Farm Fresh Eggs...or Egg-Land's Best!

If in doubt...as to make a perfect omelet...simple or filled with your favorite vegetable, ham, or bacon, mine is just a simple sliced sweet onion omelet, for 2 servings, with 4 eggs. Farm fresh eggs?...Well, daughter Lora, her friend, Lauren and her 3 girls, and my grandchildren Gabby and Luca went on a real egg farm...or correctly, chicken farm, to get fresh eggs! To be perfectly honest, Egg-Land's Best is fresh farm eggs. There is no doubt in my mind that they are the best, as far as I'm concerned, and that goes for my family. I want nothing, but the best for them!

I sauteed thick sliced sweet onion, which I love so much, in 2 Tbsp olive oil, and just added salt and pepper right into the skillet, over the onions for more intense flavor.








Scramble the 4 eggs lightly, and just pour over the sauteed...actually caramelized onions. Do not stir, just lift the pan from side to side, and jiggle the eggs, so they spread evenly. With a spatula, you can lift the bottom around the edge a little, after a few minutes.





At this point, you can flip it over to the other side, and just fold over, as it's shown in the top photo!

I'm also a fan of Egg-Land's Best on Foodbuzz, and have been cooking and baking with it for a few years now. Every time my daughter and I go to Costco, we buy the 18 carton of these beautiful eggs. I prefer the Extra Large eggs, although there's not too much between the two sizes.
These are the farm fresh eggs that my daughter purchased, all different colors...price? Triple the cost for the dozen farm fresh eggs, compared to a dozen Egg-Land's Best! Mind you...I did not eat even one egg...just wanted them to enjoy it, but come to think of it, I did take one or two from Lora, and it's still in the carton.

I would like to thank all of you for your kind and caring comments and mostly for your advice for helping ease the pain.
This happened to me last Tuesday, and it has gotten worst after a few days. Not fun, having a pinched nerve, anywhere on your body. I am so glad to have read about some of your similar problems, and thanking you for sharing your experiences with me. Finally, after my most amazing chiropractor, Dr Keith, who is also a Physical Therapist as well, and travels around the globe treating sport stars! Also, I had a massage on the shoulder which did help, but the most therapy that helped was stripping the knot with a gadget (that was so very painful but really helped)...he even suggested that I get it x-rayed and see and orthopedic doctor, but by Saturday, I was starting to be able to actually lift my arm slowly! Now, it is so much better, and I'm getting the use of my right arm back!
Still have not cooked or baked anything, accept my simple easy omelet, and I thought I would share the photos of the egg farm with you. It was so much fun for the kids, and a nice little morning outing on Saturday!

Rosemary Focaccia and Book Giveaway!


You would think I have not cooked or baked anything in the last couple weeks since I've been staying at my son's house watching their 16yr. old sweet Black Lab named Thai whom I thought was still only 13yrs old. She is actually going to be 17, and still going strong...although she is practically deaf, has major cataracts, but is as beautiful and sweet, with a shiny black  hair her tummy totally grey now, and in the best shape ever (meaning she is not overweight)...Family finally came home last night, and I'm so happy that they all had such a great time.
I, in the meantime have been eating at my daughter's house and enjoying company with Fabrizio's young cousins from Italy. Two lovely young girls, ages 18 and 20. Lora and I were taking turns cooking the main meal at lunch time, and also for dinner. I decided to make my favorite rosemary focaccia...with lots of fresh chopped focaccia, homegrown from their little garden. I've been trying to find a decent photo of this, but what difference does it make?...not even trying to get into the Top 9 for Foodbuzz, so "what you see is what you get"...it is what it is!!!
Sometimes I prefer a nice simple focaccia instead of pizza, because it does take less work and you don't even need a topping other than fresh herbs. The dough is so fresh, the topping is crunchy, and I also added fresh course sea salt on the top before I baked it. I love course sea salt, and also love salted bagels, but have to watch the sodium, because that can bloat you and too much of a "good thing" can harm your health!

Before I continue the rest of this post regarding rosemary focaccia, I would like to offer a very nice and unique book giveaway...another "thrift find" which is by the way a brand new book that I happened to find at my favorite Goodwill store. Coconut Chocolate Brandy Crackles...and Awards


I was browsing through Konstant Kraver @ The Sweet Tooth Chronicles
blog last week, and I happened to bump into this yummy dessert...which is a "no bake"...and oh, so easy to make. With the permission of Konstant Kraver. I befriended Konstant Kraver through Foodbuzz, a while back, and have been admiring her's/his gorgeous and fun desserts, but lost touch, even though we are following each other's blogs. If you do not comment on another's blog, chances are they will not comment on yours, either.

There's way too many food blogs out there and sometimes it's hard to keep up. I'm one of those people that like to make friends easily, but as the saying goes..."it takes two to tango"...if  they don't want to continue, there's nothing you can do to force the issue. Again, I have to mention the Guest Post issue...if this is a guest post, then it's "an animal of a different breed"...because, I don't require my guests to do anything or make anything other than what catches MY EYE...and ask them if I could feature that on my blog, and mention their blog, of course. It's that easy!

They don't have to do any "write up" to be "gushing" about me, or my blog, it's my HONOR to represent them!

Chocolate Chip Shortbread
adapted from Family Circle, Dec, 2008


Start out with the Basic Sugar Cookie Dough, 
and add 1/2 cup semisweet chocolate chips


! 1/2 cups all-purpose flour
teaspoon baking powder
1/8 teaspoon salt
1/2 cup (1stick) unsalted butter, softened
3/4 cup sugar
1 egg
1/2 teaspoon vanilla extract

In a medium sized bowl whisk together flour, baking powder, and salt. Set aside.
In a large bow, beat butter, and sugar until smooth, about 2 minute. Beat in egg, and vanilla
On low speed, beat in flour mixture until just combined.  Fold in the chocolate chips.
Wrap in plastic wrap, and refrigerate for 2 hours.
Unwrap plastic, and press into a 9 inch round, fluted nonstick tart pan, with a removable bottom.
Score into 16 pie-shaped wedges, (be sure not to cut all the way through.)

Bake in a preheated 350 degree oven for about 25-30 minutes. Let cool before serving.

For Glaze:

Melt 3 Tablespoons seedless raspberry (I used boysenberry) preserves and drizzle over top of tart.
Cut into wedges, along the scored lines, and serve.

A Comforting Frittata

With Christmas behind us, and leftovers just about gone, too much sweets eaten...a nice comforting vegetarian frittata will not only satisfies your hunger, but you can have your "breakfast, for dinner" as well. How can you go wrong with a perfect blend of sauteed sliced potatoes, fresh chopped tomatoes, and fresh spinach, topping it off with shredded cheese of your choice ( I used, cheddar)...scramble up at least 6-8 eggs, and added all together cooking it on the stove top, making sure you are not scrambling it, just lift a little from the edges to let it cook evenly, and finishing it off in the broiler. Yumm! Something your family will enjoy on a lazy and not much to do, evening.
There's no set recipe for this fritatta, just start out sauteing some chopped onions in about 2 Tbsp. extra virgin olive oil, along with about 4 small potatoes peeled and sliced thin, saute until potatoes are almost tender, adding about 1 large or a couple small fresh tomatoes, salt and pepper and a good handful of fresh spinach right into the mixture. Let it all cook together until spinach gets wilted. I even added about 1/4 cup of plain crushed tomatoes, (tomato sauce, marinara sauce will also work) but not tomato paste. To serve 6 servings with this, I scrambled 8 eggs, and poured it right over the vegetable mixture...see photo below!
In this process, all you do is lift a little bit around the edges, not disturbing the rest of the egg mixture, letting the uncooked eggs flow to the edge. 
At this point, you can see the edges setting, but the middle is still kind of wet, so with a wooden spoon, or spatula, carefully make a small incision in the center, tilting the pan from left to right to get to an even flow for setting more.
This may sound like a small "surgery process" or some kind of experiment, but it's just to make sure you have an even, nice, and fluffy frittata. Here's the last process, below!
Last process, I added a 16 ounce bag of shredded cheddar cheese, and a small amount of Mexican style cheese...you can add in place of this, shredded mozzarella, Swiss, or just grated Parmesan cheese. Also, you can variate the vegetables, and the spices, but in this case my grandchildren were eating this, and I had to be careful not making it too spicy for them. You can top this off with a nice salsa, and serve it with crusty bread. This dish served 4 adults, and 4 young children. Satisfaction guaranteed!

Marshmallow Frosting

 
This frosting always puts smiles on every one's faces, The kids line up to take spoonfuls of it, and licking the bowl and beater. I remember when my children were the same ages as my grandchildren, and we're talking over 30 years ago This was the first frosting that I learned how to make, besides the famous chocolate frosting, with egg, and butter in the cream. This particular frosting is also referred to the 7 minute frosting, and is made with pure egg whites, and only one cup of sugar. Zero fat. This is the consistency that is required, thick, and fluff, and ohhh so good. Your family will want to spoon some out from the bowl, lick the beaters, and the bowl like mine does. It actually resembles marshmallow fluff, but this is so much better, lighter, and less sweet than the one you buy in the jar. Recipe follows

Marshmallow Frosting...or 7 minutes
1 cup of granulated  white sugar only...not powdered
4 egg whites
1/3 cup of water
1/2 teaspoon cream of tartar
1 teaspoon vanilla
In a medium saucepan, bring the 1/3 cup of water, the sugar, and the cream of tartar, and bring it to a boil, until you see thick clear bubbles, which should only take about 5 minutes. Be careful not to boil even 1 second longer, soon as it comes to a rapid bubble, because it will turn amber, and than you would have to quickly make a different recipe, and add heavy cream, which would be "caramel sauce"
In a metal bowl, add all the egg whites, and beat the egg whites first until it turns white, and starts to get a little thick. Now, add the sugar syrup only drop fulls at a time counting down the 7 minutes. After about 5 minutes of constantly beating, add the vanilla, and beat another 2 minutes, maybe 3 more. You have enough to 2 nine inch round cakes. I would have had enough for my cakes on the side but I was way to generous with the grandchildren liberally spooning it out from the bowl. It really is contagious. I have given and actually showed how to make this frosting to neighbors, friends, even relatives in Italy, and Hungary. You can also add a drop of food coloring for a different effect. Be careful not to add juice instead of the fruit coloring, that will thin out the consistency.
 
I was going to post my simple version of an easy carrot cake which I made for my granddaughter's 9th birthday yesterday...instead, I decided to re-post my marshmallow frosting recipe that was from several months ago before I joined Foodbuzz, and made friends with so many wonderful people from all over the world.

One particular person, who became such a nice friend is a lovely young lady, called Joanna (Jo) from chicgorgeous whom I tagged last week and was such a good sport to answer the questions I posted, and came up with her own, and tagged 8 other bloggers. First, and foremost, you should check out her beautiful blog...not just because she linked to me, but because of the beautiful Pink Velvet cupcakes she made in honor of "Breast Awareness Month."

We all have someone in our family, relative, or friend, who died from this terrible disease, or a mother, sister, aunt, cousin, or a friend, that is a survivor of breast cancer. Sad to say, I lost my mother, my aunt, years ago, but happy to say that my younger sister is a "breast cancer survivor for the 5th year. I would love to scan a photo of my sweet sister if I could, but my scanner does not work at this time. I do not have anything "pink" at this time to post, but please DO check Joanna's blog at: chicgorgeous
