Cream of Broccoli Soup...for Wordless Wednesday

Hello everyone, Welcome to Wordless Wednesday. Such a windy day here in S. Florida, with tropical storms brewing in the Atlantic, and we're getting all the strong winds, and storm, later! I made this comfy, homey, delicious Cream of Broccoli Soup while I was at my daughter Lora's for the weekend...totally from 'scratch'...using up her leftover steamed broccoli, and my chicken broth from a few days before...very easy to make...

Scrambled Eggs in Pita Pocket

Looks like my 'Silent Sunday' could extend into 'Silent Wednesday'...but that's not what's going to happen, because I have a lot to say, and I can't keep silent!
On my post from recent previous; I mentioned about 'throwing in the towel'..just not ready to do that! There's so  much to enjoy with blogging...especially with 'likewise foodie friends'...I enjoy so much from visiting all the blogs, and staying in touch with 'friends'...and I don't mean 'readers'...as some bloggers refer to other bloggers! ...to me, that is a little 'letdown'. As far as I'm concerned, I, and YOU, have lots, and lots of the so called 'readers' that do not comment, they just READ, and continue on to other blogs to read more!
 
I was cleaning out my fridge the other day, and found leftover fresh spinach, bell peppers, and always have fresh ripe tomatoes on hand, since we have tomatoes all year round in S. Florida. I have not taken any photos of my foods lately, since my Red Clam Sauce, so at the last minute, I took some pictures of my simple Scrambled Eggs. I always have wonderful pita breads in my freezer (not homemade)...but one of these days!

I had to fast since last night because I had to have my 'blood tests' for my routine checkup this morning, and I stopped at the nearest breakfast place in my 'old' neighborhood...and what a 'letdown'...just for a simple egg sandwich...sigh!...I prefer my own scrambled egg sandwich, and I'm sticking to my promise next time...'MAKE YOUR OWN!'

Scrambled Eggs in Pita Pocket
my own concoction; by, Elisabeth

2 large eggs (scrambled in a small bowl)
1 medium onion chopped (I used red onion)
1 bell pepper diced, or pepper of your choice
(I used yellow bell pepper)
A handful of fresh baby spinach
1 cup (8 oz) grated cheddar cheese or cheese of your choice
2 Tbsp. extra virgin olive oil

In a non-stick skillet, saute the onion, pepper, and spinach, till onion is wilted...add the eggs, that was pre-scrambled.

Just let the eggs settle carefully, add the salt and pepper.









Carefully separate the eggs in the middle, add the grated cheese, and just let it cook for a few minutes...do not stir, or disturb the egg mixture any longer...done!...ready to serve!...that simple:)

Jamaican Jerk Chicken Legs

TGIF-where has the week gone by?...pretty soon, the kids will be going back to school at the end of this month, and the end of summer vacation for most people, as well! Living in South Florida most of my life, and my children, 'native Floridians'...grandchildren not even knowing what cold winter, and snow is all about...glad that we are here in the 'land of sunshine'...not so much of it for the last couple months. Although we get a 'sneak preview' of it just about every single day, even if its for an hour, S. Florida is still the SUNSHINE STATE!
Often, I have a dilemma about what to make for 1 person (myself) for dinner, when I'm not at my daughter's which is just about every day. We cook together, or I cook (she does most of the baking)...but when I eat alone, about twice a week, I just don't want to heat up my little kitchen and waste electricity, so I use my George Foreman grill, or my toaster over to make a small portion, for (2) ...yes, 2...either for one, and have another portion fore leftover lunch, or invite a friend!
Have you ever tried cooking a gourmet meal in the toaster oven?...well, you can, you know, it's as easy, if not easier than in your big conventional oven! I've been doing this for a long time now, and my best friend suggested that I write a 'toaster oven cookbook'...which of course, I haven't but then, they already have them and she gave me a cute little toaster oven cookbook!

You have to have at least a large enough tray for the toaster oven to be able to fit at least 6 pieces of chicken comfortably, or for roasting a few pieces of vegetable, fish, or even baking cookies...seriously!

I'm gonna share 3 different recipes...one for the Jerk seasoning, 1 for the Basmati rice which is a cilantro-lime scented, and a fabulous Cuban , authentic Havana based black beans, which you can mix with the rice, or serve it separately! So, are you ready?...because I will guide step-by-step for this semi-spicy delicious Caribbean dish, that will take you away to the island of Jamaica...or the Havana black beans to the 'forbidden island'...which I will not go into a long explanation but just that; it was referred to as the 'jewel of the Caribbean'...the largest of the Caribbean islands...frozen in time, from the 1950's!... see link-Caribbean, Havana!
We have a huge population of Cubans here, in S. Florida, as we also have a large population of Jamaicans, and Haitians. We have so much 'island influences' that you do not have to venture far to authentic cuisines of these colorful, tasty, spicy, Caribbean influences of their culture!

Vietnamese Chicken Noodle Soup

This is the last of my "cure for all" healthy, spicy, and super colorful dishes for my long lasting illness. Today is a new day, and the start of Spring...although in South Florida we have exceptional and gorgeous weather all year round. As I was browsing through the March issue of Family Circle, when I spotted this soup, knowing that I have all the ingredients, and I do love spicy, I said "this one is for me!"
If you love fresh herbs, this is a "must" soup for you to try! Fresh mint, and fresh cilantro, not only adorn the beauty of the amazing soup, but the refreshing and spicy flavor will blow you away!

Vietnamese Chicken Noodle Soup
from Family Circle magazine; March 2012 

2 cans (14 1/2 ounces each) reduced sodium chicken broth
1 1/2 pounds boneless, skinless chicken thighs, cut into bite-size pieces
1 cup shredded carrots, (I used matchstick cut sizes)
2 Tablespoons chopped fresh ginger
2 scallions, thinly sliced
1 red hot pepper seeded, and thinly sliced (optional)
1 Tablespoon reduced-sodium soy sauce
1 Tablespoon lime juice
2 teaspoons Asian hot sauce (such as Sriracha)
6 ounces rice noodles (such as Thai Kitchen Stir-Fry Rice Noodles)
1/4 cup mint leaves
1/4 cup cilantro leaves

In a large pot, bring chicken broth and 1 1/2 cups water to a boil. Add chicken, and simmer for 3 minutes. Add carrots, snow peas, and ginger; simmer 3 minutes.

Stir in scallion, soy sauce, lime juice and hot sauce.

Meanwhile, boil rice noodles for 6 minutes. Drain.

Divide cooked noodles among four bowls. Spoon an equal amount of soup into each bowl of noodles. Scatter mint and cilantro over each dish and serve immediately.
