Apple-Date Cobbler...and Homemade Biscuit Mix


I have been searching around in my little trusted file box from Better Homes and Gardens to pull out some "magic"...as in pulling a rabbit out of a magic hat?...well, it certainly came down to that, because I am just fresh out of ideas, for finding something out of my favorite cookbooks, ie: How To Cook Everything, by Mark Bittman, or my Southern Living collection, my Food and Wine Collections, or my Cooking Light collection of series, from the year 2000 all the way through 2010...all of which are "thrift finds," but my collections of newspaper clippings, which I have totally narrowed down, and have stopped collecting, and index cards that I have pasted or written recipes on, are now, a "thing of the past."...done, and gone!


Nowadays, you can find so many recipes on the Internet, and you don't have to go further than, your foodie buddies' blogs, to get inspired by all the amazing recipes they create, and post. I get inspired just by visiting, and commenting on all the my favorite blogs...most of, who are my friends that I like to keep in touch with! So why don't I just stay comfy-cozy, and keep getting ideas from their blog?...it's because I need to accomplish what I set out to do, is to go through my collection of recipes...or just toss them out...which most I have already done so!

Homemade Biscuit Mix
from Sun Sentinel, West Palm Beach, 1994

1 3/4 cups all-purpose flour
1 Tbsp. baking powder
1 Tbsp. sugar
1/2 teaspoon salt
1/3 cup vegetable shortening

In a medium mixing bowl, stir together flour, baking
powder, sugar, and salt. cut in shortening until mixture resembles coarse crumbs.
Store in an airtight container, and refrigerate. It will keep fresh for up to one month, or you can freeze it and keep up to 6 months. Just let it come to room temperature before using it, either way.
Makes up to 2 1//2 cups.







Apple Date Cobbler
my own recipe

1/2 cup Homemade Biscuit Mix
2 Tbsp. whole-wheat flour
2 Tbsp. light brown sugar
1 Tbsp. cane sugar
1 teaspoon cinnamon powder
1 egg, lightly beaten
2 Tbsp. milk
4 apples, peeled, cored, and thinly sliced
juice of 1 lemon
2 Tbsp. unsalted butter
1 cup pitted dates

In a medium mixing bowl, combine biscuit mix, flour, and 1 Tbsp. of cane sugar. Stir in the lightly beaten eggs, and the 2 Tbsp. milk, just until they are combined, and smooth. In another medium bowl, combine the sliced apples, the 2 Tbsp. brown sugar the one teaspoon cinnamon powder, juice of the one lemon. In a medium skillet, melt butter, add the apple mixture, and saute until al-dente (not quite soft)...add the 1 cup of the pitted dates, stir for a few minutes to let the dates heat up, and soften a little.

Transfer the mixture to a 1 quart oven proof casserole that has been sprayed with cooking spray. Immediately spoon biscuit mixture atop of the hot fruit mixture, into 4, or six mound (I added 6) Bake in a 400 -degree F. oven for about 15-20 minutes. Spoon out, 1 biscuit, and surround with fruit. You can sprinkle with powdered sugar, or additional cinnamon, mixed with sugar.
Serves 6.
Note: If you are using frozen fruits for the cobbler, you can mix 1 Tbsp. cornstarch into 3 Tbsp. water, to add to the fruit mix to heat up.

I made this in the middle of the afternoon, and my 10 yr.old  granddaughter Gabby and I enjoyed a serving of this...just check out the biscuit, how light, and fluffy, the apples still in beautiful pieces, and the dates, slightly softened...Mmmm...let me tell you, this is a TREAT!...a great middle of the afternoon snack, with a nice cup of hot tea (which I don't drink unless it gets cool outside)...or a cup of cold glass of milk!

Chocolate Pancakes...and a Guest Post

So far, since I've been blogging, for about 1 year and a few months, I have not picked up even the concept, about guest posting for someone, until now. This will be my actual second guest post, and I'm all excited about it!
This is not just a guest post, but THE guest post for my special friend, Swathi, who I've had the pleasure to meet through our blogs, since a year ago. We've been staying in touch through e-mail occasionally, since that time, keeping each other posted with our lives.

I am so thrilled, and honored to accept the invitation from my dear friend Swathi, who is the author of
Zesty South Indian Kitchen, and one of the host @ Hearth and Soul, Tuesday Blog Hop. Her blog is so beautiful and exquisite with true South Indian cuisine, and the most amazing yeast breads, that I cannot compete with, so I decided to post something simple, and American, that we can all relate to, is "pancakes."

Not just any old pancakes, but made with your own homemade baking mix. I'm sure you all are familiar with Bisquick baking mix. It has been around for decades. I have used it for years, myself for pancakes, and various other baking goods. Making your own mix is so easy, so practical, that once you have the mix completed...which is such an easy process, you can keep it in your fridge for up to 6 weeks in a plastic container. It's a good way to use up excess butter or margarine, so it will not go bad.
Without further delay, here's my recipe for the Chocolate Pancakes, made with the Homemade Baking Mix, and a simple recipe for easy muffins.

Lemon-Glazed Zucchini Bread...and More Tomatoes!

I have not made zucchini bread for years, maybe since my children were little, and they actually loved it!...why not now?...I really don't know!

I used to have a fantastic recipe from Bon Appetit, but that was from the seventies, or eighties and those recipes almost, always called for at least 1 cup of vegetable oil, and 2 cups of sugar...yikes!!! there goes your cholesterol level, and killing you with sugar!...no thank you! At any rate, this recipe, I assure you has very little oil (1/4 cup) and lot less sugar (1/2 to 3/4 cup)...so, no wonder I didn't make it until now, although I've always been relying on my banana breads with excess ripe bananas always at hand. ...also having zucchini on hand, but using it in savory dishes!
Whatever you do, just don't tell your 5yr. old child that this is zucchini, the green vegetable that they are being served, tucked away, inside this wonderful lemon-sugar glazed bread. I made that mistake, and my 5yr. old granddaughter would not touch it with a 10ft pole! I posted this photo, because I wanted to show off the glaze on the top, and also the photo itself. Both was done by Sophia, my 10yr old granddaughter. She certainly loved the bread, and even had seconds. What a difference 5year makes! If you really want to camouflage the zucchini, all you have to do, is to peel it first, then grade it, the way my daughter Lora made it, with the same recipe. I, of course left the little green specks in it...which is the "beauty" of this delicious and moist zucchini bread!
See the little specks of green?...that's what real zucchini bread is all about...seeing the actual specks of the beautiful shredded fresh zucchini.

Simple One Bowl Brownies...and more Awards!

Since my daughter Lora came back from Italy recently...I had about 2 nights of sleep in my own place, my poor kitties hanging around me and sleeping on my bed, which my little Persian hardly ever does except if it's storming outside, that can also be the reason why she snuggle up at the foot of my med on her very own little pillow.
Now, I'm back again house and dog sitting for a beautiful black Lab at my son's house only a few blocks away from my daughter, and myself. They are off to NY city, and to the country in NY state for two weeks. After all, d-in-law Cara's family resides in NY...so more the reason to visit! BTW-if any of you friends out there need a good pet sitter out there, just give me a holler...LOL, I'm getting really good at this for the last few years now.
I'm really good company for pets...dogs, or cats...they understand my "language" and actually really miss me when I leave, but in this case I don't go far.
This is the simplest one-bowl brownie you'll ever make, and this time I drizzle a simple sugar glaze on it, and just made a design with a fork to pull to one side...but you have to work fast with the design, as you can see the sugar glaze hardens really fast, which is good, because your don't want it to be a sticky gooey mess.
After you have the ingredients mixed in one bowl, all you have to do is to pour the batter into an aluminum lined 8x8 bake pan and bake for no longer than 20 minutes for a fudgy result...I baked it for 25 minutes, not so dense and overly fudgy!


Simple One Bowl Brownies
adapted from All Recipes.com

4 (1 ounce) squares unsweetened chocolate
3/4 cup butter
2 cups white sugar
3 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup chopped walnuts (optional)

1. Preheat oven to 375 degrees F
2. Microwave chocolate and butter or margarine in large bowl at HIGH for 2 minutes or until butter or margarine is melted.
3. Stir until chocolate is melted. Stir in sugar. Mix in eggs and vanilla. Stir in flour and nuts
4. Spread in greased 8 x 8 inch pan. Bake for 20- 25 minutes (do not over bake).

For the glaze:
I used 1 cup powdered sugar, and 1 Tbsp of whole milk and 1/2 teaspoon vanilla extract. Just mix all together in a small bowl, with a fork, and drizzle over top of the brownies after you have cut them. Important to cut the brownies first, so drizzle will not be messed up, You can see in the above photo, how I did, and also made design with fork pulling in one motion. By the time I got to the last row, the glaze had already dried...so it's a good sign.)

I have to apologize to you all for not being able to upload...or even copy and paste the second award I wanted to pay forward to you...I am working on my son Joe's computer, and apparently he has a tight security system where it prohibits, copying, and pasting...although I was able to finally upload the award after a few attempted mistakes, but now I don't know which file I put it into. (I'm in so much trouble when son finds this...LOL)...at some point I will be going to my place to check on my kitties, and will try to upload it from mine, and pay it forward!

Blueberry Scones...Part 1, and Awards!


All right class...I hope you've done your homework, because I'm going to quiz you on it! I made these amazing and yummy scones, based on a recipe by my dear friend Emma, from Australia,@ Sunflower Days.

On her recent previous post, she made these incredible rustic raspberry scones, that caught my eye, and I simply fell in love with it. I mention to her on my comment, that I would like to make the scones, but I don't have raspberries, so she encouraged me to make it, even though I have blueberries...and mind you I had tons, and tons of it. If you shop it Costco, you know exactly the sizes their product come in. Well, the blueberries came in a huge plastic container that was 908 grams=32 ounces...how do I know how many ounces? ...it was written on the package, but I did my homework, knowing I have to do some converting the Metric measurement on
Emma's recipe. Click here, for the recipe, and click back to my blog for the measurement conversion.
I did the multiplication, just to prove a point, 908g. x .0353, and it's exactly 32 ozs.

Here's the Conversion list again, just in case you need it!

ounces to grams: multiply ounce figure by 28.3 to get number of grams
grams to ounces: multiply gram figure by .0353 to get number of ounces
pounds to grams: multiply pound figure by 453.59 to get number of grams
pounds to kilograms: multiply pound figure by 045 to get number of kilograms
ounces to milliliters: multiply ounce figure by 30 to get number of milliliters.
cups to liters: multiply cup figure by 0.24 to get number of liters

In one day, I made three different recipes with my beloved blueberries, which is in the same group of my favorites of the berries, as strawberry, on top of the list, and blueberries close second, and of course raspberries, which are equally as good, but they are ever so expensive, just as the blackberries. I love them all, but I will stay with my first two choices to combine them in a wonderful dessert. Notice how flaky they are? I followed Emma's recipe to a "T" and wouldn't you know?...I actually added one egg, to 1 cup of the buttermilk, to have enough to brush this beautiful egg wash glaze on it!
Have you ever seen such perfect, gorgeous, huge, and juicy blueberries?...Costco has them, and then some!!!
Getting off the subject, now...the time has come once again, as in every year at this time; some of us get to go on vacations, while some of us stay here, now for the third year...boo, hoo...almost crying...well not exactly! I am so fortunate to be living in one of the most beautiful, tropical, and most desirable place in the world!!! We have sunshine every single day, have the most beautiful beaches, in-ground swimming pools, just about every one has a pool, all the best local eateries, that won't put a "hole" in your pocket...very affordable, the local fun outdoor restaurants that are right on the water, live outdoor theaters, most of them free, we have City Place, right here in West Palm Beach, where you can spend an hour, or spend the entire day...an outdoor mall, but of course better than
a mall, so leisurely, so magical, I've already posted several photos of it in my previous posts!

Chocolate Chip Biscotti to bid on... Becky's Bake Sale

Today is a very important day...it's the day of the Bake Sale!

Becky @ Baking and Cooking-A Tale of Two Loves 

is hosting for a very important cancer drive, for the American Cancer Society. There are at least 27 ...31 participants...including myself, to contribute some really awesome baked goods. Almost, a year ago, just about 11 months ago, when I first started my blog, I made my Chocolate Chip Biscotti and posted the recipe, as well. Becky has posted that photo of my biscotti, which really did not look as great with my old camera, not to mention the biscotti was done, quite mediocre.

Now, just look, I baked these yummy biscottis, even with my sprained ankle, which is healing very nicely...no braces, no walker, just ace bandage on it...still can't stand on it completely, but I have to start little by little. It's such an honor to do this, and I'm ready to ship the biscotti, carefully wrapped, to the person that has the highest bid on it. All 2 dozen, with Nestle's chocolate chips folded inside, and drizzled with more chocolate, of the same kind, melted down.

Actually, if I were to sell these...which I have done so, in the past, it would cost $1.50-$2.50...each, depending on the size...multiply even, $1.50 times 24 would still cost $36.00.
Becky is starting the bidding, at $15.00 on all the items...so what are you waiting for? Angel Food Cake and an Award for Angels

While I realize this is not Spring or Summer...but after all, this is South Florida, and we cannot deny how blessed we are, not to be trying to dig ourselves out of the snow, being stuck in our homes, or even worse, stranded on the highway because of the impossible driving conditions. I feel for all of you, who are in this situation. Almost hate to say..."been there, done that"...when our last snow storm in the seventies while still a very young couple, me still in my early twenties... with a tiny toddler, less than 2yrs old... visiting my aunt and uncle for the Christmas holidays, glorious Florida sunshine, and 75 degrees in December...pure heaven! Returning back to Cleveland to the snowstorms...at that point, we decided...
Florida, "here we come!"...and made the big move!...so, the rest is history!...over 35 years in the tropical climate, and would not change 1 minute of it, except for a "White Christmas."

Fresh Blueberry Muffins

This fresh blueberry recipe of mine is adapted from a 1986 Food & Wine magazine of mine, page neatly kept in a binder with a plastic jacket, but I will have to make copies of this so I will not loose it. It calls for 2 1/2 in. dimension size  which this is perfect. Notice it's stainless steel, from Goodwill, for $.69 each pan. It was brand new, and I imagine as old as my recipe. I gave my extra large  nonstick muffin pan, and another which is about this size, non stick, of course, which holds 12 muffins or cup cakes. Like a good mother, (pat on my shoulder) as a matter of fact, I've given all my good and expensive wares to my daughter, because I rarely had a chance to use them when I worked so many hours. So now, it's fun for me to go thrifting, and finding great wares. The original recipe calls for actually buttering the muffin pans, generously, but I don't think we had cooking spray back in 1986. I just love PAM, for every baking use. They have a good variety of them. I just use the original.
Just look at all the fresh blueberries, and the yummy streusel topping. The batter is quite thick so it will not overflow when you spoon it or scoop it into the muffin pans. Any leftovers, if you have leftovers, you have to refrigerate, and it can easily be reheated in the microwave, for less than 60 seconds. or in your over, on 325 degrees F. for about 10 minutes. I prefer the short cut way. Who wants to wait 10 minutes?
Fresh Blueberry Muffins with Sreusel Topping
2 cups all purpose flour 
1/2 cup sugar
1 stick (1/2 cup) unsalted butter, melted
1 teaspoon grated lemon zest
1 tablespoon baking powder
1/2 cup whole milk
1 egg
2 cups fresh blueberries
dash of salt
Preheat oven to 400 degrees F. Spray muffin pans with cooking spray. Muffin pans should be 2 1/2 inches in diameter.In a large bowl, place the 1/2 cup sugar, and the 1 teaspoon lemon zest; crush them together until the sugar absorbs the lemon flavor. Add the flour, and baking powder, and toss to blend.well. Whisk the egg in a small bowl with the milk, and whisk in the slightly cooled melted butter.Slowly add the liquid mixture to the flour mixture, and just incorporate by hand, with a wooden spoon. Just barely, about 3 or 4 turns. Batter will be thick, but not to worry. Carefully fold in half the blueberries, and with an ice cream scooper, or a spoon, spoon mixture in evenly, into the 12 muffin cups. Keep the batter loose, don't pack it into the cups, just work with it, gently. Now, you can put the rest of the 1 cup blueberries on top, carefully sticking them into the batter, and spoon streusel mix on top. Bake for no longer, than 25 minutes. (check to see doneness after 20 minutes.) Should be nice and rosy on top. Yield, 12 muffins.


Streusel Topping
1/4 cup sugar
1 teaspoon lemon zest
1/4 cup of flour
1 tablespoon (1 pat) unsalted butter


Mix all together with a pastry cutter, or a fork, until it resembles, like pieces of green peas. Sprinkle mixture on top of studded blueberries in the muffin pan, and bake as directed.


Note: The original 1986 Food and Wine recipe is so confusing, because all the ingredients are listed together; the streusel ingredients are listed in with the rest of the ingredients, and they call for too much butter, including buttering the pan. With all that extra butter in the original recipe was too heavy. This adapted one of mine, is very light, not too sweet, and is so good with a nice cup of Cappuccino, or Caffe Latte, any time of the day.
