Plum Upside-Down Cake




Since I've been food blogging for the last two years...I have not been thinking about that I would actually say,
"I have to bake something for my food blog"...hmm! wonder why did I say that to my daughter Lora, yesterday morning?
She told me the other day that her food blog is getting to be expensive...well, the reason for that is: She bakes every single day...really! There isn't a day that goes by when she does not bake...if nothing else, but the 'staple' banana bread, or homemade pancakes!
I was hoping to get this post up by yesterday...Friday, knowing that I did not have anything else worthwhile to post and that I don't do much baking cakes...although I love to put simple and yummy quick and easy desserts together!
We have such an abundance of plums...not the deep purple Italian ones, but the round ones which are so perfect just by themselves to snack on (which I did eat 3 yesterday)...and decide to make something with it. No time to start browsing through my cookbooks, old recipes, or favorite food bloggers' recipes...so what do you do first, if you don't have the basic recipe on hand?...The Internet...yes, that's the fastest way to google a recipe and do some adaptations of your own, which I did a little on my cake. Since I made this for my blog...still smiling to myself
about that one, I only kept one large piece for myself and shared the rest with my family.

Yesterday was such a stormy day on-and-off, with tropical storm Isaac on our heels by Sunday night...hopefully it's not turning into a hurricane!

Good day to be cooking and baking when you're stuck inside. I did go out on my balcony to take some photos of the beach, the clouds, and no less than 30 minutes wind, and a storm, but the worst is yet to come! We'll just have to be prepaired and be safe.

As you see, for my baking, I like to chose a comfy-cozy home type of dessert. For me they are super easy to make, and I do believe it will be easy for you, if you follow my easy and handy little tips. Don't let the layering of this beautiful upside-down all American simple cake intimidate you...and I DO recommend that you make this from 'scratch' and not from a mix, although I do use cake mixes, only to 'doctor' them up!

Mango-Strawberry Cobbler

Some cobbler have toppings that are actually as thick as biscuits, but to me it's patches of a crusty dough that has a cake-like flavor on the inside. I've been making all kinds of cobblers that is so easy, and so nice with fresh fruit that you want to use up.
Although, I did just state in my previous recent post that mango season is over in S. Florida...it really is over! This was the best mango season for us in years, and we were so blessed with all the abundance of these lovely tropical fruit, that we just had to use it in so many ways.

Last week, the final 4 mangoes fell down from the top of the tree and they were almost too ripe. Didn't want to use them for smoothies...it would be so selfish when we had smoothies just about every day for one month. I have not made a cobbler, since about one year ago, and it's time that I make one.

I made the cobbler this afternoon, and I was so very happy that we had beautiful sunshine today, but very, very, hot. Today was the first day of school for most of the kids in our area, and both my grandchildren started back! The weekend also went so nice with perfect Florida weather...rain again, in the late afternoon, but during the day was gorgeous and sunny!

Cobbler has got to be the easiest and fastest dessert to make...you just have to remember, that it starts out with 1 cup of flour, a little sugar, dash of salt, and don't forget the baking powder, and of course, a little butter, moisten it with either a little bit of milk to form a dough, or a little over 1 cup to be able to drop the dough on the fruit, and bake for 35 minutes...Let me tell you, the best way to eat this amazing cobbler; while it's still warm. This was gone so fast that I must say I will be making it more often now, with different fruits!
 I wanted to show you close up how juicy the fruits are (I have a little secret for that)...and for the cobbler, you can see the thickness, which is just right, and see how moist it is, yet has a crusty top!

Mango-Lime Sorbet

'Rainy Days, and Mondays'...is precisely what is happening here, in S. Florida at this very time! It is a lazy day...or I should say morning. I'm watching the Olympics as I'm typing my post...barely able to take my eyes off the T.V...watching the water polo with U.S. and Hungary...with a 4 - 0 ...Hungary leading! (ending with 11-6, Hungary winning!)

Very strong defense from Hungary! ...last night I watched the women's volleyball...U.S. against Italy, with U.S. pummeling the Italian team, wow!
Mango season is just about over now...I saw 3 lonely mangoes leftover on the mango tree, but we did get quite a few even towards the end to make some more mango creations. Nothing compares to fresh fruit sorbet...I love sorbet, more than ice cream...because of the light texture and pure fruit flavors along with the citrus fruit, such as lime! You really just have to know the formula, in making sorbet. It has to be equal amount of sugar and water for the simple syrup, which you just bring to a boil, and cool down, even best to chill several hours, or overnight!
Just add the chilled fruit puree with the cold simple syrup, and the lime juice, and you're good to go, mixing it in your ice cream maker.

Mango-Lime Sorbet
recipe by; Elisabeth

1 1/2 cups granulated sugar
1 1/2 cups water
4 cups mango puree
juice of 3 limes
a pinch of salt

In a medium saucepan, bring water and sugar to boil.
Stir frequently, just until sugar melts, and water comes to a full boil. Set aside to cool.
Peel and dice about 4  mangoes...more if needed to make 4 cups of puree. Add the juice of the 3 limes to the puree. Cool the the simple syrup in the fridge for several hours, ore overnight, before adding to the puree.









Combine the simple syrup and the mango puree in in the ice cream maker, and mix for about 20-40 minutes. Next...with the mango sorbet in the ice cream maker cylinder, put into freezer...no more than 40 minutes.



Spoon sorbet into a quart size plastic container, and freeze until firm! It is the best sorbet, that you can make homemade with other fruits as well. I would love to make a strawberry, or blueberry sorbet. Next, on my list!

Speaking of which, I totally wiped out my blog list by mistake...always messing around, fixing things. Now, I have to add my favorites...one-by-one. I did not intentionally wipe your blog out, will get my list back up soon, since I rely so much on my regular commenter friends.

Chocolate-Peanut Butter Pudding...a Guest Post

It's beautiful spring, everywhere...although here, in South Florida we do not know the difference, because for us, as they say "spring has sprung"...and it sprung quite early which we consider a truly spring weather, was back in February, and March. Even April is very nice, but soon as May is around the corner, our summer has begun, just like for all you folks up north. I hear it's about in the upper 80's in Cleveland, my old home town...less than what we have here today, in the low 80's.

Enough, about the weather. What I really would like to mention is my guest post for my dear friend Ping! Would you believe that when I first met her and we started following each other's blogs, which is almost 2 years for me...I was calling her blog Ping's Picklings...as in pickle?...she graciously corrected me that it's PICKINGS, and not the pickle kind!


I am so thrilled and honored to guest post for my dear friend Ping, whom I had the pleasure of meeting since we both started our food blogs, nearly two years ago... and have been supporting each other throughout the entire time. Ping has a meticulous food blog, and is very specific about her photos...no more than one, or two, and always a specific size...unlike my photos, which vary in sizes, and step-by-step directions when time permits. Ping has an amazing sense of humor, and always has the right thing to say, on any subject given...only in a "lighthearted" way! Her photos are always perfect, and immaculate, her choice of dishes, desserts, and baked goods are "dropped dead" gorgeous, and makes you want to see, and get more! She is kind, and caring, and you will feel blessed to have her as a friend...a beautiful friend, indeed!

Almond Cookies

I've been down-and-out with the flu for at least one month now, which seemed to have gone after finally 3 weeks, and I was so glad that I finally got a little relief from the sneezing and coughing...then one week ago, I woke up with my throat on fire, sneezing and coughing once more again, this time even worse. I finally gave in and went to see my doctor, and he prescribed antibiotic this time. Finally, I'm getting better now...well enough, that I just had to make something sweet, but not too sweet, so my perfect stand-by Almond Cookies always come to my rescue!
I practically have this simple recipe memorized, but could not find my handwritten recipe from over 20yrs ago, so I had to consult online, only to find the exact recipe that I used to have. Funny...even if I would have found my recipe, there wouldn't be a source on it, which we did not include in the past when we copied recipes by hand.
These lovely light as a "feather" cookies, do not even need baking powder, or baking soda, a light crispiness on the outside, and soft as a "pillow" on the inside. You really do not need to buy a large bag of whole almonds, just get the sliced ones which you can grind in a small processor, and use some sliced ones...I generously sprinkled the top of my cookies just before I baked them.

Almond Cookies
adapted from all recipes.com

1/2 cup unsalted butter softened
1/2 cup granulated sugar
1 egg
1 1/4 cups all-purpose flour
1 cup ground almonds
1 teaspoon pure vanilla extract
1 teaspoon pure almond extract
(you can use 2 teaspoons Amaretto liqueur
 instead of the vanilla, and the almond extract)

Preheat oven to 400 degrees F (200 degrees C)

In a large bowl, cream together the butter and sugar. Beat in the extracts, or if you're using Amaretto beat that into the mixture. Beat in half the amount of the ground almond. Gradually mix in the flour and the rest of the ground almonds.

Drop by teaspoonfuls 2 inches apart, on parchment lined baking pan. Bake 5-8 minutes in the preheated oven, or until cookies are lightly colored. Do not bake longer than 8 minutes...they brown very quickly.
Point value: 2 pr. cookie








Serves about 24 cookies. An extremely easy recipe...if you love almonds, you will love these perfect little cookies!

There's so many different versions of these lovely Viennese cookies that each country calls it their own, but it was actually originated during the 19th century
what was then, the famous well know Austria-Hungary empire! So, there you have the short history on these delicate buttery sandwich cookies...filled with apricot and various other fruit jams.
As a child, I have fond memories of these Linzer cookies, and I don't have my mom's or my aunt's recipes...only just remembering how it was made, so I adapted my version, from a trusted source!



Linzer Cookies

adapted from, Joy of Baking

1 cup (110 grams) blanched sliced almonds
1/4 cup (50 grams)

1 cup (227 grams)  (2 sticks) unsalted butter, room temp.
2/3 cup (135 grams) granulated white sugar, divided
2 large egg yolks
2 cups (220grams) all purpose flour
14 teaspoon salt
1/2 teaspoon cinnamon (optional)
1 teaspoon pure vanilla extract
1/2 teaspoon baking powder
Zest of 1 lemon

Confectioners' icing sugar, for dusting
choice of jams; raspberry (seedless preferred) blackberry
I used organic apricot, and organic blueberry, but you can use
choice of your own, even Nutella, which is great for chocolate lovers,

Chocolate Drop Cookies...Cookbook Sundays!

Please don't be too judgemental with these yummy Chocolate Drop Cookies, made by me...but totally designed,and decorated by my "loves of my life"...2 of my 4 grandchildren! Luca (boy w/long hair) and Gabby (not shown in photo)...and I assure you, it was made with love, and lots of fun, which will be remembered for fond memories, for years to come!

Reese's Peanut Butter Chip Chocolate Cookies


Now that Halloween is  over, and your little ones have their candies sorted out by the parents, just to make sure that there are no unsafe, opened candy or something suspicious in the their "goodie bags." Such a fun time of the year for kids and adults, all alike...except for early snow, as some of you have experienced it.
In the meantime, while the kids are enjoying their Halloween goodies...sparingly, for their health sake, I decide to make a large batch of these wonderful chocolate cookies, made with Hershey's Cocoa Powder, using less sugar, because the Reese's Peanut Butter Chips are just perfectly sweet; made from real peanuts and are so darn addictive, you can just snack on those Reese's chips by themselves, packed with peanutty goodness!
Now, for the big announcement! I will be leaving early...I mean real early morning, on Friday, Nov. 4th flying out, at 5:45am to the Foodbuzz Festival, in San Francisco. This is the 3rd. annual event, and it's my first time that I am attending. It is from Nov. 4th, thru Nov. 6th. I was saving my excitement until now...and now, I can hardly contain it. Finally, I will be meeting up with other food bloggers, and get to know them in person.

The sad part is that I have to leave my poor old kitty, Prince, a tall Maine Coon... who is close to 19 years old, and getting frail, otherwise he is still quite alert, and very sweet and caring. He is my "alarm clock" in the morning, and at night reminds me it's late, and makes sure I don't stay up past the 11:00 news...so funny!

Warm Chocolate Pudding Cakes...and a special 7 Links



People tend to have addictions to all sorts of things, which I do not want to list right now, but if you would have a chocolate addiction like I do, and my granddaughter Gabby...you would understand why I on purposely do not bake a lot of things with chocolate, or even tempt my granddaughter with it.

I cannot trust myself to have chocolate around me, because I would eat the whole thing. Same thing goes for chocolate cake. So, I simply stay away from it, and have it once in a while, but honestly, if you're a "true chocolate lover" this would really satisfy your chocolate addiction. Not too sweet, not heavy, no cream added, just pure "chocolate heaven."
She must take after me, because she and I taste tested this Warm Chocolate Pudding cake, with the excuse of taking a photo of how it looks on the inside, just before my daughter served dinner...Gabby said to me "please don't tell mom I ate most of this...or she'll get so mad at me!..."and me"...I said. We not only taste tested it, but we ate the whole thing. The other spoon you see on the right is with another empty dish...and after that, we proceed to eat a nice dish of pasta, with homemade fresh tomato sauce, and a light salad.
Has any one of you done that? ...or are we just strange?

Lemon-Glazed Zucchini Bread...and More Tomatoes!

I have not made zucchini bread for years, maybe since my children were little, and they actually loved it!...why not now?...I really don't know!

I used to have a fantastic recipe from Bon Appetit, but that was from the seventies, or eighties and those recipes almost, always called for at least 1 cup of vegetable oil, and 2 cups of sugar...yikes!!! there goes your cholesterol level, and killing you with sugar!...no thank you! At any rate, this recipe, I assure you has very little oil (1/4 cup) and lot less sugar (1/2 to 3/4 cup)...so, no wonder I didn't make it until now, although I've always been relying on my banana breads with excess ripe bananas always at hand. ...also having zucchini on hand, but using it in savory dishes!
Whatever you do, just don't tell your 5yr. old child that this is zucchini, the green vegetable that they are being served, tucked away, inside this wonderful lemon-sugar glazed bread. I made that mistake, and my 5yr. old granddaughter would not touch it with a 10ft pole! I posted this photo, because I wanted to show off the glaze on the top, and also the photo itself. Both was done by Sophia, my 10yr old granddaughter. She certainly loved the bread, and even had seconds. What a difference 5year makes! If you really want to camouflage the zucchini, all you have to do, is to peel it first, then grade it, the way my daughter Lora made it, with the same recipe. I, of course left the little green specks in it...which is the "beauty" of this delicious and moist zucchini bread!
See the little specks of green?...that's what real zucchini bread is all about...seeing the actual specks of the beautiful shredded fresh zucchini.

Simple One Bowl Brownies...and more Awards!

Since my daughter Lora came back from Italy recently...I had about 2 nights of sleep in my own place, my poor kitties hanging around me and sleeping on my bed, which my little Persian hardly ever does except if it's storming outside, that can also be the reason why she snuggle up at the foot of my med on her very own little pillow.
Now, I'm back again house and dog sitting for a beautiful black Lab at my son's house only a few blocks away from my daughter, and myself. They are off to NY city, and to the country in NY state for two weeks. After all, d-in-law Cara's family resides in NY...so more the reason to visit! BTW-if any of you friends out there need a good pet sitter out there, just give me a holler...LOL, I'm getting really good at this for the last few years now.
I'm really good company for pets...dogs, or cats...they understand my "language" and actually really miss me when I leave, but in this case I don't go far.
This is the simplest one-bowl brownie you'll ever make, and this time I drizzle a simple sugar glaze on it, and just made a design with a fork to pull to one side...but you have to work fast with the design, as you can see the sugar glaze hardens really fast, which is good, because your don't want it to be a sticky gooey mess.
After you have the ingredients mixed in one bowl, all you have to do is to pour the batter into an aluminum lined 8x8 bake pan and bake for no longer than 20 minutes for a fudgy result...I baked it for 25 minutes, not so dense and overly fudgy!


Simple One Bowl Brownies
adapted from All Recipes.com

4 (1 ounce) squares unsweetened chocolate
3/4 cup butter
2 cups white sugar
3 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup chopped walnuts (optional)

1. Preheat oven to 375 degrees F
2. Microwave chocolate and butter or margarine in large bowl at HIGH for 2 minutes or until butter or margarine is melted.
3. Stir until chocolate is melted. Stir in sugar. Mix in eggs and vanilla. Stir in flour and nuts
4. Spread in greased 8 x 8 inch pan. Bake for 20- 25 minutes (do not over bake).

For the glaze:
I used 1 cup powdered sugar, and 1 Tbsp of whole milk and 1/2 teaspoon vanilla extract. Just mix all together in a small bowl, with a fork, and drizzle over top of the brownies after you have cut them. Important to cut the brownies first, so drizzle will not be messed up, You can see in the above photo, how I did, and also made design with fork pulling in one motion. By the time I got to the last row, the glaze had already dried...so it's a good sign.)
