon is OK to use in place of pancetta. Just because you're spending time alone, does not mean that you cannot treat yourself to something homemade and delicious. If you don't want to make your own dough, you can get fresh bread dough in the bakery section of your supermarket. It's that easy!
Here's the source I used for my pizza dough, since I'm not posting from my home, I didn't have my personal pizza recipe with me. This is an excellent recipe...Epicurious always has the BEST of all the recipes!
Did you ever see such gorgeous clouds in your life?...only in South Florida you get to see the sun going through such a transition...the sun, perching through the clouds in late afternoon that looks like a huge marshmallow, the palm trees swaying in the gentle breeze. (a view from my beach condo apt.) ...as I was leaving to go back across the bridge, just a matter of a 10 min. drive passing through A1A route taking a slow drive, and almost wanting to stop the car to take a few pictures of Rod Stewart's well hidden mansion...but it's just a dream, that I would ever even enter in one of these mansions!
