I am so honored to guest post for my dear friend Swathi, @Zesty South Indian Kitchen... who at this time, needs all the rest she can get. Glad to know she also has a few other blogger friends that will guest post for her, while she is recuperating. She needs a lot of "mommy and me" time at this very fragile first few months!

I am so thrilled to celebrate the birth of Swathi's little prince...Nikhil! A beautiful, and healthy baby boy! Such a perfect addition to the happy family, and a pride and joy to his big sister, Nidhi.

This dish is one of may favorite dishes to have for lunch, and for the Pico de Gallo, it's zero points so, healthy, spicy, colorful and delicious! I will be back to add more good news, but in the meantime...here's an easy way to cut the veggies perfect!

HAPPY HALLOWEEN!

For the last three years, we have enjoyed a fabulous Halloween celebration, usually the last weekend, before the actual Halloween evening. It is held downtown West Palm Beach at the Flagler Montessori pre-school, that has such wonderful staff, and the little children just love going there. My little 5 yr. old granddaughter just graduated from their pre-kindergarten this summer, and still loves going back there for fun events.

Also, it's so much safer to attend a party such as this, and will cost you less money! So, for tomorrow on Halloween, the kids will be going "trick-or-treating" in the vicinity of their neighborhood escorted by adults, of course, and making sure to have all their candy examined when they bring it home!
This particular cake was a donation from my daughter's dear friend, Ilaria, who just recently started her baking treats, such as this beautiful Italian Ricotta Cake, decorated with cute little fondant ghosts! Her little daughter, Giorgia attends the pre-school, and she named her business after her: GIORGIA'S TREATS. She is a talented true Italian baker, who has been making the United States her permanent home, for the last 10 years, or so!
More treats, from a local bakery!
They have what they call a "cake walk"...which is held outside, but unfortunately we got rained out by this ongoing remnant of Hurricane Rina, which is not unusual to get in the last week of October! All we got from the hurricane is several days of heavy rain and wind, strong, and lots of it! I feel for you folks up north who are having early snow surprising you at this time of the year. No fun, while your lawns are still green, and your lovely trees with the fall color leaves, to all of a sudden go into "winter wonderland" when you are still enjoying the beauty of fall! Mother Nature sure is temperamental at certain times of the year!

Haitian Cole Slaw...and a Giveaway!

I've been on the cabbage kick all last week. I bought 2 heads of organic cabbage at Whole Foods, and also, I bought Daikon radish, the long white Japanese radish, Scotch Bonnet peppers, and really "kicked up" the spices in my Haitian Cole Slaw...you probably wonder what is a Haitian Cole Slaw?...and what makes it Haitian. I do have an answer for that. I became acquainted with it several years ago, working in the country club with Haitian cooks that make this fabulous slaw. Usually it's served with griot, which is a crispy fried pork dish, and a side of lettuce wedge with French dressing, and the cole slaw...and oh, my! spicy, tangy, and slightly sweet. Absolutely zero fat, healthy, refreshing, and delicious!

Plum Dumplings-Szilvás Gombóc...and a Guest Post


I am so thrilled and honored that Roxana of A Little Bit of Everything asked me to guest post for her, while she is vacationing in her homeland, Romania. She has asked some of us who was born outside of the United States to guest post for her, I almost felt as if I'm not going to be able to fulfill this request, because although I was born in Hungary, I did not grow up there. I was 8 years old when we came to the United States. My maternal grandmother, and mother was also born in Romania, what was considered part of Hungary up until after WW1. They were originally from Transylvania...yes, the actual home of Count Dracula, from the 15th century, whose castle still is in existence, as a big tourist attraction. Transylvania/Romania is still in very much existence, and I still have most of my relatives living there, whom I have never met, also, in Hungary as well!

I feel as if I know Roxana in person, because of the background connection.We seem to have had this special bond instantly, since we first met through our blogs.
Thank you Roxana, for your invitation to guest post for you, and I hope I don't disappoint you with my traditional Hungarian dish, that I actually learned how to make when I was a young "mommie"...from my Hungarian aunt, right here in Florida, which was over 30 years ago!

Chunky Tomato Sauce... and a Book Giveaway!

As I mentioned in my last post, that my son Joe has finally published his first novel, self-published through Amazon.com I'm proud to offer a copy of his book, as a giveaway. Yesterday, he stopped over for a last minute lunch, and wanted to check out the waves on the beach, since we've been having such windy and rainy days in the last few days. He is also an avid surfer, since the age of eleven, and has won several awards, over the years. By profession he is an "Equity Trader" and these last couple years he's been working out of home, so he could finish his novel. Also, he decided to go back to college to get his masters degree in creative writing, after 14 years, graduating from college. He is a fabulous artist, as well, doing totally different designs...as for instance, surf board art designs, and creative designs on canvas. He also designed his book cover. Now, the latest project is his "political cartoon, daily art" which I myself don't quite understand, which has a lot to do with the "stock market."

Anyway, the emphasis now, is on my quick pasta sauce, served with fettucine that I made within 30 minutes, tops.
I always have fresh, dry, and frozen herbs on hand, for which is a "must" in my kitchen. Canned, or fresh tomatoes, is always a "must"...of course, onions, and garlic, and olives...so there you have it, a vegetarian meal to enjoy, even if you are not vegetarian. Joe and his wife Cara have decided to take that route now after and on-again, off-again route, for the last few years. Actually, they do eat seafood, and dairy...so they are "pescatarians?"...is there such a thing?

In a large skillet, all you do is saute, one sliced onion, 3 cloves of garlic sliced, 2 stalks of celery sliced, in 2 Tbsp.vegetable oil till  soft, and slightly golden. Add a 15 oz. can of diced tomatoes, 1 teaspoon tomato paste, mixed in 1/2 cup of water, 1 Tbsp.extra virgin olive oil... salt and pepper, dry, or fresh basil, and let the tomato sauce cook for about 20 minutes, on medium heat, open. Stir from time to time, and after the 20 minutes, add pitted olives (I used Nicoise pitted olives) you can slice the olives, or cut them in half. (I left mine whole)...Serve over pasta of your choice, and add chopped fresh Italian parsley, or fresh basil for flavor and for a nice appearance. You can drizzle more extra virgin olive oil on the top, and serve.

note: I sauteed the vegetable in vegetable oil, because it absorbs the flavor of the vegetables better, since it's cooked on medium-high, and it prevents burning of the oil. Adding the extra virgin olive oil, when you add the tomatoes, gives it a nicer and more flavorful texture. Also, instead of adding the tomato paste directly into the 1/2 cup of water will give it an even texture, and prevents lumpy and too thick of a  texture.

Red Gold Spicy Tomato Sauce...and a Winner!

Today is the first official day of spring! Although, here in South Florida, we've been experiencing our spring since about January, and we'll be going into full blown summer, by May...go figure! This it the tropical climate that we are accustomed to. Such a wonderful weekend we had, how about that bright and beautiful full moon that only comes around every 18 to 20 years? (witnessed it and took photos)...Sunday was such a relaxing day, did not have barely anything in my fridge to cook for lunch, for my family in my little beach condo, but I always have canned tomatoes on hand, and pasta...the little ones love the mezze penne, and the spaghetti. I also found some Italian sausage in the freezer which I defrosted, so lunch did not take long. A little bit too spicy, but my little grandson eats everything, and did not mind the spicy sauce. Hope you all had a wonderful weekend and got to witness the gorgeous moon that was 14% larger, and 30% brighter than your average full moon...that's what I call "romance in the air...or is it "Love is in the Air?"...remember that song from the eighties?

Happy St. Patrick's Day... and a Giveaway!


How could you not want to celebrate St. Patricks' Day? It's such a happy occasion that we all can share...no matter what nationality, color, or religion you are, especially here, in the United States, in every state. It is one ethnic holiday, that everyone can agree on. So, let's honor the Irish, their celebration, and join in the fun.

For today, I made a special brunch, just for myself...I owe it to myself to eat healthy, and enjoy this beautiful day, and be grateful for the "little things" in life! I found these adorable cocktail, hand painted glasses for $.99 each, at my local Goodwill store, and I thought it would be cute to use it for the special day, with a light dessert, of vanilla pudding...no, not exactly home made, but not the instant kind...you actually have to cook this; I doctored it up a little, using about a 1/2 cup of heavy cream, to the 2 1/2 cup milk, and added 1 teaspoon vanilla extract at the end. I also melted down some semi-sweet chocolate chips, with about 1Tablespoon heavy cream, to drizzle on some of the most amazing fresh sliced kiwis, and layered some of the melted down chocolate, to layer on some of the others. So, I had a total of 3 glasses of this yummy dessert (the fourth glass broke: sadly, when I brought it home, and dropped the bag)

My family loved this ( I did not have any, just "test tasted"..he, he, really true) This dessert is not only light, but pretty, and really satisfies the "sweet tooth" and if you put it in a pretty glass dish, they will think you slaved away on this...Not!  So, get your best green shirt out, perhaps a "green glitter top hat"...join your local parade, go out, and have some fun!

Wearing Green Around the World

Today, St. Patrick's Day is celebrated by people of all backgrounds in the United States, Canada and Australia. Although North America is home to the largest productions, St. Patrick's Day has been celebrated in other locations far from Ireland, including Japan, Singapore and Russia.
In modern-day Ireland, St. Patrick's Day has traditionally been a religious occasion. In fact, up until the 1970s, Irish laws mandated that pubs be closed on March 17. Beginning in 1995, however, the Irish government began a national campaign to use St. Patrick's Day as an opportunity to drive tourism and showcase Ireland to the rest of the world. Last year, close to one million people took part in Ireland 's St. Patrick's Festival in Dublin, a multi-day celebration featuring parades, concerts, outdoor theater productions and fireworks.

More Awards, and Norton Museum's 70th Birthday


I am so thrilled with all the awards given to me, and so honored, humbled, and overjoyed. This award was from Mina @Angellove's Cooking  and from Citra, @ Indonesian in Turkey. Mina is food blogging, from Bulgaria, and Citra, is blogging from Turkey, although she is originally from Indonesia. Both ladies are so, over the top amazing with their cooking, and baking talents that I just feel right now to be insignificant, and that I still have so much to learn. That is why we all gather together as a food blogging community, and have the support for each other, and give praise, where it belongs. Thank you my two lovely friends. for honoring me, with your lovely award!
This lovely award is given to me by my Hungarian blogger friend, Erzsebet, from Citromhab. You must visit her food blog. She is the most talented young bake that I have known, other than my own maternal grandmother, from Hungary. She makes the most amazing breads, and rolls, that you will only find, in the finest bakeries, here in the U.S. or in her native Hungary, and it will cost you a lot to buy something even similar to hers...but she puts her love, and her heart and soul into her baking, cooking, and the most amazing chocolate bon bons, or as we call them truffles. So mouthwatering is her latest one, that you would think it's almost impossible to make at home...but she did! Such talent can only make me feel humbled, and honored!

Angel Food Cake and an Award for Angels

While I realize this is not Spring or Summer...but after all, this is South Florida, and we cannot deny how blessed we are, not to be trying to dig ourselves out of the snow, being stuck in our homes, or even worse, stranded on the highway because of the impossible driving conditions. I feel for all of you, who are in this situation. Almost hate to say..."been there, done that"...when our last snow storm in the seventies while still a very young couple, me still in my early twenties... with a tiny toddler, less than 2yrs old... visiting my aunt and uncle for the Christmas holidays, glorious Florida sunshine, and 75 degrees in December...pure heaven! Returning back to Cleveland to the snowstorms...at that point, we decided...
Florida, "here we come!"...and made the big move!...so, the rest is history!...over 35 years in the tropical climate, and would not change 1 minute of it, except for a "White Christmas."

The "Smiling" Hug (huge) Pot

You may may be wondering what this crazy woman is up to...a  Hug pot?...yet alone, a smiling one?...
(this is a reflection of the corner of the white rimmed stove top...so cool!)well, actually, this is my wonderful turkey leftover resource, a hug pot of turkey broth which I made after Thanksgiving, as a thrifty, and frugal person that I am, living the good life, on the beach, in S.Florida

I could not bare the thought of throwing good leftovers out, when there are so many people in the world, even in this country who go hungry, and not enough food to eat. We have so many things to be thanking God for our everyday life's blessing, and Thanksgiving is the one most important day of them all!

I commented on Chef Dennis at More than a Mount Full post late last night about his amazing, and beautiful Thanksgiving feast, and also his gorgeous Turkey Pot Pie. Left a comment with a "typo" error which I do so often because I type too fast, and have this crazy "gift for gab"...just saying what comes to my mind, and like magic, it's all there in typewritten words, not looking back for goofy and weird mistakes, sometimes!

Just to prove to you, here's the copy and past comment posted to Dennis, but immediately I posted another one correcting it. You have to have enough sense of humor sometimes to laugh at your own self...well, in that case, no wonder I have such happy days, and not be in a "funk". When you learn to laugh at your own self, and not be so self-absorbed, I find that the world looks to me like a happier one, and people will tend to get closer to you, and understand you better. (I've been trying to explain that to my children.)

In the midst of my Smiling Hug Pot, I've decided to post my sweet friend Kavita's rules for the tagging, along with the wonderful bloggers she tagged, including me. I am so honored, once more, or should I say twice more, the first time was from my awesome same name foodie "buddy" Lizzy. As you might as well know, I am Lizzie too, only with a different spelling, which I told Lizzy, from... That Skinny Chick can Bake....you can call me Lizzie, every one else calls me that...close family, friends, and mostly my 4 precious grandchildren...to them, I am NONNA LIZZIE...sounds real nice! 
  
   Here are my sweet friend's Kavita's from... 
  Kavita's Kitchen  questions
1. What is your take on organic food , is it a big deal for you ?  
It certainly is a big deal for me. I feel more assured that it is left natural, without pesticides, that would certainly kill the bugs that attack to fruit or vegetables, but would also harm, and kill humans after a period of time. To me, any homegrown, or private farm grown fruit and vegetables are considered organic. It's so much healthier for you.  
2. Do you time your breakfast,lunch & dinner or eat when you are hungry ? 
 For breakfast, it's mostly oatmeal, and before lunch, some healthy fruit or plain yogurt w/granola, and throughout the day just small portions of healthy things, like fresh fruit, or a smoothie. and for dinner, a balanced meal. I'm not really hungry during the day, and don't nibble on junk food!
 3. What inspired you to write a food blog ? 
It's mostly, not what, but who?...the "what factor" was, that I was no longer working due to my health issues, which is under control, and had time to spare, and the main factor was that my daughter inspired me, to just post about my daily routine, and foods that I prepare. By that time, May, of this year, she already had a food blog, and encouraged me to do a blog too. I wasn't totally sold on it, I was more interested in sharing my "thrift finds"...glad that I added more foods, thanks to joining Foodbuzz!    
 4. You try a new recipe and it does not turn out good,what will you do ?      
Usually, in cooking, I don't follow the recipes, I just need to know the basic ingredients, and I always change it around to my way, adding different ingredients. Just need the idea! As for baking, it has to be more precise...the only recipes that do not turn out are yeast dough breads, or rolls, (which most of the time, I blame it on the yeast, that it wasn't fresh)...LOL..just a big "copout"...in that case, it gets thrown out! 
5. Name three ingredients you consciously avoid or eliminate even when the recipe calls for it ?
The 1st. one is yeast, because I would much rather prefer fresh yeast from a bakery...don't care too much for the powdered yeast. 2nd. is sugar, but I just try to cut down on it, and not avoid it. 3rd. would have to be adding too much butter, to a recipe...in most cases, it would be in desserts, or cakes. As far as food recipes are concerned, there really is not a thing I would avoid, accept in baking.      
 6. Name three things you have to use in most recipes ?  
 Again...I will refer to baking recipes, which would be 1. sugar, 2. butter, 3. eggs. Cannot bake without those three things. There really is no substitute for achieving a beautiful result without those three things.   
 7. How important is eating meals together as a family to you?     
As a kid, growing up, in Ohio, my dad worked two jobs, my mom was a seamstress... always busy sewing clothes for people in our own home, and she only had time to make 1 pot meals, or casseroles, and during the week every one ate at different times. The only day we ate together, was on Sunday. I did not want to carry on that same tradition, and it was very important to me, that with my children, we always have our meals together. This tradition has been carried on by my children and to my little grandchildren.  
 8. You do not like a particular dish at your favorite restaurant,what will you do ?  
 Somehow, that has not occurred in a favorite restaurant, but it occurred in a restaurant, where I haven't eaten before. Just tried to make the best of it, and not go back again...that's all!

Thank you for sharing your Thanksgiving story and showing off your feast. Everything looks so inviting, and beautiful. So funny about the crostata story...LOL I made a hug pot of turkey broth with my leftover carcass, that I strained and froze in plastic containers. I love your turkey pot pie, will work nice for chicken as well. This is the perfect recipe that I'm looking for, and the crust is Superb!

Herb Biscuits, and a Giveaway Winner!

These herb biscuits were actually made yesterday morning, for Cookbook Sunday, which I did not post, since my mentor Brenda, from Brenda's Canadian Kitchen is vacationing, and celebrating her birthday, in
Las Vegas.
Brenda  is having the time of her life, in Las Vegas, and keeping us posted with such beautiful and envious photos of the places she visited, and having a glorious time.

I cannot tell you how it irritates me, when you have a friend request on Foodbuzz, and they answer you back, with "don't forget to visit, and follow my blog, etc. etc., or with a "you're welcome"...and nothing else, or better yet: :DITTO...well, ditto to you too, but I don't want to say it, just keep thinking, Ughhh!...OK. that's enough of that, now I sound like an old Yenta!

I also would like to let all my friends know that I will be giving away more books, since I have such easy access to them at such a ridiculous small price, no more than $3.00 tops, for a book that is worth at least $30.00, and in new condition. Apparently in this area, either people are just buying them and recycling them, or getting them as gifts and not liking them. At any rate we're the winners for being able to acquire such great books.

Again, I bought this book at yet, another thrift store, that is a huge warehouse, and one entire large section, is loaded with all kinds of books, including great cookbooks. I have a photo of this fabulous book section in my previous post about a month or two ago.

This place is called  World Thrift, and here, you can find everything to your heart's desire. Prices are a little higher than Goodwill, but you have a lot more choices. Books range between $.95 to $3.95 for a recently published book....no kidding. Dressed to Grill, is a hard back cover book, with spiral notebook look, inside. It is inspired for single ladies wanting to please their guy. No photos, just cute drawings, and cute, and silly names for recipes.
For instance, this herb biscuits is called: Hey, I bake biscuits, too! This is a 2002 edition, retails, at $16.95, I paid $.95...now how can you not want to buy a great book for 95 cents?

Recipe, for Herb Biscuits

2 cups all purpose flour
3/4 teaspoon kosher salt
1 teaspoon baking powder
1/4 teaspoon freshly ground pepper
4 Tbsp. ice cold unsalted butter cut into
small pieces
2 Tbsp. minced fresh parsley
1 Tbsp. fresh rosemary
3/4 cup plus 2 Tbsp. buttermilk, or plain
yogurt
1 1/2 Tbsp. olive oil for brushing

Preheat oven to 425 degrees. In a large bowl, combine the dry ingredients. Scatter the butter over the top. With a pastry cutter, or your fingertips, work the butter into the flour until the pieces are no larger than peas. Add the herbs and buttermilk or yogurt, stirring just to blend. (Handle the dough as little as possible to keep the biscuits, tender and light.)

Turn the dough out unto a lightly floured work surface, then, with your fingertips, (I used a rolling pin) press, or roll into a circle about 1/2 in. thick. Cut 3 inch rounds, (I used 2 /12in.) with a biscuit cutter, or the rim of a glass.
Reshape any remaining dough and cut more biscuits. Place the rounds on an ungreased baking sheet. (If making ahead, cover, and refrigerate until ready to pop in the oven.)

Brush the biscuits with olive oil. Bake until golden brown, about 18-20 minutes.
Makes 10 to 12 biscuits. (Incidentally, mine turned out super golden, and flaky.)

A Beautiful Sunday, "Shout Outs" & Awards

The gorgeous blue color you're looking at, is not a screen background, but the blue sky today, here in Palm Beach...and NO, it's not a "prop" set up...you are actually seeing the Goodyear Blimp. We were sitting on the beach, which by the way, was so rough and wavy, you could not even walk along the sand because the waves were like ten feet high, hitting the beach and knocking little people down i.e. my little 4 year old grandson. More photos, later.

My friend Brenda, from Brenda's Canadian Kitchen has a real fun club...of course it's associated with foods, and yummy desserts. It's called Cookbook Sundays. Last Sunday, I linked to it and picked up the widget, and I really wanted to post a nice cake very befitting for the holidays from a nice dessert book of mine. I'm a little embarrassed for not keeping my promise to do this. I joined her club...not sure if it's "exclusively" hers, or somebody else started it, still trying to straighten this out, including my widget which is still "looming" on the bottom of my page, but I did set it up. Just check out her blog, and see the beautiful Rum Cake she has on for this Sunday.

The Church Cook-This is a lovely lady-a recent friend, we have a lot in common...she is a profesional caterer, turned church cook/caterer, devoting her precious time to the needs of the church in her community, and cooking up fabulous meals and organizing parties and events. I too have that same thing in common with her, but the only difference was, that I cooked every Weds. evininig suppers for 3yrs for our local church(which I was not a member of)...but it was very rewarding.

10 Jane Deere-Jennifer has a "green thumb" and a beautiful garden where she grows her own vegetables, and is resourceful with them. Do visit her blog, for great recipes, and photos, as well.

11 The Tiny Bento-A must visit blog, especially if you have little children it will amaze you all the wonderful ways to pack their lunch, and make it fun, and pretty too...not to mention appetizing! No kid will turn down their lunch packed into these cut little Bentos. I must recommend this to my daughter!

12 Good Food Week -Shari is a beuatiful young lady, from Australia, she is still new to her blog, I befriended her on Foodbuzz, where most of my friends are from. She made this "killer" curried egg salad sandwhich, which I love, since I love curry powder. No more plain egg salad for me. Do visit her blog, and say "hello"!

13 The Ardent Epicure-Alisha-Magic of Spice-She has the most amazing exotic blog, her latest with the most delicious and hearty mixed bean soup, with such aromatic spices...and don't forget to check out her decadent chocolate fudge cake, just previous to that. 14.Me My Food and I -Michael is a recent new friend, whom I hade the pleasure of befriending through being a guest post on Chef Dennis More than a Mountfull blog. He posted his latest pasta with pesto, potato, and green beans, from "Nigella"...I am not only a potato lover, but also pasta, maybe even more!

The white foam you see is a dangerous unpredictable body of water that came rushing out to the shore that it literally knocked you down. The temperature was so perfect at 75 degrees, and the sky a crisp bluest blue. This is your typical South Florida sunshiny day...I guess that's why they call it the "Sunshine State."
There's nothing like a grandfather's hug to his (and my) only grandson...parents in the background.

Green Market, in West Palm Beach

Have you ever seen skies so blue...not a cloud in sight, crisp, clean well manicured grass, the Intracoastal water so blue too. Well, this is the famous Flagler drive route that leads to downtown and the Saturday morning Green Market...so much fun!...Photo taken by me, from the car, (driver's side, of course.)
You can see we went to the best stands, First, the smoothie stand (daughter in the green sweater, and granddaughter all bundled up in a hoodie, at 65 degrees?)...so this is a cool temperature...later temperature went up into the 70's, about 74 degrees. Oh so perfect weather. Next stop at the Cuban stand...had to put my smoothie down to snap some photos quick! I had the yummy beef empenada on the right.

 OK, so much for "Show and Tell"...just another Saturday morning at the West Palm Beach Green Market, which is feautured every Saturday morning, all year long, except in extreme cold, or extrem hot weather (I think.)
Now, I'm dying to hear from bloggers, about the 2nd. Annual Foodbuzz Blogger Festival, in San Francisco!
That will be exciting news, and photos...lots of stories...can't wait!









A Halloween Weekend

Thai Shrimp Noodle Soup

Today, is one of those South Florida days, that you welcome a nice bowl of soup. It's raining, and a nice breeze, but still a hot 82 degrees. We're not seeing fall or falling leaves around here, that's for sure! I connected with a lot of nice friends through Foodbuzz, and they are from all over the United States, and the World. I'm glad that I have the Google Translator on my blog, so other people with different languages can actually translate it to their own. I think it's so cool to have that widget. Sure brings a lot of us together...and not have to have the mishap of the biblical Tower of Babel. We're all ONE...and one thing I'm sure of is that we all share common interests, being FOODIES!
I didn't feel like going to the store to pick up any specialty items, my "good old standby" bag of shrimp in the freezer always is a good "friend." Ready, when I am...sounds kind of corny, but it really is true. For the Thai shrimp noodle soup, all you need is the shrimp, the rice noodles, some vegetable, and don't forget the spices. The Thai sweet, and spicy chili sauce, always works, and it's good for dipping as well. Instead of posting the recipe later, I will start now. I hope you enjoy a different soup, instead of the same old...same old, and also really good if you're a vegetarian, No meats of any kind that is in the soup. Just all fresh ingredients. I wanted to keep the broth separate, and the shrimps separate, but decided to combine the two, so instead of eating a vegetable soup, and shrimp with vegetables on the side the best of the two are happily joined together.
The first thing I do, is saute the onions, garlic, and peppers, add some chopped fresh cilantro, and the strained cooking liquid from the shrimp shells and tails, and add it to the heated up vegetable broth that already has the sugar snap peas in it.
...and here's the finished product. The shrimp goes in with the sauteed vegetables, at the very last minute, when vegetables are soft and just tender, and let shrimp turn pink. Add together the shrimp and vegetable mixture, and serve it in a nice soup terrine. This is not just any soup terrine.
Did I get lucky?...or did I get luck! A Graf von Hennenberg Porzellana 1777, from The German Democratic Republic. It has the green crest on the bottom, and the coat of arms. Truly a beautiful porcelain work of art. Don't know what year, don't know what it's worth, but I would not want to sell this beauty. It's a keeper! Paid $7.99 for this truly antique at World Thrift, in West Palm Beach. The elderly couple that some me buy it, suggested that I take it to the  antique fair that we have here, to have it appraised! I just might do that out of curiosity.
Thai Shrimp Noodle Soup

1/2 lb. shells and tail on, large deveined shrimp
(you can use 1lb. if you like)
32 oz carton all natural. vegetable broth, or 2 16 oz. cans
1 cup water
2 1/4 in. thick slices of peeled fresh ginger
( or 1 teaspoon of good quality powdered ginger)
1 red bell pepper, sliced diagonally, or
(1 orange, or yellow bell pepper)
1 green bell pepper sliced diagonally, or
(you can stay with just the yellow, orange or red)
1 medium onion cut in half, and sliced diagonally
3 oz. fresh snap peas, string removed from the back
( you can use frozen pea pods if you like instead of fresh)
2 cloves of garlic minced
2 Tablespoon vegetable oil
juice of 1 lime
handful of fresh cilantro chopped
3 oz. rice sticks (rice noodles)
1 Tablespoon Thai sweet chili sauce (also used for dipping)

Remove shells and tails from shrimp, and boil them in the 1 cup water, strain the liquid, and set aside. In a large skillet,over medium high heat. Saute the onions, peppers, garlic and ginger, (or add the ginger powder) in the vegetable oil. When the onion starts to get wilted, add the cilantro, and saute for another few minutes. Add the chili  Add the shrimp, the chili sauce, the juice of the lime, and  the reserved strained water. Let the shrimp get nice and pink and take it off the heat. Have the broth ready at this time, warming it up, adding the snap peas, At this time, you can add all the ingredients from the shrimp, and mix it into heated broth. It's ready to ladle out, adding a little more chopped cilantro on the top. Serves 4.
note:
This is not too spicy, but you can add more chili sauce to the individual bowls, and also extra lime juice.
