White Chocolate Chip, Chocolate Cookies


While I'm trailing behind everyone else, on the 'food blogger scene,' I still try to come up with decent photos and different type of recipes. I must admit that I could actually post something every-other day...even every day; let's face it, we all have to eat every day 3 meals a day... but who actually wants to take photos of everything you make?...not me; although I should have taken a picture of my awesome homemade 'nokedli=spaetzli'...or even, my northern bean-vegetable soup cooked in my slow-cooker last week, but then I would have to stop and measure everything from the start because it's from 'scratch' and memory...scratch that, and let's start with my cookies.

Even with the cookies...when you don't have semi-sweet chocolate chips, or any other chocolate chips; just white, what do you do?...well, you make a 'White Chocolate Chip, Chocolate Cookies'...duhh...how easy is that to figure out?

Luckily, I always save the empty bag from the Nestle Semi-Sweet morsels, the 12. oz bag, and follow the recipe on the back, but just alter it a little to make it dark chocolate, with white chocolate chips...no problem...done!




Homemade cookies are so much more appreciated and it is much better than store-bought with all the preservatives, unless it's 'OREOS'..but that is always saved for emergencies.

You can make any kind of 'chip' cookies with the basic Toll House cookies recipe from Nestle's, just keep that in mind. Next time it will be with peanut butter chips with dark chocolate...just switching around the white chocolate chips.

Good thing I have another batch in my fridge...ahh thought you would be wondering why do a have a 'second batch' in my fridge?...saving it for a 'rainy day'...not such a bad idea! Today was actually a rainy day, and I had to be at my service station at 9:00AM sharp to get an oil change, and walk over to Goodwill with my umbrella, while car was being serviced. (didn't really find anything,) or at least nothing that I wanted to carry back on foot to pick up my car...so now, here's the slightly adapted recipe for a different chocolate chip cookie!

White Chocolate Chip Chocolate Cookies
adapted from Nestle's Toll House Cookies

2 cups all-purpose flour
1/4 cup Hershey's or another good brand cocoa powder
1-1 oz block of semi-sweet baking chocolate
1 teaspoon baking soda
1 teaspoon salt
1/2 cup butter (1 stick) melted with the 1 oz. of the semi-sweet chocolate, and cooled
1/2 cup (1 stick margarine) or 1/2 cup shortening
3/4 cup granulated sugar
3/4 cup brown sugar
1 teaspoon vanilla extract
2 large eggs

2 cups (12 oz. pkg.) white chocolate chips or dark chocolate chips

Preheat  oven to to 375 degrees F.

Line a baking pan with parchment paper. Combine flour, baking soda and salt in a small bowl.In a large bowl, beat cooled down melted chocolate and butter mixture, the 1/2 cup (1 stick margarine)...or the 1/2 cup shortening with the granulated sugar and brown sugar, and vanilla extract until creamy. Add eggs one at time, beating well until each addition.

Gradually beat in flour and cocoa mixture. Stir in chocolate morsels.

Drop by rounded teaspoon onto parchment paper lined baking sheets, keep them 2 inches apart. Bake for  9 to 11 minutes. Cool on baking sheet for 2 minutes.

Note: on the photos above, I saved more than half the portion of the dough, patted it down, wrapped it in plastic wrap...then aluminum foil, and took out more as needed the next few days. Score them first, then cut equally, shape into a walnut size ball and press down lightly; follow baking instructions.


Have a cookie...or two...or three:) You'll love these...yumm!

Corn and Potato Chowder

It's only been a few days that I have not been around...not commenting to all you dear friends, and not linking to my favorites...Hearth and Soul Blog Hop @ Zesty South Indian Kitchen for Tuesday...Thursday Favorite Things Bog Hop @ Katherines Corner and Full Plate Thursday @ Miz Helen's Country Cottage...  so, I'm hoping that I'm not too late to be linking my post this week!


I made this incredible Corn and Potato Chowder, from ingredients that I had on hand, and seriously....no recipe required. If you have chicken or vegetable broth on hand, either homemade, or for me; preferably with soup base, or in a 32 oz Swanson brand. carton of chicken broth which is 100% natural...best of all, 99% fat free and no MSG added.

Fresh Tomato Tart with Gorgonzola Cheese


As I have mentioned in my 'Silent Sunday' post, I made this beautiful rustic Tomato Tart...normally, I would have used a milder cheese, like Goat Cheese or a mild Cheddar Cheese but I had a block of sweet Gorgonzola cheese, imported from Italy that worked wonders to balance out the flavors with just a small amount of chopped parsley
and the perfectly ripe tomato slices
I may not make cupcakes...especially with 'fancy-schmancy' frosting and decorations; although I think they are gorgeous...and that reminds me of my dear sweet friend Joanna from
Chic& Gorgeous Treats...(whom I had the pleasure of meeting in person last year, in S. Francisco) she is every bit beautiful, sweet, bubbly and friendly in person...  as she is on her blog! Check out her most amazing blog that will put a smile on your face and will want to make, or wish you would/could make some of her creative desserts, cupcakes, and mini tarts.

At least Jo's tarts and cupcakes have natural fruit and fresh cream toppings, but some bloggers make cream frosting for cupcakes which are oh, so pretty and decorative, but the first thing a child would do is to lick off the extreme sugary and brightly tinted cream!
 
Just to give you an example, last week my little grandson Luca was crying at his kindergarten class at lunchtime because every child was enjoying their cupcake topped with a fancy blue frosting, and he had to tell his teacher he's not supposed to eat the cupcake. (he previously got sick from the colored butter cream before)

My daughter had to go to school to console him because he just kept saying "I'm not supposed to eat this"...the poor child is so allergic to so many buttery and synthetic products, that he already knows at such a young age what not to indulge in...even though he would like it, but his little tummy would not tolerate it!


My 'Award' Winning Pizza for #Twelve Loaves September

Does it seem like I'm the only 'oddball?'...seriously! I do everything differently than the other fellow food bloggers. I'm so 'lame' when it comes to joining a group, or even linking up something. Not consistent, and certainly always falling behind schedule. I did try to link up last week with my Cheddar Cheese bread for Lora's #Twelve Loaves September, which required a cheesy bread, but did not know that pizza applies...and I did make my own dough this time with the most amazing yeast from RED STAR, called PLATINUM!

Easy Chicken Salad Sandwich...and more

I have so much stuff to share with you...but first things, first. Yesterday, as I was commenting back on some of the comments (yes, I know I owe a lot more)...I came across a comment from Cathleen @ A Taste of...Madness
and as soon as I saw her yummy, and simple chicken salad sandwich, I immediately decided to use of the large roasted leftover chicken breast, from the whole roasted chicken, I made the other day.
For the recipe, just click on the link, but I also combined half of the portion for the mayo, with my homemade tartar sauce, or you can use a bottled purchase tartar sauce if you would like!
Roasted chicken is so versatile, but most of the time I purchase it ready made, fresh  rotisserie style, from my local supermarket. Just can't resist the aroma and the freshness of a roasted chicken.

The leftovers can be utilized so many different ways...if you haven't devoured all of it in one sitting, with family or company. In my case, I always have some leftovers which happen to be one of the large breast which I use for chicken sandwiches, but have not made chicken salad in a long time!


How could you not enjoy this delicious sandwich on your favorite sandwich bread or bun (I chose 100% whole wheat)

On the bottom slice of the bread, pile on the yummy chicken salad, and on the other
slice a generous chunk of your favorite lettuce, a slice of perfectly ripe tomato, and a thin slice of red onion (optional)...cut it half diagonally, and enjoy your sandwich with homemade ice tea...can't get better than that!


A 'sitting duck'...this isn't...but more like a 'squatting chicken'...which it is; 'hunch back', and all!...yikes! This image of a well roasted chicken, right out of the oven is NOT very attractive, but the chicken is perfectly roasted...except for the two bottom legs...which are squatted, and did not get golden brown, but it did get tender.

So why am I showing you this funny looking squatting chicken?...well, because of the cast iron roasting pan, and how clever and useful it is.


So, this is the famous cast iron skillet by Chef Emeril...I did not find this as a 'thrift find'...as a matter of fact, I ordered it online from HSN Home shopping...the cost was not cheap...close to $40. I must admit it really is an unusual, and different kind of roasting pan, but I am not crazy about it, and therefore,

I will want to get rid of it....probably donating it to Goodwill, or offering someone in the U.S. who will not mind paying for the shipping charge...that's all; just let me know if you're interested!








This was the original plan...roasted chicken, and baked sweet potatoes!

I'm gonna share my homemade tartar sauce recipe with you, to add to the chicken salad recipe!




So, I made my own delicious tartar sauce...which was not difficult, at all!

Here are the ingredients that I used...

















OK...so here you have all the ingredients to process for the tartar sauce...sweet pickle slices, caper berries, and and scallions.Give it a whirl or two, and you can add this to your favorite mayonnaise.











So, that's all to making a simple homemade tartar sauce...here's my personal recipe concoction!

Tartar Sauce

! 1/2 cups really good mayonnaise
2 Tbsp. sweet diced pickles for the relish
1 Tbsp. caper berries
2 Tbsp. lemon juice
1 Tbsp. chopped onion
1 teaspoon brown mustard
about 1/2 teaspoon of pickle juice

Mix all ingredients together, and use it for side dish, or for sandwich spreads, and dips!

At the rate that I'm going...looks like I could go from 'Silent Sunday'...right into 'Silent Wednesday'. Actually, I was hoping to post a cheddar cheese bread for Lora's '#Twelve Loaves'...for the month of September, but my bread just did not rise...it refused to rise...waiting for over 2hrs (recipe called for 2hrs of rising)...waited for 3hrs, and still not much luck, but I persevered and was determined to shape the bread, and make it any way!

For Labor Day, which I hope you all had an enjoyable time with family and friends...as for me, I opted to stay home-alone, which did not happen.

I was so thrilled the my son came by with my two sweet granddaughters but then...I did not have a plan for lunch, but certainly had the right ingredients for a quick mac n' cheese (from scratch)...little burger sliders, on my grill pan, and for dessert, palacsintas filled with my mango jam.  Not so bad after all...and for the latter part of the day, I went by my daughter's neighbors' for a BBQ. Great day, after all!


Please excuse the not so great presentation of my photo but really good crepes)... and the scribbled recipe...I really wasn't going to bother posting this (I had my heart set on posting my bread, which unfortunately flopped...sigh!)

I hope you can make the chicken scribble out, I saved this recipe for the past 20 years now, tucked away in my little red box along with my other index cards, and hand written recipes. Recipe makes at least 12 crepes (pancakes is not the right term) copied it from 'word to word'...from a Hungarian cookbook written in English.



Here's the most amazing grill pan I found at Goodwill last weekend...brand new, heavy, I mean super heavy weight cast iron grill plan from IKEA for $9.99. I just had to have it, could not pass up this great grill pan. I tried it out to make my little mini burgers...of course, the pan has to be sprayed first with the vegetable cooking spray, and pre-heated, but just look at those grill marks on the burgers...a great 'thrift find' for sure!






Another amazing 'thrift find'...this awesome mini cake pan with 4 compartments to make the same banana bread recipe that you would make in one loaf pan. The time that it takes to bake, is totally half the time then the one pan makes. This was done in 35 minutes, moist delicious and yummy. Cost for the cake pan, $4.99.

The Best Ever...Salmon Burgers

Notice the Louisiana hot sauce in the background? What a coincidence. I was just mentioning on some replies on my previous post that tropical storm Isaac is in Louisiana now. Since about 1 week now, we've been having heavy winds and rain here in South Florida, but nothing compares to the windy heavy storm we had last weekend, finally ending last night with several huge BANGS of thunder that shook all the windows.

When you're stuck inside all day on Sunday and half the day on Monday, due to the storm, you better have a plan while you have electricity, to make the best of the situation. As for me, I yearn for comfort food...not necessary junk food but something satisfying...yet, healthy! I had a brilliant idea to make burgers on my little George Foreman grill...better yet, a juicy salmon burger, with robust flavor, not too spicy, but intense in flavor.

How could you not have a burger without sides?...not me! Either fries, or onion rings, but I must confess I do love onion rings...good onion rings, and I am not going to wast any time making them from scratch just for me alone when I can get the Alexia onion rings in my local supermarkets freezer section.

I even made the dipping sauce that was sweet, and spicy (recipe on the side of the bag) I adapted it my way by adding the Louisiana hot sauce to kick it up a bit. No frying with these onion rings. Just bake it for 10 minutes on 400 degrees F. for a crisp perfect, crunchy onion rings that were dipped in Panko crumbs.


You must have tartar sauce with a delicious salmon burger...if not a tartar sauce, but then a special sauce. Now I have both, a ketchup based sweet and spicy dipping sauce, and a homemade tartar sauce that is way better than the store bought!

I was so inspired to make the tartar sauce that I have been making for years, which is really a simple method. Just have a good brand mayonnaise, and to make sure you add sweet pickle relish, or make your own pickle relish by chopping the pickles in your food processor.

So let's get started. For 2 salmon burgers, I used a piece of salmon fillet that was just under 1/2 lb.

2 scallions, trimmed and chopped coarsely.
2 or three pieces of fresh dill, stems cut
1 teaspoon lemon zest
juice of half of a lemon
1/4 cup Panko bread crumbs
freshly ground pepper, and sea salt to taste
(I used coarse sea salt ground fine)
Cut the salmon into 1 inch cubes, and add it to a food processor, adding all the listed ingredients.


Being careful not to process; just give it no more than 2 pulses, to keep it coarse, and not make it like ground meat. The Panko will help it hold together.

Have your grill set up, or your favorite grill pan or electric grill heating up.




This is the ideal consistency you should have. (my only problem was, I should have chopped the scallion into smaller pieces) food processor does not seem to chop it up in 2 pulses.

Now you are ready to pat them gently into patties.









On a large plate, add 1/4 cup more of the Panko crumbs and roll the salmon burgers in them. Gently pat some extra on each side.

Spray with PAM or other brand cooking spray on both sides. At this time, you can refrigerate them while you prepare the other easy sides to go with it!



Grill the salmon burgers on the George Foreman Grill, which of course has two sides for grilling which takes half the time than grilling in a grill pan, or on an outdoor grill.
Spray extra cooking spray while you're grilling,








Total time on George Foreman is 4-5 minutes. On a one sided grill you have to flip over to the other side. (4-5 minutes on each side)

Dipping Sauce for the onion rings and for the salmon burger (optional)

1 cup good quality ketchup
(I use Heinz)
1 teaspoon taco seasoning
1 teaspoon cocoa powder
few dashes of Louisiana hot sauce
Mix all the ingredients together in a small bowl and serve for dipping, or spreading
