Cranberry Muffins

Since we're on the 'cranberry' page...I just wanted to share with you another delicious cranberry recipe! Who can resist fresh Cranberry Muffins, straight from the oven, fresh and homemade. So easy to prepare so moist, and delicious! Still using up my fresh frozen cranberries which I can no longer find in any supermarkets, so you have had to 'squirrel' away your very own! A few days ago, I made stuffing with fresh cranberries pre-cooked and folded in to the stuffing. Looked a little strange reddish in color, but oh, so good with roasted chicken!
These muffins were so incredibly good, I just wish I had saved more fresh cranberries in my freezer. There's so many ways to use up fresh cranberries. I will either look for frozen ones at Whole Foods or will have to wait till November again! For some reason,

I noticed in some of the Hungarian food bloggers' posts about muffins verses cupcakes...so if you make small muffins and put frosting on it...does that become a cupcake?...or is it the same thing...muffins with frosting?...I have never heard of such a thing! It's either muffins, or cupcakes! Seems to me that cupcakes get the frosting on them, and muffins may have a yummy glaze...but never, ever frosting! ...and anyway, cupcakes are more moist and delicate, and muffins seem to be more dense. I love the large muffins, but the regular basic size work just fine!


Today, was such a beautiful, pleasant, breezy, and sunny day, here in S. Florida, and especially on the beach, now that we have our beach back after practically losing the entire beach...due to heavy rains, and winds for the last few months, the beach erosion was terrible. We got tons, and tons. of sand being brought in, and have our beach back again to enjoy. Just wondering what will happen in the next 20 or 30 years from now...are we going to be washed away by the ocean?...seems like the beach erosion is such a problem here...wonder if 'global warming has anything to do with it! I would upload some photos for you re: the beach erosion problem, but that would be another long story that I would not want to get involved with on my 'food blog' at this time... (not that I haven't done that in the past.)

Cranberry Muffins
recipe; courtesy of Ocean Spray


1 1/4 cups sugar
1/4 cup butter, softened
2 eggs
1/2 cup milk
2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup chopped walnuts (optional)
2 cups Ocean Spray® Fresh or Frozen Cranberries, coarsely chopped

Preheat oven to 350ºF.

Mix sugar and butter together in a medium mixing bowl until completely blended. Add eggs one at a time, beating after each addition. Stir together flour, baking powder and salt in a separate medium mixing bowl. Add this alternately with the milk to the butter mixture. Stir in nuts and cranberries. Spoon into 12 paper-lined muffin cups, filling 3/4 full with batter.

Bake 25-30 minutes or until golden brown. Makes 12 muffins.



I  haven't promoted any of my other recipes in a long time, but I'm really fond of my Blueberry Muffins, especially with the added sour cream to it...do try these, and forget about the calories or the added fat from the sour cream. Just enjoy, and have a wonderful week! Hugs, Elisabeth

Cranberry Pancakes

Such a beautiful Sunday morning here, in S. Florida. Windy, mostly sunny, and 74 degrees F. which actually feels like in the low 60's...always about ten or more degrees cooler on the beach! A perfect time to make pancakes from scratch, especially when you still have a couple bags of fresh cranberries that you put in your freezer from last December...better use them up, although you can keep them in the freezer for at least 1 year! I always use my 'tried and true' Mark Bittman's Basic Pancake recipe, but this time I followed the Better Homes and Gardens, which has the addition of fresh orange juice as well. A good way to start your morning, on a lazy Sunday!
I have absolutely no clue, how many points these yummy pancakes are for Weight Watchers, but I quit temporarily again...for the third time, not easy to keep up with the points. You have to be really diligent to stay with the program!
Close up, you can see the beautiful ruby red chopped fresh cranberries, nestled in the fluffy light pancakes. This is a rare treat, which is the best way to enjoy at home, and forget about Pancake House, which we only have a couple left over now, in our area. Even if you would go out for breakfast or brunch, you will not find this anywhere...so stay home, and follow this easy recipe. You can also use frozen cranberries, but fresh cranberries are totally out of season for now!
Now, are you convinced how much tastier it is to make your own homemade pancakes from scratch, and adding cranberries, blueberries, chocolate chips that my grandchildren love...but one of my all-time favorite is perfectly ripe, sliced bananas dropped right on the top of the batter, as you're making it...yumm...enjoy!

Cranberry Pancakes


  1. In a small mixing bowl combine cranberries, sugar, and orange peel; set aside. In a large mixing bowl combine flour, baking powder, baking soda, and salt. In another mixing bowl combine egg, buttermilk, orange juice, and margarine or butter. Add to flour mixture. Stir just until combined but still slightly lumpy. Fold in cranberry mixture.
  2. Heat a lightly greased griddle or heavy skillet over medium heat until a few drops of water dance across the surface. For each pancake, pour about 1/4 cup batter onto the hot griddle.
  3. Cook over medium heat until pancakes are golden brown, turning to cook second sides when pancake surfaces are bubbly and edges are slightly dry (about 1 to 2 minutes per side). Serve immediately or keep warm in a loosely covered ovenproof dish in a 300 degree F oven. If desired, serve with Maple Syrup. Makes 16

Cranberry Upside-Down Cake

Thanksgiving came...and went this year; with less family members, and less friends. Each year it is different than from the year before. Isn't it true, that during the major holidays we lose family and friends to 'death' or they just move away...move on...never to be heard from, again...or for a long time...no connection?... it does make one sad, but 'life does go on' and we have to make the best of it!
We have so much to be thankful for, and count our blessings even if its for our every day lives that we interact with other family members and friends that we see often, or once in-a-while! As far as some of our neighbors...well, in my situation where I live; that is very awkward. I hear the srong gusty winds these days, and the 'roaring ocean'. It is always
 10 or more degrees cooler here, so this week one day, I woke up to what seemed to be freezing temperature, when others further up north, or in other parts of Europe had way below freezing and snow storms...no doubt!

Families in neighborhood communities; they treat each other with respect, and care about one-another! Even with the elderly folks that live alone are invited to holiday gatherings, so they don't have to feel left out. For example; my direct next door neighbor...an elderly retired professor, does not speak to anyone...just keeps to himself. He eats every meal...out! I do worry about him, especially during holidays because he does not even have one friend...always alone! I offered several times to help in any way, but I get rejection...so sad!

...let's get on with the rest of the Thanksgiving 'feast'...and recipe for the Cranberry Upside-Down Cake!

For the Cranberry Upside-Down Cake, I used the recipe from my sweet daughter Lora's blog @

note: if you don't have cake flour, it is important to substitute correctly for all-purpose flour but you have to make adjustment to it!
For the 1 1/4 cup of cake flour used in the recipe: use 1 1/4 cup all-purpose flour: remove 2 Tbsp. of flour, before sifting, and then replace it with 2 Tbsp. corn starch and add it to the flour, then sift together.
The basic rule; to substitute all purpose flour for cake flour;
Remove 2 Tbsp. flour per each cup of flour used! (you can omit the cornstarch replacement, but it does make it lighter)
I use a square glass Pyrex pan, sprayed the pan with Pam baking spray, cut out parchment paper to fit the inside of the pan, and sprayed that, as well.
The baking time; 350 degrees F. for 45 min. was absolutely correct temperature.
I used a small baking pan to place the cake pan on it, so when it came out of the oven, I could just flip the cake over on it, or your can flip it over directly on a platter. It was a lot easier this way, and peeling of the parchment paper was very easy. After cooling it down for 10 minutes, I was able to slice it and place the slice on the serving platter.
So, there you have it! The best moist cake...ever! I must confess, I like to trim the edges of cake, and devour it, myself...selfish? you bet! ...not feeling guilty, at all...I do it every time, especially when I make brownies, all edges are trimmed off and if you happen to be close by, I will share the fun and yummy pieces with you, but other than that I will offer the entire cake, and not save any pieces for myself! (my rules for me.)
We share Thanksgiving feast with 20 people w/kids included...everyone pitched in. 2 huge turkeys, and lots, and lots of side dishes...and desserts! Just a few samples of the 'feast'...we all gained at least 5 lbs. each; at least!

Hanukkah candles were lit by Dr. Eric's son, River...a 'true inter-faith' group of people, with different heritage, nationality; Italian, Sicilian, Jewish, Hungarian, Polish, Irish and English, Colombian, and Mexican...( a united nation of different backgrounds)...and various religions...Jewish, Catholic, Christian, and Southern Baptist.

Nonno Sal...with his prayer and blessings (he wanted to have this special prayer in case he will not be here with us next year)...sigh!
Here are some of group sitting at the dinner table...Dr. Eric on the front left, (looks like I was the only camera person taking some photos)...others took I-Phone photos for their 'Instagram' ...OK, so I'm old fashioned!

The big kids (tweens, and teens)...enjoyed their meal outside on the back patio!
...a little 'nippy' temperature, but the fire pit kept them cozy and warm!


 I am such a proud grandmother of 4...three, which are not shown. They are my greatest blessings and joy, along with their parents...my two children and their spouses! Without family to enjoy...even if you are single or a couple without children or grandchildren...you have to embrace 'life'...family members, and even if you just have one friend...do cherish that friendship!
I saved the 'best for last' our vet, and dear friend... with Lady...an abandoned beautiful Boxer, that he saved, after he was called to check this poor doggie living under a nearby highway bridge...surviving for over one year...full of scars, malnourished, and she almost had to be put down. He was able to befriend her...took her home, nourished her back to health after a couple serious surgeries...(having to deal with putting his own beloved old and sick Boxer; Charlie down)...that's what I call 'fate'...not only did the beautiful Boxer became a family member, but she was given the name 'Lady'...because she was so sweet, appreciative, with such nice 'ladylike' manners. She is with the family for one year now, and she is truly loved and cared for!
Dr. Eric does volunteer work once a week for people that cannot afford 'pet care'!
Isn't she absolutely adorable?...Lady sneaked up to me from under the dinner table, as I was sitting there, and gently rested her cute little head on my lap...looking at me with those sweet adorable and loving eyes! That's what I call a LOVE STORY! My heart simply melted, and it brought tears to my eyes!

So, I think I updated a lot this time...hope you all had a wonderful Thanksgiving...now it's time to go on a diet; not really a diet...diet...just cut down on extra helpings, and the desserts, until Christmas! xoxo







Cookbook Sundays-Cranberry Oatmeal Walnut Cake


There's been so much going on getting ready for Thanksgiving, and this year it's going to be with two other families and their children. Glad it won't take place in my "shoe box" size beach condo. I actually did get a head start on Cookbook Sundays, thanks to my friend Brenda, from
 Brenda's Canadian Kitchen...who started it. I will link this back to her blog.

This cake is so perfect for Thanksgiving morning with coffee or tea, and it really is from a coffee cookbook, called Coffee Cakes, by Lou Seibert Pappas. it's a 2006 edition, and it's a fairly new book for me that I found about a month ago, at Goodwill for $.79. Originally listed for $18.95. Now, that's what I call a bargain. I may want to start a "giveaway"...because, really, I'm starting to feel guilty for getting all these nice books for "peanuts"...and the rule is at Goodwill, any paper back regardless of the size, is 79 cents, so therefore, I have quite a lot collected, and I've been donating them back, along with a lot of my own that I don't need. I think it would be nice to pass them along to other bloggers that can use them. I will mention about this soon.

Cranberry Oatmeal Walnut Cake
adapted from Coffee Cakes by Lou Seibert Pappas

1 1/2 cup quick cooking or old fashioned
rolled oats
2 large eggs
1/2 cup firmly packed light brown sugar
1/2 cup canola oil
1 1/2 cups buttermilk, or low-fat plain yogurt
1/2 cup dark molasses
1 teaspoon vanilla extract
1 cup unbleached all purpose flour
1 cup whole -wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
2 cups fresh or frozen cranberries
1/2 cup (2 ounces chopped walnuts
pecans, or toasted and skinned hazelnuts

Preheat oven to 350 degrees. Butter and flour a 9x13 inch baking pan
(I used a bundt pan)
Spread the oats in a rimmed baking sheet and bake for 8 to 10 minutes or until
lightly toasted. Let cool.

In a large bowl, beat the eggs, brown sugar, and oil together until blended and
stir in the buttermilk or yogurt, molasses, and vanilla.
In a medium bowl, combine flours, toasted oats, baking soda, baking powder,
salt, and 1 teaspoon of the cinnamon. Stir to blend. Add the dry ingredients to
the buttermilk mixture and beat for about 1 minute, or until smooth. Stir in the
cranberries. Spread evenly in the prepared pan. Toss the nuts, and remaining 1
teaspoon cinnamon together, and sprinkle evenly on the top.

Bake for 25 to 30 minutes, or until the cake is golden brown and a cake tester
inserted in the center comes out clean. Let cool in the pan on a wire rack.
Cut into squares, or strips.
Serves 12.
Note: I used a bundt pan, and used the 2 teaspoon cinnamon, along with the chopped
walnuts in the batter. Also I used 2 cups of unbleached all purpose flour. (did not have
whole-wheat flour on hand. Also, I used a simple sugar glaze, mad with one cup of powdered sugar, and about 1 teaspoon water, mixed to a medium thick glaze, and drizzled the cooled cake with a large spoon.
